Ranchero Beans image

Steps:

  • Heat a large skillet over high heat for 2 minutes. Add the bacon and fry until crispy, about 6 minutes, stirring frequently. Transfer the bacon to a paper towel-lined plate to drain, discard all but 1 tablespoon of bacon fat. Add the bay leaves, oregano, cumin, onions, chile, tomatoes and beans to the skillet. Cook the beans on a low flame for about 20 to 30 minutes, stirring occasionally.
  • Serve hot in bowls.

1/2 pound sliced bacon, cut crosswise in 1/2-inch pieces
2 bay leaves
1 teaspoon dried oregano
2 teaspoons ground cumin
1 medium yellow onion, finely chopped
1 jalapeno chile one seeded, ribbed and chopped
1 (14-ounce) can chopped tomatoes with liquid
1 (12-ounce) can pinto beans, washed and drained
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Cook the onion in the butter until soft then add the garlic and chili and cook for a further minute.
  • Drain the beans, reserving the cooking liquid. Add the cooked beans, with a little of their cooking liquid and whiz in the food processor.
  • Remove beans to a bowl, stir in onion, garlic, and chili and season to taste.

Steps:

  • Cook beans until tender, but not completely soft (30-40 minutes).
  • Meanwhile, in 12-inch skillet, cook the bacon over moderate heat until crishp and browned. Spoon off and discard all but 1 tablespoon fat.
  • Add onion, red and green pepper and garlic.
  • Cook for 1 minute, stirring.
  • Reduce heat to low, cover and cook for 10 minutes, stirring occasionally, until vegetables are soft.
  • Dran beans and stir into skillet with cumin, thyme, broth and bay leaf.
  • Simmer uncovered over medium heat until most of the liquid has evaporated and beans are soft, 10-15 minutes.
  • Remove bay leaf and season with salt and pepper to taste.

Steps:

  • Sort the beans, toss out all the rocks and imperfect beans. Rinse beans and place in a pot. Cover with water 2 inches above beans. Bring to a boil. Reduce heat and simmer, covered for 1 1/2 hours, adding water if needed.
  • Add remaining ingredients, making sure water covers everything. Simmer about 1 1/2 hours.
  • Taste the beans and broth together in a spoon. If it is not spicy enough for you, dice the jalapeño or add a few drops of Tobasco to taste.
  • Serve in a cup or bowl.

  • In a large skillet heat oil over medium heat. Add chile peppers, onion, and garlic; cook and stir for 4 to 5 minutes or until tender. Remove onion mixture from skillet; set aside.
  • In the same skillet cook chorizo over medium heat until cooked through and no longer pink, using a wooden spoon to break up meat as it cooks. Remove chorizo from skillet; drain on paper towels. Return chorizo to skillet.

  • In a large bowl or pot, soak the beans in half a gallon of water overnight. The next day, drain and rinse the beans.
  • In a large heavy pot, cook the bacon until done but not crisp. Add the onion, garlic, and jalapeno to the hot bacon. Cook, stirring regularly, until onions are transparent.
  • Add the beans, cumin, chili powder, salt, and ¼ cup cilantro. Add ½ gallon cold water and stir with a wooden spoon to scrape the browned bits off the bottom of the pan. Turn heat to low.
  • Cook beans at a very slight simmer until fork tender - I let them cook all day (~5 hrs) so the beans get very soft. Stir regularly to avoid burning the bottom and add more water as necessary (you will have to add another pint or two).
