Steps:
- Thoroughly rinse the chicken pieces, then place them in a bowl and cover with 4 cups of the buttermilk. Soak in the fridge overnight or up to 24 hours.
- When you're ready to fry the chicken, remove the bowl from the fridge and let it sit on the counter for 30 minutes, just to take the chill off.
- In the meantime, preheat the oven to 360 degrees F and mix up the breading. Place the flour, seasoned salt, paprika, black pepper, thyme and cayenne (plus extra cayenne if you like heat) in a very large bowl. Stir together well.
- In a small bowl, combine the remaining 1/4 cup buttermilk and the milk. Pour the milk mixture into the flour mixture and gradually mix with a fork until there are little lumps throughout; these will adhere to the chicken and make for a crispier breading. If necessary, add a little more flour or milk to make the breading slightly lumpy.
- Heat 1 1/2 to 2 inches of oil in a deep skillet over medium-high heat until a deep-fry thermometer reaches 365 degrees F. Lower the heat slightly, if necessary, to keep the oil from getting hotter.
- Working in batches, thoroughly coat each chicken piece with breading, pressing extra breading onto the chicken if necessary. Place the breaded pieces on a plate.
- Add the breaded chicken to the oil, 3 or 4 pieces at a time; make sure they don't stick together. Cover the pan and fry for 5 to 7 minutes, checking occasionally to make sure the chicken isn't getting too brown. Turn the pieces over, cover again, and cook for 3 to 5 minutes more. All the while, monitor the temperature of the oil to make sure the chicken doesn't burn.
- Transfer the fried chicken to a baking sheet and continue frying the rest of the chicken. When all the chicken has been fried, remove the wings and legs to a plate and keep covered. (These should be cooked all the way through by now, but always check if any pink juice or meat is visible. If so, return to the hot oil for another minute or so, until fully cooked.) Leave the thighs and breasts on the baking sheet.
- Bake the thighs and breasts for 15 minutes to finish cooking. (Sometimes I'll cut into the thicker part of one of the larger pieces just to make sure the chicken is cooked through. If any pink juice or meat is visible, the chicken needs to continue cooking in the oven.)
BUTTERMILK FRIED CHICKEN DRUMSTICKS
This is a faster version of fried chicken, using everyday pantry items. A quick toss in buttermilk and yellow mustard brings tangy flavor to the chicken, and the cornflake-herb crust offers a nice crunch.

- Preheat the oven to 250 degrees F. In a large bowl, whisk together the buttermilk, eggs, and 2 tablespoons mustard. Add the drumsticks and toss to coat, then set aside.
- Fill a large cast-iron pan with 1/2-inch oil and heat over medium heat until shimmering. Meanwhile, combine the cornflake crumbs, flour, thyme, granulated garlic, 1 teaspoon salt, and 1/4 teaspoon black pepper in a shallow baking dish; set aside. In a small bowl, whisk together the honey and remaining 1/4 cup mustard and set aside.
- Remove the chicken from the buttermilk, shaking off any excess, then transfer the drumsticks to the flour mixture and coat well. Fry the pieces in 2 batches, turning halfway, until richly golden brown and crisp and the internal temperature registers 165 degrees F on an instant-read thermometer (avoid touching bone), about 15 minutes. (Turn the heat down if browning too fast.) Transfer the drumsticks to a wire rack set over a baking sheet and sprinkle generously with salt. Keep cooked drumsticks warm in the oven while frying the second batch. Serve immediately with the honey mustard.
EASY OVEN-FRIED CHICKEN LEGS

- Combine buttermilk, salt, and pepper in a large bowl. Add chicken pieces and marinate at room temperature for 30 minutes.
- Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking pan with foil and place in the oven.
- Combine cornstarch, panko, smoked paprika, Greek seasoning, onion powder, poultry seasoning, salt, and pepper in a large resealable bag.
- Remove chicken legs from buttermilk, drain, and dip legs one at a time into the dry coating mixture.
- Remove pan from the oven with pot holders and add 1 tablespoon melted butter to the pan. With a pastry brush, spread melted butter all over the pan.
- Lay coated chicken legs into the pan. Pour half of the melted butter over chicken legs.
- Roast in the preheated until chicken is no longer pink at the bone and the juices run clear, about 40 minutes, turning over at the halfway point. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Drizzle with remaining melted butter and serve immediately.

FRIED CHICKEN LEGS DONE MY WAY!
DH and I love chicken legs better than the other sections of the chicken. I just add my special touch of seasonings to the basic flour mixture. Everyone loves them legs!!

- Heat a large electric skillet to 375'.
- Place oil and butter in skillet til hot.
- Meanwhile mix together flour,salt,pepper,seasoning salt,chicken bouillon,and beau monde seasoning in a large plastic baggie or a bread bag and shake to blend.
- Wash and towel dry chicken legs and add to plastic bag with mixture.
- Shake to coat legs.
- Place in hot oil and fry, turning every 10 minutes. Til browned evenly.
- Turn heat down and cover skillet for 10 minutes. Remove cover and turn legs over and cover with lid for another 10 minutes. Remove lid.
- Turn heat up again and fry til crisp, with turning every 5 minutes for 15minutes.
- Remove from oil and place on paper towel and serve.
- (NOTE: You may add or delete oil to your standards before or during frying).

FRIED CHICKEN LEGS, IRIS

- Place all ingredients in a gallon zip-loc baga nd mix well. Rinse chicken , pat dry and add to the seasonings. Seal and let sit a minimum of 2 hours.
- In a separate bag add all purpose flour. After your chicken has marinated, place in flour bag.
- Shake to coat well. Heat oil in cast iron skillet. The oil should ripple before adding the chicken.
- Cook 8-12 per side, this time is for large legs and mine's were huge. Adjust by at least 3 minutes for smaller legs. I also covered the skillet to make sure they were cooked thru. Hope that you like them, my family did!!
- I forgot cook in batches, unless you have a humongous skillet ; )
OVEN FRIED CHICKEN II
I love fried chicken, but it takes so long and is such a big mess. I came up with this one, and have been making it ever since! Everyone I have given the recipe to has loved it as well.

- Preheat oven to 350 degrees F (175 degrees C).
- Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
- Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. Remove from oven and drain on paper towels. Enjoy!

- Before frying, boil chicken legs in a pot of water for 10 minutes.
- In a large saucepan, heat vegetable oil on medium heat.
- On a large plate, combine flour, cayenne pepper, paprika, and salt.
- Keep beaten eggs in a separate bowl.
- Take 1 chicken leg and cover it is flour mixture.
- Place the chicken leg in eggs and cover it in egg.
- Place the chicken leg back into the flour mixture and cover it again in flour.
- Once oil is hot and ready for frying, place chicken leg into the oil for frying.
- Repeat steps 5-8 for each chicken leg allowing up to 3 legs to fry at one time.
- Once legs are fried to a golden brown, remove from oil and place on a double-folded paper towel on a plate.
- Allow plenty of time to cool before serving.
