SWEET AND SOUR EGGS

A dish really showing it's German origins from the Wisconsin Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Cooking time approximate, depending on how done you like your eggs.

Sweet and Sour Eggs image

Steps:

  • Melt butter in a skillet, add onion and cook slowly (do not brown).
  • Add flour and cook until golden; add water, cloves, and bay leaves and cook until smooth, stirring constantly.
  • Simmer 15 minutes longer.
  • Add vinegar salt and sugar and as soon as sauce comes to a rapid boil, add eggs one at a time.
  • Cover and cook until eggs are done as preferred.

1 tablespoon butter
1 small onion, peeled and minced
1 teaspoon flour
1/2 cup water
3 -4 cloves
2 bay leaves
2 tablespoons vinegar
1/4 teaspoon salt
1 tablespoon sugar
12 eggs

German Sweet & Sour Eggs Aka Suess-Sauer Eier image

Steps:

  • Heat the oil in a skillet and have ready a cup or two of hot water.
  • Whisk in the flour and cook until brown, stirring constantly--be careful not to burn the flour.
  • Add a small amount of hot water to the pan, whisking well, to create a sauce-like consistency, adding and whisking as needed.
  • Whisk together the vinegar and the sugar, then add as much or as little to the sauce as you like (taste and adjust if necessary).
  • Cook eggs however you like them (pan fried, hard boiled, etc) and serve with the sauce and some potatoes, if desired.

Steps:

  • Mix mayonnaise, sour cream, and lemon juice.
  • Add salt, pepper, and dill.
  • Mince one of the eggs very fine.
  • Mix into the mayonnaise mixture.
  • Blend the chives and parsley into the mayonnaise; mix well.
  • Cut hard boiled eggs in half.
  • Cover with herb mixture.

Thought I would share this simple, old-fashioned method for beautiful bright and shiny colored Easter eggs. My mother and German Oma made Easter Eggs this way, ever since I can remember. The eggs can be dyed with store-bought dyes or by boiling the eggs with natural substances such as onion skin, tea, beetroot juice, spinach, nettle roots and leaves, alder or oak bark. Vinegar added to the water makes the colors brighter, and rubbing with either bacon fat or salad oil produces a shine.

Steps:

  • When hardboiled colored eggs are completely cool and dry, rub them with bacon fat or a little vegetable oil, to produce a nice shine.
  • Arrange them in an attractive basket or platter lined with green Easter "grass".
  • Keep eggs cool until it's time for the Easter Egg Hunt.

12 hardboiled egg, colored (we dye them in mugs of boiling water with store-bought dye, with a little vinegar added to the water)
