Steps:
- For the cranberry relish: Pulse the jalapeno in a food processor until finely chopped. Add the cranberries; pulse until finely chopped (but not ground). Transfer to a bowl and stir in the sugar, scallions, orange zest and 1/4 teaspoon salt. Cover and refrigerate for at least 2 hours or overnight.
- For the cream cheese log: In a large bowl, beat the cream cheese, shredded cheese, lime zest and 1/4 teaspoon salt with a wooden spoon or spatula until well blended. Mix in the cilantro. Spoon onto a large piece of plastic wrap and form into an even 1-inch-diameter log. Refrigerate until firm, at least 2 hours or overnight.
- Right before serving, unwrap the log and transfer it to a serving plate. Drain the cranberry mixture well, then carefully spoon a thick layer of it onto the cheese log, pressing all over to cover. Clean any spills from the serving plate and serve immediately with crackers or toasted bread.
HOLIDAY GOAT CHEESE LOG
This started as a Christmas treat, but was so popular that it's now served at all special family gatherings. The idea came from a recipe in a Colonial Williamsburg cookbook, but I modified it to get rid of peppercorns and add fruit. Garnish with parsley sprigs and serve with crackers.

HOW TO BUILD THE ULTIMATE SUMMER FRUIT & CHEESE BOARD
From eatingwell.com
Total Time 45 minsCalories 460 per serving
- Combine olives, 1 tablespoon oil, basil and crushed red pepper in a medium bowl; toss to coat. Transfer to a small serving bowl.
- Combine 4 tablespoons parsley and chives (or tarragon or chervil) on a small plate. Add goat cheese and roll to coat in the herb mixture.
- Preheat grill to medium-high. Grill sausage, turning once, until lightly browned and heated through, 6 to 7 minutes. Let rest for 3 minutes, then cut into bite-size pieces. Brush the remaining 1 tablespoon oil over both sides of baguette slices. Grill, turning once, just until crisped, 1 to 2 minutes.
- To assemble the cheese board: Arrange berries, peaches (or nectarines or plums), zucchini, carrots and cherry tomatoes in the center of the board. (If your guests will access the board from all sides, place fruit and vegetables in the center. If the board will be against a wall, place the fruit and vegetables toward the back of the board.) Arrange the cheeses around the fruit and vegetables. Arrange the sausage, grilled bread and crackers among the cheeses. Set the bowl of olives on the board. Fill in the gaps with nuts. Sprinkle with mint (or parsley) and garnish with edible flowers, if desired. Don't forget toothpicks for the sausage, and include cheese knives and a bowl for the olive pits.
