- Cook 1/2 chopped onion in a pot with 3 tablespoons olive oil, about 5 minutes. Add 1 1/4 pounds trimmed green beans, a 15-ounce can crushed tomatoes, 1 1/4 cups water, 1 teaspoon salt, 1/4 teaspoon pepper and a pinch of cinnamon. Partially cover and simmer, 35 minutes. Season with salt and pepper.

- Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
- Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.

- In a large skillet, cook bacon over medium heat until partially cooked but not crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons. Add onion to drippings; cook and stir over medium-high heat until tender., In a 4- or 5-qt. slow cooker, combine green beans, tomatoes, brown sugar, pepper, salt, bacon and onion. Cook, covered, on low 4 hours. Stir in red beans. Cook until heated through, about 30 minutes longer.

I know there are plenty of Green Bean recipes but I couldn't help posting this one because it is a little bit different from the rest.

Steps:
- In a 2 quart saucepan, add green beans in enough water just to cover them, and bring to a boil, reduce heat and simmer, uncovered about 15 minutes or until crisp tender.
- Drain and immediately rinse with cool water to stop cooking. Drain and set aside.
- In a large skillet, cook bacon over medium-high heat until crisp. Stirring frequently.
- Reserve 1 tablespoons of bacon fat and drain off the rest and place bacon on plate covered with paper towels.
- In the same skillet add onion and 1 tablespoons bacon fat and cook over medium heat, stirring occasionally, until tender.
- Stir in tomato, garlic, oregano, salt and pepper into onions and simmer about 5 minutes.
- Stir in green beans and heat through.
- Add bacon and stir to blend.
- Transfer mixture to serving dish and drizzle with lemon or lime juice.

FRESH GREEN BEANS, TOMATOES, BACON, ONION & FENNEL
This is a classic dish, but I like to think I combine some fresh ingredients with a little shortcut of the stewed tomatoes. Just let them simmer on the back burner as you make your main course. But for this dish, NO canned or frozen, it just isn't the same. This is just classic dish with a twist, and it doesn't get much better.

- Bacon -- in a large saute pan, add the bacon on medium to medium high heat to let render and start crisping up. Cook about 3-4 minutes.
- Vegetables -- Now right to the bacon and the drippings, add in the onion and fennel and cook another 5 minutes. Add in the beans and toss well so everything is combined. Now the tomatoes (NOTE: You can add a bit less tomatoes if you want) Personal taste. Stir well.
- Season -- Now add some salt, pepper and the cider vinegar. At this point I also add about 1/4 cup chicken broth since we didn't add all the tomato liquid it gives a liquid for the beans to simmer inches.
- Cook -- Simmer, on low heat. These are not meant to be crisp beans, soft and slow cooked. If the dish becomes a bit dry during cooking, I just add some more broth to keep the dish simmering. I simmer a good 20-30 minutes.
- That is it -- just enjoy. Slow cooked bacon, onion and tomatoes in a chicken broth. They are so good.
- NOTE: If you want -- cut down the recipe in half for a family of 4. No big deal. They are TRUE comfort food.

- Place bacon in a large Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to a plate lined with paper towels, reserving some of the drippings in the Dutch oven.
- Stir onion in reserved drippings; cook and stir until browned, about 10 minutes. Stir garlic into the onion; cook until softened, 1 to 2 minutes. Pour broth into the Dutch oven; add green beans. Chop bacon and add to the Dutch oven.
