RASPBERRY CRUMBLE BARS
Steps:
- Preheat the oven to 350 degrees.
- Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and mix on medium speed just until combined. With the mixer on low, add the vanilla.
- Sift the flour and salt together and, with the mixer on low, slowly add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds of the dough evenly on the bottom of a 9-inch square baking pan and about 1/4-inch up the sides. Spread with the jam, leaving a 1/4-inch border. Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface. Sprinkle the almonds on top. Bake the bars for 45 minutes, until lightly browned.
- Cool completely and cut into 9 or 12 bars. Sprinkle lightly with confectioners' sugar.
APPLE PIE STREUSEL BARS
Okay, this is a recipe I found on Pinterest and then tracked it down to the original. It was alright, but needed some major spice kick. So, I adapted the original with just a few additions, pan change, and switched the apple variety. I personally like skipping the glaze, serving it HOT with a big scoop of vanilla ice cream!

- 1. Preheat oven to 350 °. Crust: Combine flour, sugar, salt, and baking powder in a medium bowl. Cut in butter (you can use a blender, pastry blender, forks, etc) until you have pea sized crumbles. Gently mix in beaten egg.
- 2. Spray an 8x8 baking dish with cooking spray. Gently press about 2/3 of the crumb mixture into the bottom of the dish. Set aside.
- 3. Filling: In a large bowl combine sliced apples, flour, sugar, cinnamon, cloves, and nutmeg. Toss to combine, until apples are well coated. Spread apples onto crumb pastry crust. Sprinkle reserved crust mixture evenly over the top of the apples slices. Bake for 45-55 minutes.
- 4. If doing glaze cool cake completely. Glaze: In a small bowl whisk together powdered sugar, extract, and enough milk to reach desired consistency. Drizzle glaze over cooled bars and allow to harden.

- Line a 9x13 aluminum baking pan with heavy duty foil.
- Leave 2-3 inches of foil sticking out of the pan on the short sides to aid in lifting the finished product out of the pan.
- FOR THE PASTRY.
- In a small bowl or plastic bag measure and mix flours and salt.
- In the bowl of an electric mixer fitted with the paddle attachment (can be done with a hand mixer), mix the butter, vanilla extract and sugar on medium speed until light and fluffy, about 2 minutes.
- Add flours 1 cup at a time, on medium speed, mixing until fully incorporated after each addition.
- Continue mixing until the dough begins to come together in large clumps.
- Press dough into prepared pan about 1/4-inch thick.
- Prick the pastry with the tines of a fork or a wooden skewer.
- Chill until firm, about 20 minutes.
- While the pastry is resting, Place rack in center of oven.
- Preheat to 375°F.
- Spread nuts on a cookie sheet and roast for 5-10 minutes, until hot and aromatic (do not burn them!) Allow to cool Bake pastry until golden brown, 18 to 20 minutes.
- Lower oven temp to 350 degrees.
- Allow to cool 10 minutes on a rack, have filling and topping ready when crust is cool TOPPING.
- Combine dry ingredients, whisk to combine and remove lumps from brown sugar, rub butter into dry ingredients until it resembles coarse corn meal (a few pea sized lumps of butter are ok) add almonds and toss to combine, set aside.
- FILLING.
- In a small sauce pan heat jam to a simmer while stirring, add cornstarch/water mixture, bring back to a simmer for 60 seconds.
- Remove from heat.
- Spread filling evenly onto baked crust, sprinkle with topping and bake 20-30 minutes, until lightly browned and aromatic.
- Cool on a wire rack, remove from pan and cut into bars.
- Sift powdered sugar on top.

- Whisk the cornstarch and water together until all the cornstarch has dissolved. (I just use a fork to mix– very easy.) Place the cornstarch mixture, berries, maple syrup, and coconut sugar in a medium saucepan over medium heat. Using a rubber spatula, stir the mixture as it cooks. Smash some of the berries against the bottom/sides of the pot as you stir, gently breaking them up. Bring to a simmer and allow to simmer for 2 minutes, stirring constantly. After 2 minutes, remove pan from the heat and allow to cool completely. The mixture will thicken as it cools. To speed up the cooling process, feel free to cover and refrigerate it after it slightly cools for at least 30 minutes at room temperature. I recommend making the berry filling in advance so it can cool completely. Berry filling can be cold or room temperature when you assemble the bars– you just don’t want it hot or warm.
- Preheat oven to 350°F (177°C). Line the bottom and sides of an 8-inch or 9-inch square baking pan with parchment paper, leaving an overhang on the sides to lift the bars out (makes cutting easier!). Set aside.
- Pulse the oats in a food processor or blender until they’re slightly broken up. (For whole oats, about 10 pulses. For quick oats, about 5-6 pulses.) Pour into a bowl and stir in the cinnamon, almond butter, maple syrup, applesauce, and melted coconut oil. Mixture will be thick and wet.
- Using the back of a flat spatula or a spoon, press about 3/4 of the crust/streusel mixture tightly and firmly down into the pan. Make sure it’s flat and very compact, which helps guarantee the bars will hold their shape. Spread cooled berry filling evenly on top.
