- Cook 1/3 cup olive oil, 6 whole garlic cloves and a rosemary sprig in a pot over medium-low heat, stirring, until the garlic is golden, 7 minutes. Season with salt and pepper. Cook 2 bunches broccoli rabe in salted boiling water until wilted, about 5 minutes. Drain and return to the pot, then pour in the garlic oil. Cover and cook, stirring occasionally, until the greens are tender, 5 minutes. Season with salt and pepper, and top with shaved parmesan.

PRESSURE COOKER GARLICKY BEANS WITH BROCCOLI RABE
This white bean dish isn't shy when it comes to garlic. It's used in the pot along with the simmering beans, and also fried in olive oil as a crunchy, pungent garnish. As a contrast, the broccoli rabe and red onion get very sweet when you sauté them slowly until they are browned and caramelized. Alongside the soft, mild white beans, it's a satisfying and comforting dish with a garlicky kick. - In the pressure cooker, combine the beans, 7 cups of water, the 4 smashed garlic cloves, 2 tablespoons of the oil, and 2 teaspoons of the salt. Tie the rosemary, bay leaf, and carrot together with kitchen twine, and then drop the bundle into the pressure cooker. Cover, and cook on high pressure for 25 minutes. Allow the pressure to release naturally. If the beans aren't done, cook on high pressure for another 5 minutes, then manually release the pressure.
- While the beans are cooking, heat 1/2 cup oil in a large skillet over medium-low heat. Stir in the sliced garlic and a pinch of salt, and sauté until the garlic is just starting to turn golden, 2 to 3 minutes. Transfer the garlic oil to a small bowl and reserve for the garnish.
- Return the skillet to the stove, raise the heat to medium-high, and add the remaining 2 tablespoons oil. Stir in the onion and cook until golden, about 5 minutes. Raise the heat to high and stir in the broccoli rabe, remaining 1/2 teaspoon salt, and the red pepper flakes, tossing to coat with the oil. Add 1/2 cup of water to the skillet, and cook until the water has been absorbed and the broccoli rabe is softened and browned, about 10 minutes (drizzle in more oil as necessary to prevent sticking).
- To serve, remove the herb bundle from the bean pot and then drain the beans, reserving the liquid if you like (use it like stock). Place the beans in a shallow bowl or on a platter. Drizzle the beans with the garlic oil, and top with the broccoli rabe.

GARLICKY BROCCOLI RABE (FRESHDIRECT)

- 1. Mince 2 of the garlic cloves and mix them with the bread crumbs in a small bowl. Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the bread crumb mixture and cook, stirring constantly, until the crumbs are toasted and the garlic is beginning to turn golden, which will take 3 to 4 minutes. Remove the skillet from the heat and spread the bread crumbs out on a plate to cool. 2. Bring a large pot of boiling salted water (1 tablespoon salt per gallon of water) to a boil over high heat. Add the broccoli rabe and leave it in the pot just until the water returns to boil. Then drain it in a colander, and squeeze it gently to remove the excess water. Coarsely chop the broccoli rabe, leaving any florets whole, and set aside. 3. Heat the remaining 1 tablespoon olive oil over medium heat in the same skillet that you used for toasting the bread crumbs. Coarsely chop the remaining garlic clove, and add it to the oil. Cook, stirring constantly, until it begins to turn translucent, about 5 minutes. Add the broccoli rabe and cook, stirring, until it is hot and the garlic is golden, about 7 minutes. Season generously with salt and pepper, and transfer to a warmed serving bowl or plate. Drizzle with the lemon juice, sprinkle with the bread crumb mixture, and serve immediately.
BROCCOLI RABE WITH GARLIC

- Cut off and discard the tough ends of the broccoli rabe and cut the rest of into 2-inch pieces. Place the broccoli in a colander and rinse. Drain well. Heat the olive oil in a large pot. Add the garlic and cook over low heat, stirring occasionally, for 4 to 6 minutes, until golden brown. Remove the garlic with a slotted spoon, and set aside. Add the broccoli to the hot oil. Add the red pepper flakes, salt, and pepper and cook, covered, over medium to low heat for 5 to 10 minutes, turning occasionally with tongs, until the stalks are tender but still al dente. Add the reserved garlic, check the seasonings, and serve hot.
BROCCOLI RABE WITH GARLIC AND ALMONDS
Boiling the broccoli rabe beforehand reduces its bitterness. Toss in the pan with sauteed garlic and almonds to reheat.
