- In a resealable plastic bag or shallow glass container, combine the first 8 ingredients; add pork and toss to coat. Seal or cover and refrigerate overnight. , Meanwhile, combine sauce ingredients; cover and refrigerate for several hours. Drain pork and discard marinade; thread pork on skewers, leaving a small space between pieces. , Grill, uncovered, over medium heat for 8-10 minutes or until the meat is no longer pink, turning frequently. Serve in pita bread with sauce.

- Make marinade by combining all ingredients in a bowl.
- (Can be refrigerated for up to 2 months).
- GLAZE: Combine peaches, lemon juice, sugar, soy sauce, cornstarch, and garlic, ginger in saucepan.
- Simmer until thickened about 4 minutes.
- (Can be kept in refrigerator for a week) Refrigerate pork with marinade for 4 hours or overnight.
- Drain pork and discard the marinade.
- Cut 3 firm fresh peaches into pieces.
- Thread pork with peaches on 6 metal or bamboo skewers.
- Grill for 10-15 minutes or until pork is no longer pink in center and peach is tender.
- Brush with glaze during the last 5 minutes of cooking.
- Boil any leftover glaze in saucepan for 1 minute.
- Serve glaze on the side.

- GRILL DIRECTIONS: Heat grill. Sprinkle both sides of each pork chop with seasoned salt; cut each chop into 4 pieces. Alternately thread pork pieces, zucchini, mushrooms and bell pepper evenly onto four 12 to 14-inch metal skewers. In small bowl, combine preserves and vinegar; blend well.
- When ready to grill, place kabobs on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush with preserves mixture. Cook 5 minutes. Turn kabobs; brush with remaining preserves mixture. Cook an additional 5 to 7 minutes or until pork is no longer pink. If desired, serve over hot cooked rice.

- If using wooden skewers, soak in water for 30 minutes to prevent burning. Preheat grill to medium-high heat, about 400° F.
- Cut pre-marinated pork, peaches, bell pepper and onion into roughly 1-inch chunks. Place onto skewers, alternating ingredients until filled.
- Lightly grease grill grates and add prepared skewers. Cook 8-12 minutes, rotating as needed, until slightly charred. Fruit and vegetables will be tender and pork should reach an internal temperature of at least 145° F. Remove from grill and rest a few minutes.

- Preheat grill to 350° to 400° (medium-high) heat. Whisk together first 3 ingredients, 2 Tbsp. olive oil, and 1 tsp. rosemary; reserve 1/4 cup. Pour remaining mixture into a large shallow dish or zip-top plastic freezer bag; add pork, turning to coat. Cover or seal, and let stand 10 minutes.
- Meanwhile, cook barbecue sauce and reserved 1/4 cup mixture in a medium saucepan over medium heat, stirring occasionally, 3 minutes or until bubbly. Remove from heat.
- Remove pork from marinade, discarding marinade. Thread pork onto skewers, leaving a 1/8-inch space between pieces. Sprinkle pork with salt and pepper.
- Thread peaches and bell peppers alternately onto other skewers, leaving a 1/8-inch space between pieces. Drizzle with remaining 2 Tbsp. olive oil, and sprinkle with remaining 1 tsp. rosemary.
