Throwdown Gingerbread Cookies image

Steps:

  • Whisk the dry ingredients except the sugar. In the bowl of an electric mixer fitted with a paddle, cream the butter with the sugar until slightly fluffy. Slowly beat in the milk.
  • On low speed, beat in the dry mixture until combined; dough will be sticky. Divide the dough into 4 equal portions, roll each to 1/4 to 1/8-inch thick between sheets of parchment paper, and freeze until firm, about 20 minutes.
  • Preheat the oven to 325 degrees F. Line sheet pans with parchment paper.
  • Put the cookie dough on a floured work surface; cut and transfer cookies to the prepared sheets. Reroll and cut the scraps into cookies.
  • Bake the thinner cookies for about 11 minutes, until crisp, and the thicker about 20 minutes. Cool for about 2 minutes, then transfer to a rack to finish cooling.

1 teaspoon ground white pepper
1 teaspoon dry mustard powder
3/4 teaspoon baking soda

GEORGETOWN LIME COOKIES (BROAS)

This cookie comes from British Guyana. The recipe is from "The Joy of Cookies" by Sharon Tyler Herbst. You can also add 1 cup of toasted almonds or grated coconut to the dough before rolling it into balls if you wan't something a little different. Prep time is a guess.

Steps:

  • Preheat oven to 350 degrees farenheit. Grease 3 to 4 large baking sheets.
  • In a medium bowl, combine flour, baking powder, salt, nutmeg and cinnamon; set aside.
  • In a large mixing bowl, beat butter, sugar and lime zest until light and fluffy. Gradually beat in lime juice. Stir in flour mixture 1/2 cup at a time, blending well after each addition.
  • Place sugar-spice mixture in a small bowl. Roll rounded teaspoons of dough into 1-inch balls. Roll balls in sugar-spice mixture; arrange, 1 inch apart, on prepared baking sheets. Use a decorative cookie stamp or the bottom of a glass to flatten balls slightly.
  • Bake 13 to 16 minutes, or until deep golden brown on the bottom. Cool on racks. Store in an airtight container at room temperature for up to 1 week or freeze for longer storage.

Steps:

  • For the cookies: Line a baking sheet with a silicone liner or parchment paper. Set aside.
  • In a food processor, pulse together the butter, sugar, and lime zest until combined. Add the egg, lime juice, and vanilla. Process until smooth. Add the rice flour, cornmeal, baking powder, and salt. Process until the mixture forms a dough. Place the dough on a lightly floured surface and knead for 20 seconds. Form the dough into a ball, wrap in plastic, and refrigerate for 20 minutes.
  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Lightly flour a work surface. Cut the dough in half and roll out each piece into a 9-inch diameter circle, about 1/4-inch thick. Using a 3-inch round cookie cutter, cut the dough into 10 circles and arrange on the prepared baking sheet. Gather any scraps of dough, knead together, and roll out to 1/4-inch thick. Cut out 2 additional rounds of dough and place on the baking sheet. Bake until light golden around the edges, 15 to 20 minutes.   • Beat butter, sugar, and confectioners' sugar until fluffy.
  • Beat in egg yolks, vanilla, and lime zest. Whisk flour, baking powder, and salt and stir into the butter mixture.

Cornmeal Lime Cookies image

Steps:

  • Cream butter and sugar 3-4 minutes.
  • Add egg and beat until JUST combined.
  • Add zests, lime juice and extract.
  • Add flour and cornmeal and mix until well blended.
  • Cover with waxed paper or plastic wrap.
  • Form into a disc (why? Beats me) and chill, at least, 1 hour.
  • Roll heaping teaspoons of dough into balls and place on baking stones (or lined baking sheets) 3" apart.
  • Dip bottom of a medium drinking glass into a bowl filled with the cornmeal and flatten balls with the bottom of the glass until dough is 1/4" thick.
  • Bake cookies at 350 until golden brown around the edges, about 14-16 minutes.
  • When cookies cool pour lime glaze (mix ingredients together) over them.
  • Let glaze set.
  • Devour.
