Steps:
- 1. Place the cauliflower in microwave safe dish. Add 1/4 cup water to dish. Drizzle the dressing over the cauliflower. Place plastic wrap over dish and poke holes to vent.
- 2. Microwave for 10 minutes. Meanwhile mix the cheese, mayo, mustard and shallots together. Remove the cauliflower from the microwave. Remove the plastic wrap
- 3. Pour the cheese mixture over the cauliflower. Place uncovered in microwave and microwave for 4 or 5 minutes until cheese is melted. Garnish with the parsley
FROSTED CAULIFLOWER
Steamed cauliflower with a smooth, mustardy cheese sauce topping. People either love or hate this recipe, depending on their fondness for mustard. It's a much requested recipe at our family gatherings..

- Rinse, core, and section into medium sized florets. Arrange florets on a steamer insert and place in a pan so that water barely reaches the bottom of the steamer. Steam 5-10 minutes until tender/crisp - not mushy. Remove cauliflower in steamer basket and set aside until time to serve. (This can be done even a day ahead and refrigerated until ready to serve.).
- Meanwhile, mix the mayonnaise, cheese, and mustard together in a bowl. (Refrigerate if you are not using right away.).
- Just before serving, arrange florets in a microwavable bowl or casserole dish, and microwave on high for 1-2 minutes to reheat cauliflower. Top with cheese mixture, and microwave on high for 2-4 minutes more - until mixture melts on top the cauliflower but not until it scorches or runs off into the dish. Serve immediately.
- This recipe halves nicely: 1/2 head of cauliflower florets, 3/4 cup shredded cheese, 1/2 cup mayonnaise, and 1/2-1 teaspoon mustard. Or, make the whole amount, but frost 2 halves of recipe in 2 dishes to be served 2 days in a row. (I would not try to freeze this recipe as it might end up runny.).

I got this recipe from my mother who happens to live in a retirement facility in Atlanta, GA. When she served it to me, I knew I had found the best way to serve one of my favorite vegetables. I can eat this dish until I can't move.

Steps:
- Remove woody core from base of head, leaving the head whole.
- Cook Cauliflower in 2 T. water in a 1 1/2 quart covered glass dish in microwave oven for 6 to 7 minutes per pound.
- Rotate dish 1/4 turn halfway through cooking time if you don't have a turntable.
- (This can be done in a regular oven also by cooking until just tender.) Let the Cauliflower rest, covered for 5 minutes.
- In a small mixing bowl, combine the next 3 ingredients and heat them in the microwave for 1 minute.
- Frost the entire top surface of the cauliflower with the mixture and sprinkle with the grated cheese.
- Return to microwave and cook until cheese melts.
- If desired, you may sprinkle with paprika for color.

MUSTARD-PARMESAN WHOLE ROASTED CAULIFLOWER

- Position an oven rack in the bottom of the oven and preheat to 450 degrees F. Line a baking sheet with foil.
- Remove the leaves from the cauliflower, then trim the stem flush with the bottom of the head so the cauliflower sits flat on the prepared baking sheet. Rub the outside of each head with the cut garlic.
- Whisk together the oil, 3 tablespoons mustard, 1/2 teaspoon salt and a few grinds of black pepper in a small bowl.
- Put the cauliflower on the prepared baking sheet and brush the entire outside and inside with the mustard-oil mixture. Roast the cauliflower until nicely charred and tender (a long skewer inserted in the center of the cauliflower should pass through easily), 50 minutes to 1 hour. Let rest for a few minutes.
- Meanwhile, combine the parsley and Parmesan in a small bowl. Brush the outside of the roasted cauliflower heads all over with the remaining 1 tablespoon mustard and generously sprinkle with the Parmesan mixture.
- Cut the cauliflower into thick wedges and serve on plates with a sprinkle of salt, lemon wedges and any extra Parmesan mixture.
ROASTED CAULIFLOWER WITH CHEDDAR CHEESE SAUCE

- Position a rack in the middle of the oven and preheat to 375°F. Arrange a steamer rack over a large pot of boiling water.
- Remove the green outer leaves from the cauliflower, place it on the steamer rack, and steam until tender, about 10 minutes. Transfer to a large bowl to cool. Once the cauliflower is cool enough to handle, use your hands to gently break the florets from the thick central stalk-try to break the cauliflower into large florets rather than small pieces. Arrange the florets, in one layer, in a 12- by 8-inch baking dish and set aside.
- In a large heavy saucepan over moderate heat, melt the butter. Reduce the heat to low, add the flour and salt, and whisk until both are incorporated and the mixture turns golden brown, about 2 minutes. Raise the heat to moderate and add the milk, whisking constantly, until a smooth sauce forms (the sauce should be thick and glossy, but still runny), about 5 minutes. (If the sauce is too thick, gradually whisk in additional milk until the desired consistency is achieved.) Add 1 cup of the grated cheese and whisk until melted, about 1 minute. Pour the cheese sauce over the cauliflower, making sure to cover all the florets. Sprinkle with the remaining 1/4 cup cheese and season with pepper, then bake until the cauliflower is golden brown and the cheese sauce is bubbling, about 30 minutes.
ROASTED CAULIFLOWER
Cauliflower is an excellent blank canvas. You can steam or blanch it to keep its essential flavors intact, but by roasting or sautéing it, you can bring out its sweetness. Cauliflower will absorb the oil and seasoning, soaking up flavors much the way eggplant does. But it remains firmer. Roasted cauliflower can be served warm or at room temperature. It can be part of an antipasto of roasted vegetables. Or an accompaniment to a roast chicken or lamb. And though they aren't obvious choices, scallops and lobster, both naturally sweet themselves, are delicious with roasted cauliflower.
