- Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
- In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

- 1. Heat a large skillet on medium. Add spinach and cook until wilted and easily gathered into a mound with tongs, stirring constantly. Transfer to a colander and squeeze out all excess water. Transfer to a cutting board and chop coarsely.
- 2. In the same skillet, heat oil on medium. Add garlic and stir occasionally until fragrant, about 30 seconds. Reduce heat to medium-low and add cheese and milk. Cook, stirring with a wooden spoon, until cheese melts and mixture thickens into a smooth sauce, 2-3 minutes. Stir in salt, pepper and nutmeg. Taste and add more seasonings if needed.
- 3. Add spinch to cheese mixture, separating with your hands; stir gently to coat.

CREAMY SPINACH-STUFFED MUSHROOMS RECIPE BY TASTY

- Preheat oven to 375˚F (190˚C).
- Remove the stems from the mushrooms. Place the top half on a baking sheet.
- Mince the stems.
- Melt the butter in a pan and add the minced stems and minced garlic. Stir and cook for 2 minutes.
- Add the spinach, cook until it wilts.
- Add the cream cheese, salt, and pepper. Stir until the cream cheese is melted and everything is well-combined.
- Take a spoonful of the spinach mixture and fill each mushroom top.
- Mix bread crumbs and Parmesan cheese in a bowl and sprinkle the mixture on top of the dip stuffed mushrooms.
- Bake for 12-15 minutes or until golden brown.

- Bring water to a boil in a heavy 2 qt saucepan over moderate heat, then add spinach in handfuls and cook, tossing, until wilted, 2-3 minutes.
- Transfer to a sieve set over a bowl and press on spinach with back of a wooden spoon to remove excess liquid, then discard liquid.
- Add cream, garlic, nutmeg, salt and pepper to saucepan and boil until reduced to 1 TBS, about 2 minutes.
