PENNE WITH BUTTERNUT SQUASH AND GOAT CHEESE

Penne with Butternut Squash and Goat Cheese image

Steps:

  • Put an oven rack in the upper third of the oven. Preheat the oven to 425 degrees F.
  • Spray a baking sheet, liberally, with vegetable oil cooking spray. Set aside.
  • Mix the squash and onion together and arrange in a single layer on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper, to taste. Bake for to 40 to 45 minutes until the vegetables are golden and cooked through. Remove from the oven and set aside to cool slightly.
  • While the squash mixture is cooling, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 2 cups of the pasta water. Put the pasta, goat cheese and 1 cup of pasta water in a large serving bowl. Toss until the cheese has melted and forms a creamy sauce. Add the squash and onion mixture, the walnuts and the basil. Toss well and season with salt and pepper, to taste. Garnish with Parmesan and serve.

1 (2-pound) butternut or kabocha squash, peeled, seeded and cut into 3/4-inch cubes
1 onion, diced into 1/2-inch pieces

Cashew Candy Crunch Sundae image

Steps:

  • Spray inside of measuring cup with nonstick cooking spray. In a medium saucepan, over medium-high heat, add corn syrup, sugar, and salt. Cook on stove until the temperature reaches 310 degrees F. on a candy thermometer. Once the mixture reaches 310 degrees F, take off the stove; add the baking soda, cashews and butter, working quickly and stirring constantly.
  • The mixture should stay an opaque color. On a nonstick tray sprayed with nonstick cooking spray, pour in the mixture and spread with wooden spoon. Cool for 1 1/2 hours.
  • Place 2 scoops of vanilla ice cream on each dish and garnish with broken pieces of cashew crunch.

Gina's Toffee Blondies image

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 13- by 9-inch glass pan with parchment paper, leaving a 2-inch overhang and spray with nonstick spray.
  • Whisk flour and salt together in a small bowl and set aside.
  • In a large bowl, using a hand held mixer, cream butter and both sugars together until light and fluffy. Slowly add eggs, 1 at a time until thoroughly combined. Add milk, vanilla extract, and peanut butter and continue to mix. Incorporate dry mixture into wet mixture in 3 separate additions. Using a spatula, fold in chocolate covered toffee bits.
  • Pour batter into prepared pan. Bake in the center rack of the oven for 30 minutes. Remove when toothpick inserted in the center comes out clean. Transfer to a wire rack and allow to cool completely. When cool use cookie cutters to create fun shapes.

Steps:

  • In a medium saucepan, melt the butter over medium heat. Add the sugar, cream and salt and whisk until combined. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until smooth and thickened, 5 to 10 minutes. Remove from the heat and stir in the vanilla bean paste; the sauce will thicken as it cools.
  • Scoop vanilla ice cream on top of the blondies, then top with the butterscotch sauce, cashews and whipped cream.

Gina's Butterscotch Pudding Pots and Cashew Brittle image

Steps:

  • Whisk the first four ingredients together in a large bowl.
  • Melt the butter in a heavy-bottomed saucepan over medium heat. Stir in the brown sugar, and cook, stirring, until the sugar has melted into the butter.
  • Whisk in the half-and-half mixture, and bring to a boil. Reduce the heat, and simmer, whisking constantly, until the pudding thickens, about 4 to 5 minutes. Strain the pudding into a large measuring cup, and then divide evenly into eight 4-ounce ramekins. Let cool, then chill in the refrigerator to set for at least 2 hours.
  • Serve with Gina's favorite cashew brittle (recipe follows).
  • CASHEW BRITTLE
  • Line a nonstick sheet pan with parchment or a silicone mat, and set aside.
  • Heat the corn syrup, sugar, and salt in a medium saucepan set over medium-high heat. Cook until the temperature reaches 310 degrees F on a candy thermometer. Once the mixture reaches 310 degrees F, remove from the stove; quickly add the baking soda, cashews, and butter, and keep stirring constantly. The mixture will stay opaque.
  • Carefully pour the hot mixture onto the mat-or parchment-covered sheet pan, and spread across the pan with wooden spoon. Cool for 1 1/2 hours. Break into 2-inch pieces.
  • NOTE
  • A silicone mat works best to avoid a sticky clean-up; do not use waxed paper, which will melt and stick under the heat of the candy.

4 cups half-and-half
6 tablespoons cornstarch
1 tablespoon pure vanilla extract

Grilled Pineapple Butterscotch Sundaes image

Steps:

  • 1. Peel, core and cut each pineapple into 6 spears.
  • 2. In a small saucepan, melt 6 Tbsp butter with sugar and nutmeg. Brush over pineapple.
  • 3. Grill, covered, over medium heat or broil 4 inches from the heat for 7-10 minutes or until lightly browned, turning occasionally.
  • 4. For sauce, in a small saucepan, melt remaining butter. Stir in brown sugar and cream. Bring to a boil, stirring constantly. Remove from the heat; stir in vanilla and salt. Serve sauce with ice cream and grilled pineapple

Grilled Pineapple Butterscotch Sundaes image

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Heat 6 tablespoons butter, white sugar, and nutmeg in a saucepan over medium heat, stirring until sugar is dissolved, about 5 minutes. Brush pineapple spears with butter mixture.
  • Arrange pineapple on preheated grill and cover; grill until lightly browned, turning occasionally, 7 to 10 minutes. Transfer pineapple to a platter.
