GRANDMA'S CANDIED YAMS

Grandma's Candied Yams image

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut off the ends of the yams, then peel and cut the yams into 1/2-inch-thick circles. Add to a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium heat. Add the brown sugar and stir until thoroughly blended. Stir in the pineapple juice, cinnamon, vanilla and cloves. Taste the mixture to make sure it's sweet to your liking and pour over the yams. Spread the strawberry preserves on top of the yams.
  • Cover the dish with aluminum foil and bake until the yams are semi-tender, about 40 minutes. Remove the foil and bake until the yams are caramelized, 20 to 25 minutes more.
  • Plate and serve hot. And don't forget to pour the sauce from the baking dish on top!

4 large yams
8 tablespoons (1 stick) unsalted butter
2 cups packed dark brown sugar
1/2 cup canned pineapple juice
2 1/2 to 3 teaspoons ground cinnamon
1 1/2 teaspoons pure vanilla extract
Pinch of ground cloves
1/2 cup strawberry preserves

Steps:

  • Put sweet potatoes and 6 cups water in a saucepan or stockpot on high heat. Cook until still slightly firm, 12 to 15 minutes from the time the heat is ignited. Pour off all water, reserving 2 cups.
  • Return potatoes, butter, sugar and the 2 cups reserved water to the pot over high heat. Cook until the liquid starts to caramelize, about 15 minutes.
  • Remove potatoes, leaving the caramelized liquid. Cook the yam sauce an additional 5 minutes on high heat. Add Fried Chicken. (Eat the potatoes. They are delicious.)
  • For Florence's fried chicken seasoning: Stir together the flour, salt, pepper, baking powder and cornstarch in a medium bowl.
  • For the chicken: Sprinkle chicken with salt and pepper. Melt shortening in a heavy skillet or Dutch oven on medium heat. Cover chicken in Florence's fried chicken seasoning.
  • Drop in skillet. Cook in two batches (white and dark separately), turning halfway through, until internal temperature reads 165 degrees F in the thickest part of the meat (not touching the bone), approximately 20 minutes.

Florence's Fried Chicken, recipe follows
2 cups all-purpose flour
2 teaspoons salt
2 teaspoons butcher's grade pepper
1 tablespoon baking powder
1 tablespoon cornstarch
1 whole chicken, cut into 10 pieces
1 tablespoon salt
1 tablespoon ground pepper
4 cups shortening

A tasty side dish! Every year at my church's annual fish fry these potatoes are included on the menu. Everyone looks forward to this treat! Great with pork chops! Very easy to prepare. Cut potatoes into thick round "wheels".

Fried Sweet Potatoes or Yams image

Steps:

  • Cut potatoes in round "wheels" about 1/2 inch thick and immediately immerse in water to not discolor.
  • Drain and pat dry with paper towel. Fry on low heat until golden brown and stick tender in the middle.
  • Place on paper towels and salt immediately.
  • Serve and enjoy!
