Herbed Quinoa image

Steps:

  • For the quinoa: In a medium saucepan, add the chicken stock, lemon juice and quinoa. Bring to a boil over medium-high heat. Reduce the heat to a simmer, cover the pan and cook until all the liquid is absorbed, about 12 to 15 minutes.
  • For the dressing: In a small bowl, mix together the olive oil, lemon juice, basil, parsley, thyme, and lemon zest. Season with salt and pepper, to taste.
  • Pour the dressing over the quinoa and toss until all the ingredients are coated. Transfer the quinoa to a bowl. Season with salt and pepper, to taste, and serve.

2 3/4 cups low-sodium chicken stock
1/4 cup fresh lemon juice
1 1/2 cups quinoa
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice

Steps:

  • In a medium saucepan, heat the oil over medium heat. Add the shallot, tomatoes, peppers and red pepper flakes and cook, stirring often, until slightly softened and aromatic, about 4 minutes. Season with the salt and add the quinoa. Using a wooden spoon, stir to coat the quinoa in the oil. Add the chicken broth, stir and bring to a simmer. Reduce the heat to low, cover the pan and cook until the quinoa is tender and the liquid is absorbed, about 20 minutes. Stir in the spinach to wilt and serve drizzled with olive oil.

2 tablespoons extra-virgin olive oil, plus extra for drizzling

Simplest Quinoa and Pine Nut Pilaf image

Steps:

  • Place the quinoa in a fine sieve. Rinse under cold running water 1 full minute. Set aside to drain.
  • Bring the broth, salt and pepper to a boil in heavy, medium saucepan over medium-high heat. Stir in the quinoa. Cover, reduce the heat to medium-low and simmer until the quinoa is tender and all the broth is absorbed, about 15 minutes. Turn off the heat. Let the quinoa stand, still covered, for 10 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Scatter pine nuts on a small rimmed baking sheet. Toast the nuts until golden, stirring occasionally, about 5 minutes. Cool on the baking sheet.
  • Mix the cilantro and pine nuts into the quinoa.

Warm Quinoa

Steps:

  • Add the quinoa, unsweetened almond milk and salt to a small saucepan. Place over medium heat and bring to a low simmer. Simmer the mixture for 3 minutes. Spoon the "oatmeal" into 2 bowls and top with fruit, almonds, maple syrup and desired toppings. Serve warm.

2/3 cup unsweetened almond milk

Steps:

  • Heat oil in a saucepan over medium-high heat. Cook onion in oil for 5 minutes, or until translucent. Add carrot, and cook 3 minutes more. Stir in quinoa and vegetable broth, and bring to a boil. Reduce to a simmer, cover, and cook 15 to 20 minutes, or until quinoa is tender and fluffy.
  • In a bowl, toss quinoa together with walnuts and parsley. Serve hot or at room temperature.

  • Meanwhile, in a large, deep skillet, heat the oil until shimmering. Add the red pepper, shallots and a generous pinch each of salt and pepper. Cook over moderately high heat, stirring occasionally, until softened, 5 to 7 minutes. Add the quinoa and cook, stirring, until coated, about 2 minutes. Add the wine and cook until absorbed, about 2 minutes. Add the stock and bring to a boil. Cover the skillet and simmer over moderately low heat until the quinoa is tender and all of the stock is absorbed, 20 to 25 minutes. Remove from the heat and let stand for 15 minutes. Fluff the pilaf with a fork and fold in the arugula, basil and almonds. Season with salt and pepper and serve.
