Steps:
- 1. n a heavy skillet, sauté onion in butter and oil over medium-high heat until soft.
- 2. Add wine, tomatoes, garlic, salt, pepper and oregano. Bring to boil, lower heat to medium, and simmer until sauce is slightly thickened.
- 3. Stir in cheese and simmer for 10 to 15 minutes. Adjust seasonings.
- 4. Just before serving, add shrimp to simmering sauce and cook for 5 minutes or until shrimp are just tender. Do not overcook.
- 5. Garnish with parsley and serve immediately .

Steps:
- Put rack in middle of oven and preheat to 425ºF.
- Spray or oil a 9 x 13 baking dish.
- Heat 1 Tablespoon olive oil in 4 quart heavy saucepan over moderately high heat.
- Add onon, garlic, oregano and red pepper flakes and saute until onion is soft, about 3 minutes (stir constantly).
- Add wine, bring to a boil and reduce by half, about 3 minutes.
- Stir in tomatoes and salt and bring to a boil.
- Reduce heat and simmer briskly until sauce is slightly thickened (stir frequently), about 8 minutes.
- Stir shrimp into sauce and simmer, stirring occasionally, until shrimp are just cooked through, about 3 minutes.
- MEANWHILE:
- Cook orzo pasta in 6 - 8 qts. boiling water with 1 tablespoon salt until al dente (see package directions).
- Thoroughly drain orzo, reserving 1/2 cup of the water.
- Return orzo to pot and toss with remaining 1 tablespoon olive oil.
- Stir sauce and reserved cooking water into orzo.
- Add olives and season with salt and pepper to taste.
- Spoon half pasta into oiled baking dish and sprinkle with half of feta.
- Top with remaining pasta and feta.
- Bake, uncovered until cheese is slightly melted, 10 - 15 minutes.
- Serve immediately.

- In a large skillet, heat olive oil and butter over medium-high heat. Add onions and sauté until translucent, about 5 minutes.
- Add the mushrooms and cook until tender, then add the garlic and cook about 1 minute, until fragrant.
- Remove from heat, add the Ouzo and Vermouth, then return to heat and stir, allow some of the liquid to evaporate.
- After liquid has evaporated, add the parsley, tomatoes, tomato sauce, and sugar.
- Simmer the sauce, uncovered, over medium-low heat for approximately 15 minutes, stirring occasionally.
- Add the shrimp to the sauce and cover the pan. Cook shrimp until they turn pink and opaque white, about 5-10 minutes. (Since these cook quickly, be sure to have your side dishes ready before you add the shrimp.).
- Season to taste with salt and pepper, keeping in mind that the Feta can often be salty.
- Add the Feta either in the pan if you want it to melt a bit, or add to the plates as garnish.

- Greek Tomato Sauce:.
- In a skillet, heat olive oil and sauté onion and garlic until onion is tender. Stir in tomatoes, tomato sauce, wine and ground pepper. Simmer 15 minutes (or longer if a thicker sauce is desired).
- Shrimp dish:.
- Peel and devein shrimp. Wash, pat dry and sprinkle with lemon juice. Divide shrimp and place into 4 individual casseroles.
- (Add optional ouzo or brandy to tomato sauce) Spoon tomato sauce over the shrimp in each dish. Top with crumbled feta, followed by a sprinkling of parmesan.

- In a small bowl, toss the shrimp with 1 tablespoon of the olive oil, the lemon zest, 1 tablespoon (or half) of the lemon juice, 1 clove of the minced garlic, 1/4 teaspoon of kosher salt, and 1/8 teaspoon black pepper. Stir to coat and set aside.
