ALMANZO'S FRIED APPLES N ONIONS

I loved Little House on the Prairie, and Almanzo's favorite dish was fried apples 'n onions. Fascinated, I made this recipe up (lol, not complicated) and have loved the combination!

Almanzo's Fried Apples N Onions image

Steps:

  • Melt butter in a skillet over medium-high heat; cook and stir apples, onion, brown sugar, and cinnamon in the melted butter until onions are translucent and sauce is slightly reduced, 15 to 20 minutes. Cool before serving.

¼ cup butter
4 apples - peeled, cored, and sliced
1 onion, cut into matchstick-sized pieces
¼ cup brown sugar
1 pinch ground cinnamon, or to taste

This is a traditional "country" dish. Sugar is optional, but I think it's better with it. Try this for breakfast with fried potatoes. This recipe came from "The Little House Cookbook" by Barbara M Walker, and the food featured in "Farm Boy."

Fried Apples'n'onions (Little House) image

Steps:

  • Fry bacon or salt pork slices in a skillet until brown and crisp. Set them aside on a warm serving platter.
  • While the meat is frying, peel the onions and slice them as thinly as possible.
  • Core the apples and cut them crosswise in circles about 1/4 inches thick. Apple skins help the slices keep their shape and add color to the dish, so don't peel unless the skins are tough or scarred.
  • Drain all but 1 tablespoon of fat from the skillet, then add the onion slices. Cook them over medium high heat for about 3 minutes.
  • Cover with apple slices in an even layer. Sprinkle brown sugar over all, cover the skillet, and cook until tender, a few minutes more. Stir only to prevent scorching.
  • Remove to the warm plate with the bacon or salt pork slices and serve.

1/2 lb sliced bacon or 1/2 lb salt pork
6 yellow onions (2 pounds)
6 tart apples (2 pounds)
2 tablespoons brown sugar

Steps:

  • In a large cast-iron or other heavy skillet, saute onions in butter until tender. Place apples on top of onions. Combine remaining ingredients; sprinkle over apples. , Cover and simmer for 10 minutes. Uncover and simmer until apples are tender, 5 minutes longer. Serve with a slotted spoon.

  • Fried Apples ‘n’ Onions. This dish, Almanzo’s favorite, is from Farmer Boy. Frankly, you had me at fried—I like any kind of hash. I’d serve this with bacon and some kind of sweet rolls.
  • Maple Taffy Candy. Grandma pours maple syrup over plates of snow that the girls collect from outside in Little House in the Big Woods. I myself would just drink the maple syrup, but my boys would like to try this snow version, I’m sure.
  • Vinegar Pie. This, after fried pig’s tail, is the recipe I’m most skeptical about, but I imagine it tastes a little like a poor-man’s lemon pie—a little tart, a little sweet.
  • Green Pumpkin Pie. Ma was always “making do,” and I imagine that the green pumpkin pie in The Long Winter was a way to get some nutrition out of the early stage of a pumpkin crop.
  • Doughnuts. Farmer Boy, while not my favorite of the Little House books in terms of characters, makes up for that deficiency by providing many loving descriptions of food.
  • Dried-Apple Sauce. In By the Shores of Silver Lake, Ingalls writes, “Then Laura gathered up all the paper wrappings, and she helped Ma set on the table the big platter of golden, fried mush, a plate of hot biscuits, a dish of fried potatoes, a bowl of codfish gravy and a glass dish full of dried-apple sauce.”
