ROASTED GARLIC BRUSSELS SPROUTS

- Heat 2 tablespoons olive oil in a small skillet over medium heat; add 2 chopped garlic cloves and 1/2 teaspoon each cumin seeds and kosher salt and cook 2 minutes. Stir in 1 tablespoon brown sugar, the juice of 1/2 lemon and a pinch of red pepper flakes. Toss with 1 1/4 pounds halved Brussels sprouts on a baking sheet. Roast at 450 degrees F until tender, 18 to 24 minutes. Toss with torn cilantro.

- Place brussels sprouts and garlic in a small saucepan; add 1 in. of water. Bring to a boil; reduce heat. Cover and simmer for 6-8 minutes or until sprouts are crisp-tender; drain. Drizzle with butter. Sprinkle with Parmesan cheese if desired.

- Trim Brussels sprout stems. Using a paring knife, cut an "X" in the bottom of each., In a large saucepan, heat oil and 1 teaspoon butter over medium heat. Add garlic; cook and stir 1-2 minutes or until garlic begins to color. Immediately add Brussels sprouts, stirring to coat., Stir in broth, salt and pepper; bring to a boil. Reduce heat; simmer, covered, 8-10 minutes or until Brussels sprouts are tender. Drain. Add remaining butter; toss to coat.

- Heat oven to 400 degrees. Trim bottom of brussels sprouts, and slice each in half top to bottom. Heat oil in cast-iron pan over medium-high heat until it shimmers; put sprouts cut side down in one layer in pan. Put in garlic, and sprinkle with salt and pepper.
- Cook, undisturbed, until sprouts begin to brown on bottom, and transfer to oven. Roast, shaking pan every 5 minutes, until sprouts are quite brown and tender, about 10 to 20 minutes.
- Taste, and add more salt and pepper if necessary. Stir in balsamic vinegar, and serve hot or warm.

- Place brussel sprouts in bowl of food processor. Pulse 12-15 times, or until roughly shredded.
- Heat oil in large nonstick skillet over medium low heat. Add garlic, and cook 5-7 minutes, or until light brown.
- Increase heat to medium high and add shredded sprouts, red pepper, brown sugar, salt and pepper. Cook 5 minutes, or until lightly browned. Stir often.
- Add water and cook 5 minutes or more until most of the liquid is evaporated. Stir in vinegar and season to taste with additional salt or pepper to taste. Serve immediately.
- Note: Frozen sprouts can be used in a pinch in this recipe. Thaw first and reduce cooking time a bit. You want them to be crisp/ tender in this recipe.

These are very tasty, not your normal boiled yucky brusses sprouts. I made these once for Thanksgiving and now I make them all the time. The original recipe is from Vegetarian Times, but I've changed it a little.

- Ffter chopping ingredients, heat olive oil in skillet on med/med high.
- Sauté garlic and sprouts for a couple of minutes. (i know it seems like a lot of garlic but it mellows out when cooked, but you can use less if you like).
- Add apple cider vinegar and cook sprouts to desired level of doneness. (I like my veggies al dente).
- The apple cider vinegar really brings out the mustardy flavor of the brussels sprouts.
- Add salt and pepper to taste. (I love a lot of coarse ground black pepper in this).
- I also eat it hot or cold. I just love it, but watch out--there's a lot of fiber in this and it could give you a tummy ache if you eat too much.
