Frozen Basil Mint Caipirinha Recipes

Steps:

• Cut each of the lime halves into four chunks. Put in a large mortar with the sugar and squish well with a pestle to break them down - they will release their juices, leaving you with a sweet lime syrup. Remove the lime peel, squeeze to release the last bits of juice, then discard. Transfer the lime syrup to a small plastic container and freeze for at least 4 hrs, ideally overnight.
• When you're ready to make the cocktail, put the ice in a blender suitable for crushing ice, then add the frozen syrup and cachaça. Blend at a high speed until smooth and thick. Transfer to cocktail glasses or tumblers and serve immediately.

Steps:

• Cut each lime into wedges. Put 4 wedges in a short rocks glass. Add 2 tablespoons of sugar and muddle with a bar tool "muddler" (or use a spoon or pestle). Add a splash of mango nectar, to taste. Fill the glass with ice and pour 2 ounces of cachaca over the ice. Garnish with slice of mango and a lime wedge. Repeat to make 3 more drinks.

Steps:

• Combine lime peel, lime juice, ginger, sugar, and 30 mint leaves in mortar or medium bowl. Using pestle, muddler, or handle of wooden spoon, crush lime peel, ginger, and mint leaves together. Transfer mixture to large pitcher. Stir in rum. DO AHEAD: Can be made 6 hours ahead. Cover and refrigerate.
• Add 3 cups ice cubes to lime mixture in pitcher and stir to blend. Stir in ginger beer. Fill 10 cocktail glasses with ice cubes. Strain or pour cocktail mixture into prepared glasses. Garnish each drink with mint sprig.
