Steps:

  • Preheat the oven to 350 degrees.
  • Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and mix on medium speed just until combined. With the mixer on low, add the vanilla.
  • Sift the flour and salt together and, with the mixer on low, slowly add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds of the dough evenly on the bottom of a 9-inch square baking pan and about 1/4-inch up the sides. Spread with the jam, leaving a 1/4-inch border. Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface. Sprinkle the almonds on top. Bake the bars for 45 minutes, until lightly browned.
  • Cool completely and cut into 9 or 12 bars. Sprinkle lightly with confectioners' sugar.

1/2 pound (2 sticks) unsalted butter, at room temperature
3/4 cup sugar
1 teaspoon pure vanilla extract
2-1/3 cups all-purpose flour
1/2 teaspoon kosher salt
10 to 12 ounces good raspberry jam, such as Hero
2/3 cup good granola without dried fruit
1/4 cup sliced almonds
Confectioners' sugar, for sprinkling

APPLE PIE STREUSEL BARS

Okay, this is a recipe I found on Pinterest and then tracked it down to the original. It was alright, but needed some major spice kick. So, I adapted the original with just a few additions, pan change, and switched the apple variety. I personally like skipping the glaze, serving it HOT with a big scoop of vanilla ice cream!

  • Five-Spice Pear Pie Bars. A light orange glaze is the icing on the cake (literally). Flaky homemade pastry surrounds a layer of thinly sliced pears.
  • Fresh Strawberry Bars. These showstopping fruit bars can baked to serve a crowd of 24 in less than an hour. The base of the strawberry bars is infused with peanut butter for a nutty twist to the traditional PB&J.
  • Blueberry Cereal Bars. No more wondering about those unrecognizable ingredients listed on the box of cereal bars. Our homemade blueberry bars are chock-full of clean-eating ingredients such as almond butter, pure maple syrup, chia seeds, and rolled oats for the ultimate breakfast-on-the-go option.
  • Chewy Cherry-Almond Bars. When you combine the chewy ingredients of an oatmeal cookie with luscious cherry preserves, you're bound for a heavenly dessert.
  • Peanut Butter Jammin' Bars. You really can't go wrong with a classic flavor pairing like peanut butter and jelly. These fruit bars can be stored in your freezer for up to one month, so the kids (and adults) will always have a sweet treat on hand.
  • Lemon-Lime Bars. Get a double-punch of citrus flavor in these puckery fruit bars. Be sure to pour the filling onto the crust as soon as you take it out of the oven—this helps the lemon-lime bars set.
  • Blueberry Slab Pie. If you're a blueberry-lover, you'll flip for this simple slab pie. It's piled high with six cups of plump, cinnamon-spiced blueberries and topped off with a sugary oat crumble.
  • Strawberry-Rhubarb Bars. A sugar-and-spice ginger icing balances the tart flavor of rhubarb in this classic bar cookie recipe. Fresh strawberries on top add more fruity flavor and extra sweetness.
  • Apple-Cheese Slab Pie. Like a delicious stuffed Danish, these fruit bars include sweet layers of cream cheese and apples between buttery pastry.
  • Pear-Cinnamon Streusel Squares. These fruit bars are going to shine alongside a cup of coffee during brunch. Substitute apples for the pears, if you like; the cinnamon-flavor sweetness of this moist bar blends well with either fruit.

  • Whisk the cornstarch and water together until all the cornstarch has dissolved. (I just use a fork to mix– very easy.) Place the cornstarch mixture, berries, maple syrup, and coconut sugar in a medium saucepan over medium heat. Using a rubber spatula, stir the mixture as it cooks. Smash some of the berries against the bottom/sides of the pot as you stir, gently breaking them up. Bring to a simmer and allow to simmer for 2 minutes, stirring constantly. After 2 minutes, remove pan from the heat and allow to cool completely. The mixture will thicken as it cools. To speed up the cooling process, feel free to cover and refrigerate it after it slightly cools for at least 30 minutes at room temperature. I recommend making the berry filling in advance so it can cool completely. Berry filling can be cold or room temperature when you assemble the bars– you just don’t want it hot or warm.
  • Preheat oven to 350°F (177°C). Line the bottom and sides of an 8-inch or 9-inch square baking pan with parchment paper, leaving an overhang on the sides to lift the bars out (makes cutting easier!). Set aside.
  • Pulse the oats in a food processor or blender until they’re slightly broken up. (For whole oats, about 10 pulses. For quick oats, about 5-6 pulses.) Pour into a bowl and stir in the cinnamon, almond butter, maple syrup, applesauce, and melted coconut oil. Mixture will be thick and wet.
  • Using the back of a flat spatula or a spoon, press about 3/4 of the crust/streusel mixture tightly and firmly down into the pan. Make sure it’s flat and very compact, which helps guarantee the bars will hold their shape. Spread cooled berry filling evenly on top.
