FROSTED MEATLOAF (BEEF OR TURKEY)
This is dinner party fare. Looks like it stepped from a food magazine. Easy to make. All ingredients can be made ahead, then chilled & baked. If chilled allow 10 minutes more baking time. Make sure mashed potatoes are room temperature before frosting.

Steps:
- In large bowl mix ground meat and A-1 sauce, minced onion, cilantro. Add beaten eggs, mix well. Add crackers or bread crumbs and catalina dressing and white pepper. Mix. Add cheese 1/2 cup at a time and mix, then add another until all cheese is mixed.
- Form into an oval loaf, place in low side baking pan. Chill if desired.
- Bake 350* 1 hour. Allow ten more minutes if chilled. I suggest placing a pan on the rack underneath to catch any grease drips from beef or turkey and the melted cheese sometimes drips from the bottom side. I have used a sharp cheese also. When cold this makes an excellent cold meat loaf sandwich. Some family members prefer cold.
- Cook 3 medium potatoes in water or microwave, peel and mash. Add beaten egg and miracle whip and salt. You may prepare instant potatoes if you desire. Make sure they are a little on the stiff side before adding the egg, miracle whip and salt.
- When loaf is baked, frost with mashed potatoes. Spread on with spatula. Make peaks all over it.You can also brush melted margarine over it but watch carefully when it is broiling.
- Broil about 5 inches away until peaks are browned. Take out of oven. Sprinkle with paprika if desired. Broil fresh mushrooms at the same time.
- Let set ten minutes before serving. Cut in wedges. Serve on a platter with broiled fresh mushrooms surrounding the loaf and slices of lemon in between.
EASY OLD FASHIONED MEATLOAF
No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

LAYER CAKE MEAT LOAF
If the kids are always asking to eat dessert first, here's your chance. The moist "cake" layers are really full-flavored meat loaves "frosted" with instant mashed potatoes. Ketchup and mustard "icing" help complete the look.

- In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Pat into two ungreased 9-in. square baking pans. , Bake at 350° for 15-20 minutes or until meat is no longer pink and a thermometer reads 160°; drain. Let stand for 10 minutes., Meanwhile, in a large saucepan, bring the water, milk, butter and salt to a boil. Stir in potato flakes. Remove from the heat. , Invert one meat loaf onto a serving platter; invert the second loaf onto a cutting board. Spread 1-1/2 cups mashed potatoes over loaf on the platter. Carefully slide second loaf onto the potatoes., Spread 3-1/2 cups mashed potatoes over top and sides. Spoon remaining mashed potatoes into a pastry bag with open star tip #195. Pipe a shell border around bottom and top edges. Place ketchup and mustard in separate resealable plastic bags; cut a small hole in a corner of each bag. Pipe onto potato border.

FROSTED MEATLOAF
Mom used to make this with leftover mashed potatoes. Now I use Idahoan Instant Potatoes. I like them a lot and it makes this recipe easier.

- 1. Preheat oven to 350 degrees. In a large bowl beat egg slightly. Add oats, catsup, salt and pepper and mix well. Mix in ground beef. Shape into a loaf and place in an 8 by 4 inch loaf pan. Bake for 1 hour and 15 minutes.
- 2. Prepare mashed potatoes while meatloaf is baking. Add a bit more liquid than called for usually so potatoes will spread easily. Remove meatloaf from oven, cool a bit. Remove from pan and drain. Place on a large oven proof pie plate or serving plate. "Frost" or cover meatloaf on sides and top with mashed potatoes. Bake for 15 minutes more. Sprinkle cheese on top and return to hot oven until cheese is melted. Slice and serve.

- Preheat the oven to 350°F.
- In a large bowl, combine soup mix, ground turkey, breadcrumbs, ketchup, water and egg substitute.
- In a shallow baking pan, shape meat mixture into a loaf.

- 1. Adjust oven racks to upper-middle and lower-middle positions and heat broiler. Line rimmed baking sheet with aluminum foil, set wire rack in sheet, and place 14 by 6-inch piece of foil in center of rack. Whisk ketchup, sugar, vinegar, and hot sauce together in bowl; set aside glaze. 2. Melt 2 tablespoons butter in 10-inch skillet over medium heat. Add onion and cook until just softened, 3 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Set aside off heat. 3. Combine saltines and 1/3 cup milk in large bowl and mash with fork until chunky paste forms. Add pork, eggs and yolk, parsley, mustard, Worcestershire, 1 teaspoon salt, 3/4 teaspoon pepper, thyme, and onion mixture and knead with your hands until mostly combined. Add beef and knead until combined. 4. Transfer meat mixture to foil rectangle on wire rack and form into 9 by 6-inch loaf. Broil on upper-middle oven rack until well browned, 5 to 7 minutes. CLASSIC MEATLOAF

This is a lovely dish both in flavor and look. It can be made relatively quickly using frozen and cooked mashed potatoes, but the real deal is with homemade. Come to think of it, it could be a great way to use up leftover mashed potatoes.
