KäSEKUCHEN (CHEESECAKE)

I love cheese cake, so when I saw this I had to have it...You know how that is....This is a German Baked Cheese Cake and what is so nice is you can put what ever fruit you want on it...My fave is Blueberry and Sour Cherries or a Suzette Sauce would be nice to...I ran across this on my Fave Deutsch Site....

Käsekuchen (Cheesecake) image

Steps:

  • 1. Preheat oven to 325°F (162°C). Quark Cheese recipe 2 days before..... Grease a Spring form pan (26cm size).
  • 2. Combine all the ingredients for the crust. Cover the bottom and 2/3rds up the side of the Spring form pan with the dough. Set aside in a cool place.
  • 3. Beat egg whites until peaks form. While beating sprinkle in 1/4 cup sugar. Beat cream until peaks form.
  • 4. Combine 3/4 cup sugar, milk, and flour. Mix until smooth. Add egg yolks, Quark, seeds of the Vanilla Bean, and lemon zest. Mix until combined. Gradually and gently fold in the whipped cream. Gradually and gently fold in the egg whites.
  • 5. Pour filling into the prepared pan. Bake cake for about 70 minutes.
  • 6. Remove from heat and allow cake to cool in the pan. Once cooled, refrigerate cake until chilled. Before serving, dust top of cake with powdered sugar (OPT).

If the lid is plastic or rubber, make sure it's dishwasher safe - if so, it should be fine at 150 degrees in the oven. Place the dish in the oven and let it sit overnight, or about 8-12 hours.
  • 8. In the morning, remove the dish from the oven. Place the strainer in the sink or a large pot and line it with the linen. Spoon or pour the contents of the baking dish into the strainer. You'll notice that the curd (solid) has partially separated from the whey (liquid). Cover the cheese with the ends of the cloth and let it drain in the sink for 30-60 minutes. To speed up the process, fill a bowl or sealed container with water and place on top to weigh it down. 30 min...........
  • 9. Dump the contents into a bowl and refrigerate. Once chilled, add milk 2T at a time until it is smooth and easy to spread with a texture similar to creamy ricotta cheese. Add salt to taste. Makes 8oz or about 1 to 1-1/2 cups. X-3 measure amount needed......................................

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Line a colander with cheese cloth and place over a large pot in the sink.
  • Gently mix buttermilk and cream together in a 2-quart ceramic casserole dish.
  • Cook in the preheated oven for 2 hours and 15 minutes.
  • Pour buttermilk mixture into the prepared colander; drain for 45 to 60 minutes. Transfer drained cheese to a bowl and beat with an electric hand mixer until smooth and creamy. Store in the refrigerator.

  • 1. In Germany, quark is sold in small plastic tubs and usually comes in three different varieties, Magerquark (lean quark, virtually fat-free), "regular" quark (20% fat) and Sahnequark (creamy quark, 40% fat) with added cream. While Magerquark is often used for baking and as health food, e.g. as a breakfast spread, Sahnequark also forms the basis of a large number of quark desserts. Much like yoghurts in some parts of the world, these treats mostly come with fruit flavouring (Früchtequark, fruit quark), and are often also simply referred to as quark.
  • 2. Quark is a type of fresh cheese. It is made by warming soured milk until the desired degree of denaturation of milk proteins is met, and then strained. Dictionaries usually translate it as curd cheese or cottage cheese, although most commercial varieties of cottage cheese are made with rennet, whereas traditional quark is not. It is soft, white and unaged, similar to some types of fromage frais. It is distinct from ricotta because ricotta (Italian: "recooked") is made from scalded whey. It is quite similar to the Indian paneer.

  • Put on the lid, leaving it slightly cracked, and place the pot in a warm place in your home for 24-36 hours. Don't move the pot again. During this time the milk should thicken noticeably. Depending on the milk you used and the temperature in your home, the milk might have already thickened after 24 hours - or it might take slightly longer. In our case (our place is never that warm) it usually takes closer to 36 hours.
  • Once the milk mixture has thickened, place a strainer over a bowl and place a clean dishtowel into the strainer.
  • Now pour the thickened milk into the dishtowel and loosely tie the ends of the dishtowel together. You can use an elastic band for this, for example. The clear liquid should drip out of the dishtowel into the bowl. Let it sit like this for around 1.5 hours. If you want your quark to be "drier" you can even let it sit for longer. Depending on the size of your catchment bowl, you may have to empty the liquid every once in a while.

  • Put the milk in a large sterilized pot over medium heat. Slowly heat it to 77 F. Don't try and speed up this process or the milk will not set properly. Stir the milk gently with a sterilized stainless steel spoon to prevent scorching. Remove the pot from the heat.
  • Sprinkle the mesophilic culture evenly over the surface of the milk and let it sit for 5 minutes to rehydrate. Use a sterilized stainless steel skimmer, moving it in a gentle up-and-down motion to draw down and mix in the culture, avoiding breaking the surface of the milk. Dilute the rennet in 1/4 cup of cool, non-chlorinated water. Give the milk a gentle stir and while it's swirling, add the diluted rennet to the milk. Immediately stir the milk with the skimmer using the same up-and-down motion. Do this for about 2 minutes, making sure the rennet is thoroughly mixed throughout the milk, otherwise the milk will not set properly.Cover the pot and let it sit in a draft-free location at room temperature for 24 hours (wrap the pot in a large towel if needed).After 24 hours check the milk. Tip the pot carefully to drain off the whey on the surface.
  • If the milk is properly set it will have pulled away from the sides. Use a long, sterilized knife to check for a clean break in the thickened milk (see pics in blog post). If you can cut through it and get a clean break the milk is properly set. If it isn't, let it continue to sit and check again after 30 minutes. Repeat if needed. Use a long, sterilized knife to cut 2-inch-wide strips from top to bottom through the curd. Then follow the same process to cut 2-inch strips horizontally from side to side. Now that you've used a long knife to cut the curd vertically, next use the skimmer to cut the curd horizontally into cubes.
  • Place the curds in a colander lined with cheesecloth. Depending on the size of your colander you may need to work in batches. Let the curds drain for about 4 hours (it may be less depending on the mesh size of your cheesecloth). Let the curds drain until you get a thick, spreadable consistency. Transfer the finished quark to a bowl, give it several good stirs to break up any lumps, cover and refrigerate until ready to use. It will keep in the fridge for up to 2 weeks.
