Steps:

  • Put the chocolate chips and the butter in a bowl.
  • Heat for 1 minute in the microwave on high.
  • Stir the chocolate mixture until smooth.
  • Mix the flour and sugar with the chocolate mixture and the 3 eggs together.
  • Put in a greased 9" round pan or mini muffin pan and cook for 10-15 minutes at 400.
  • Remove the cake or mini-muffins and cool.
  • Bon appetit!

GâTEAU CHOCOLAT-MENTHE (CHOCOLATE-MINT CAKE)

This chocolate-mint cake recipe-called Gâteau Chocolat-Menthe in French-gets mint flavor in several ways. Serve at a dinner party or for a birthday celebration.

Gâteau Chocolat-Menthe (Chocolate-Mint Cake) image

Steps:

  • Preheat the oven to 350°F. Generously butter a 9-inch springform pan and line the bottom with parchment.
  • Melt the butter and pour it into a heatproof bowl, leaving the milky solids behind. Set aside somewhere warm.
  • In a stand mixer or using handheld electric beaters, whisk the egg whites at medium speed until foamy. Add the sugar and the salt and continue to whisk until they form firm, but not dry, peaks.
  • In a small bowl, lightly whisk the egg yolks until homogenous. Add the chocolate extract, if using. Pour this mixture over the egg whites and, using a rubber spatula, fold to incorporate. Set a sieve over the mixing bowl and sift the cornstarch, cake flour and cocoa powder onto the eggs. Fold these in until no streaks remain. Fold about half a cup of batter into the melted butter, then fold this butter mixture back into the batter.
  • Pour the batter into the prepared pan and bake for 25 minutes, or until the surface springs back when touched and a knife inserted in the center comes out clean. Set on a cooling rack for 10 minutes before unmolding.
  • Bring the water and sugar to a simmer over low heat and stir to dissolve sugar. Remove from heat and add the mint leaves. Allow to steep for around 20 minutes before removing the mint.
  • Place the egg whites in one bowl and the confectioners' sugar in another. Dip each mint leaf into the egg whites, then hold the leaf above the bowl for a few seconds to let any excess egg drip off. Next, dip the leaf into the sugar. Give it a little shake to let any excess fall away. Place the leaf on a parchment-lined baking sheet and set aside to dry. If your kitchen is hot or humid, place in an oven on the lowest setting and turn off the oven. Let the leaves dry out as the oven cools.
  • In a stand mixer or using handheld electric beaters, whip the cream until it is billowy. Sprinkle with the confectioners' sugar and whisk to incorporate. Drizzle with whatever source of mint you are using and whisk to incorporate.
  • Bring ¾ cup of the cream to a boil and immediately pour over the chocolate. Allow the chocolate to melt for a minute, then whisk to create a smooth ganache. Set aside to come to room temperature. This shouldn't take more than about 10 minutes. If it gets too cold, it will start to solidify, which you don't want. If that happens, warm it up a tiny bit-just enough that it stirs easily.
  • In a stand mixer or using handheld electric beaters, whip the remaining cream until you see soft, but structured, peaks. Stir a third of this whipped cream into the ganache to lighten it, then fold the remaining ganache into the whipped cream with a rubber spatula. Use immediately.
  • Slice génoise into two horizontally. Brush both halves of the génoise with the mint syrup. Allow to absorb. Repeat. And repeat a third time. Set aside for 10 minutes.
  • Slather the bottom layer with the whipped chocolate ganache. Cover with the top layer. Ice this with ganache. Decorate by creating a border of candied mint leaves.
  • Serve with a generous dollop of the mint Chantilly.

⅓ cup (30g) unsweetened cocoa powder

¼ cup (50g) granulated sugar
20 very fresh mint leaves
2 large egg whites, whisked until loose
½ cup (58g) confectioners' sugar
20 very fresh mint leaves
2 cups heavy cream
2-3 Tbsp. confectioners' sugar
2 tsp. crème de menthe, ¼ tsp. mint extract, or 2 Tbsp. mint simple syrup or mint soaking syrup
2¼ cups heavy cream
280 grams dark chocolate, such as Valrhona Caraïbe 66% cacao

This is from Le Francais restaurant in suburban Chicago which was absolutely the best French restaurant in the Chicago area when I lived there. I was fortunate enough to dine at the restaurant several times and we were always very pleased with each experience.

Le Francais Gâteau Au Chocolat image

Steps:

  • Preheat your oven to 250°F
  • Break the chocolate up into chunks and place it with the butter into the top of a double boiler. Melt and blend this mixture over simmering water.
  • Stir 1 1/4 cups of the sugar into the melted chocolate and continue heating until the sugar has been completely absorbed.
  • Best the egg yolks in a separate bowl and little by little beat the chocolate mixture into. Put back in double boiler and cook over simmering water until slightly thickened. Remove from the heat and cool, then add the Grand Marnier and the vanilla extract.
  • Beat the egg whites into soft peaks, then gradually add the remaining 1/4 cup sugar and beat until stiff peaks form.
  • Spoon 1/3 of the chocolate mixture over the egg whites and fold in carefully. Fold in the remaining chocolate mixture. Spoon into aa greased and floured 12 inch springform pan. Bake for at least 3 hours, or until done. Let the cake cool to room temperature then cover and refrigerate for at least 3 hours. Transfer to a serving platter, dust with powdered sugar, and serve with boiled custard (crème anglaise).

Steps:

  • Mix and sift cake flour and cocoa powder. Preheat oven to 150C. Melt chocolate in a double broiler (50-60C). After cooling, add butter and whisk well to combine. Sift the mixed powder into the chocolate and mix well. In another bowl beat egg yolk and half sugar until mixture becomes pale yellow. In a different bowl, beat egg whites until it forms frothy bubbles. Add half of the half sugar (ie 40g) and beat well until mixture resembles a fluffy cloud and stands in soft peaks. Add the other 40g of sugar until stiff peaks form and the bowl can be hekd upside down. Mix on low speed for a minute. Add the egg yolk mix into the chocolate mix and mix well. Fold half the meringue into the chcolate mix use a J-pattern to fold. Repeat with the remaining half. Pour mix into a mold and bake for 40 minutes. Remove cae from mold and let it cool completely. Sift icing sugar on the top.

  • Break up chocolate into a medium microwave-safe bowl. Add butter chunks. Zap in the microwave 1 minute. Stir with a flexible spatula. If need be, zap another 30 seconds to melt. Stir until smooth.
  • Crack eggs into the bowl of a stand mixer fitted with a whisk attachment. Whip on high speed, gradually cascading in sugar and salt, until pale, thick, and tripled in volume, about 3 minutes. (Lacking a stand mixer, use a handheld mixer and coordination, or a balloon whisk and upper-arm strength.)
  • Pour chocolate mixture into egg mixture; beat on low to combine. Sprinkle in flour; beat on low just to combine. Mix in any renegade specks of flour with a flexible spatula. Transfer batter to prepared pan.
