  • Knead together the turkey, ranch mix, egg, garlic, Worcestershire sauce, seasoned salt, and pepper in a bowl until evenly combined; divide into 4 equal portions and form into patties.
  • Cook on the preheated grill about 5 minutes per side for well done. An instant-read thermometer inserted into the center should read 165 degrees F (74 degrees C).

Roasted-Garlic Turkey Burgers image

Steps:

  • Using your hands, gently combine turkey, cheese, roasted garlic, sage, and 1/2 teaspoon each salt and pepper in a medium bowl (do not overwork meat). Shape into 4 patties (about 5 inches in diameter). Refrigerate, covered, until cold, about 1 hour (or overnight).
  • Preheat grill to medium-high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Brush grill and burgers with vegetable oil. Grill, flipping once, until cooked through, 3 to 4 minutes per side. Toast rolls, cut sides down, on grill; brush cut sides with olive oil.
  • Whisk lemon juice and 1 tablespoon olive oil in a medium bowl; season with salt and pepper. Add watercress; toss.
  • Spread grilled-tomato sauce on bottom half of each roll. Top each with a burger, one-quarter of the watercress salad, and top half of roll.

Sage and Garlic Roast Turkey image

Steps:

  • Heat oven to 325°F. Fasten neck skin to back of turkey with skewer. Fold wings across back of turkey so tips are touching. In small bowl, mix remaining ingredients except water, fresh sage and apples.
  • On rack in shallow roasting pan, place turkey, breast side up. Brush with butter mixture. Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone. Add water to roasting pan.
  • Cover turkey loosely with foil or roaster cover; roast 3 hours. Uncover; roast 45 minutes to 1 hour 30 minutes longer. Turkey is done when thermometer reads 165°F and drumsticks move easily when lifted or twisted. Place turkey on warm platter; cover with foil to keep warm. Let stand 15 minutes for easiest carving. Garnish with sage and apples.

Vermont Burgers image

Steps:

  • For the turkey burgers: Arrange 10 (4-inch) parchment squares on a tray. Gently mix together turkey, cheese, parsley, sage, garlic, 2 teaspoons salt, and 1 teaspoon pepper. Shape meat into 10 (3-ounce) patties (3 1/2 inches in diameter and 1/2 inch thick). Transfer patties to parchment.
  • For the beef burgers: Shape meat into 10 patties (see turkey burger instructions above).
  • Refrigerate patties for at least 1 hour.
  • Heat grill to medium-high; brush grates with vegetable oil.
  • Cook the turkey burgers: Brush tops with olive oil. Flip burgers onto grill, peeling off paper. Grill for 3 minutes. Brush tops with olive oil. Flip, and grill until cooked through, about 2 minutes more.
  • Cook the beef burgers: Season burgers with salt and pepper. Grill for 4 minutes. Flip, and grill until cooked through, 2 to 3 minutes more (6 minutes total for medium-rare, 7 minutes total for medium).
  • To serve burgers: Brush buns with butter, and grill until browning around edges, about 30 seconds. Sandwich burgers between buns, garnished with desired toppings.

Turkey Burgers With Green Garlic and Parsley image

Steps:

  • Grate the onion on the medium holes of a grater. You should have about 2 tablespoons grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, ketchup, salt and pepper.
  • Trim away the stalk from the garlic and remove the papery outer layers. Chop fine. Heat the olive oil over medium heat in a small skillet and add the garlic and a generous pinch of salt. Cook, stirring, until it is tender and fragrant, about 3 minutes. Stir in the parsley, remove from the heat and add to the turkey mixture. Using a fork, mix ingredients well. Shape into 4 patties without packing too hard.
  • Heat the canola, grapeseed or rice bran oil on a nonstick griddle or in a large nonstick frying pan over medium-high heat. When you can feel the heat when you hold your hand above it, cook the patties for 5 to 7 minutes on each side. Serve with the condiments of your choice.
