- Put the cored and peeled apples in a saucepan, add half the caster sugar, the lemon juice and three tablespoons of water.
- Cover with a lid and cook over a medium to low heat for 10-15 minutes until tender, stirring from time to time.
- The applesauce can be very chunky or lightly whisked for a smoother finish.
- Pre-heat the grill.
- Brush the pork chops with a little of the melted butter, seasoning with salt and freshly ground black pepper.
- Put the chops on a grill tray with a rack, and grill them for 4-5 minutes on both sides.
- Meanwhile peel and core the remaining apples.
- Cut into thin long slices, maintaining the shape of the apple.
- Spread the applesauce over the chops and arrange the apple slices on top, slightly overlapping as you would for apple tart.
- Brush or drizzle the chops with the remaining melted butter, sprinkling with the remaining sugar and return under the grill.
- Cook for a few minutes and the apples are nicely toasted.
- Serve and enjoy.

PORK CHOPS WITH APPLES AND GARLIC SMASHED POTATOES

- Put the potatoes and garlic in a saucepan, cover with cold water and season with salt. Cover and bring to a boil, then uncover and continue cooking until tender, about 15 minutes. Cover and set aside.
- Meanwhile, rub both sides of the pork chops with the sage, and salt and pepper to taste. Heat a large cast-iron skillet over high heat, then add 1 teaspoon olive oil and sear the chops until golden on both sides, about 5 minutes total. Transfer to a plate. Wipe out the skillet and add the remaining 2 teaspoons olive oil. Add the onion and apples and cook over medium-high heat until lightly browned, about 5 minutes. Season with salt and pepper and stir in the cider.
- Return the chops to the skillet. Cover and cook, turning once, until just cooked through, 4 to 5 minutes. Drain the potatoes, reserving 1/4 cup liquid. Return the potatoes to the pan; add the buttermilk and mash, adding cooking liquid as needed. Season with salt and pepper. Serve with the pork chops, onion and apples. Drizzle with the pan juices.

- Combine first 8 ingredients in a medium pot placed over medium high heat and cook until a chunky sauce forms, 10 to 12 minutes, stirring occasionally. If sauce begins to spatter as it bubbles, reduce heat back a little, but it should be allowed to reduce and form quickly. Once apples are soft and sauce forms, remove it from the heat.
- Heat a large nonstick skillet over medium high heat. Add oil to the pan. Season chops on 1 side with salt and pepper. Using a pair of tongs, add chops to hot skillet seasoned side down. Season the opposite side of the chops with salt and pepper. Brown and caramelize the chops 2 minutes on each side, then reduce heat to medium and cook another 5 to 6 minutes, turning occasionally, until juices run clear. Remove chops from heat and let them rest a couple of minutes for juice to redistribute. Deglaze the pan with a splash of apple juice and 2 tablespoons of butter. Pour pan sauce over chops. Remove ginger from the sauce and top chops with generous portions of warm golden apple sauce.
MASHED SWEET POTATOES, PORK CHOP WITH CIDER GRAVY, SAUTEED APPLES AND ONIONS

- In a medium pot add sweet potatoes and cover with salted water. Bring to a boil, lower the heat and simmer until fork tender, 15 to 18 minutes.
- Season chops with salt and pepper. Heat 1 tablespoon extra-virgin olive oil, a turn of the pan, in a large skillet over medium-high heat. Cook pork 5 minutes on the first side until deeply golden, turn and cook 3 to 4 minutes more with a loose foil tent over the pan. Remove cooked chops to a plate and cover to keep warm. Add another turn of the pan of olive oil, add the onions and apples. Season with salt, pepper and thyme and cook until just tender, 5 to 6 minutes. Douse with juice of a lemon and remove onions and apples to a bowl; keep warm.
- Add 2 tablespoons butter to the skillet, melt then whisk in flour, cook 1 minute then whisk in cider and 1 cup of stock. Season the gravy with salt and pepper. Thicken 4 to 5 minutes over medium-low heat.
- Drain cooked sweet potatoes and return pan to stove. Melt 2 tablespoons butter and combine with marmalade and 1 cup stock. Add potatoes and mash, season with salt and pepper.
- Serve chop covered with apples and onions, gravy poured down over top, sweet potatoes alongside.
BAKED PORK AND APPLE MEATBALLS (GARY RHODES)
A super Gary Rhodes recipe! Oh so GOOD and a bit different for that weekday meal. I like to serve this with mashed potatoes and a green veggie. I always double this because it is delicious dish that is also great for OAMC. I have modified this to omit the prunes as hubby wasn't fond of them the first time I prepared this. I also omitted the suet because I feel it just adds more fat to the recipe. If you want to make this exactly like Gary's recipe, add 6 chopped ready to eat prunes and 4 oz. shredded suet when adding the apples and egg to the minced pork.

- Preheat the oven to 350°F.
- Cut apples into 1/2" pieces and set aside.
- Melt butter in frying pan and cook onions gently for a few minutes until transparent.
- Add nutmeg and cinnamon to the onions and cook for a minute or so.
- Remove from heat and add sage; set aside to cool.
- Add the apple pieces, egg and ground pork to the onion mixture once it has cooled; season with salt and pepper and mix well.
- Roll mixture into 12 meatballs.
- In a clean frying pan, brown the meatballs in 1 tablespoon of butter making sure to turn carefully so they do not break apart.
- Put the browned meatballs into an ovenproof casserole dish.
- Pour the white wine into a saucepan and boil until it reduces down to about 1/2.
- Stir in the chicken stock; pour liquid over meatballs.
- Place in the oven uncovered for 45 minutes.
- Remove meatballs carefully from casserole dish and keep warm.
- Skim any fat off of the juices left in the pan.
- Optional: Use the cornflour (cornstarch) mixed with a bit of cold water and whisk into the juices for a thicker sauce.
- Serve meatballs with the sauce drizzled over top.

- Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
- Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
