CHILLI GINGER LAMB CHOPS

Marinate your chops with ginger, lemon, chilli and cumin then chargrill until juicy in the middle

Chilli ginger lamb chops image

Steps:

  • Put the garlic in a bowl with the ginger, lemon juice, oil, spices and seasoning. Blitz with a hand blender until smooth, then use to coat the lamb chops on both sides. Leave to marinate in the fridge for a couple of hours or overnight.
  • Heat a barbecue until hot. Barbecue the chops over the coals for 3 mins on each side until cooked but still pink and juicy in the centre.

Steps:

  • 1. preheat broiler then mix all ingredients except chops in small mixing bowl.
  • 2. brush chops with mustard mixture place chops on greased or (nonstick olive oil) broiler pan
  • 3. broil 6 to 7 minutes, turn and brush other side and broil another 6 to 7 minutes. this takes about a total of 16 minutes depending on chop size. I broiled them one more minute each side and had put broth and water in underneath of broiler pan. they came out moist and tender and flavorful
  • 4. put a teaspoon of mint jelly on top of each chop while still hot or put mint jelly on side for dipping

2 Tbsp salad oil
1 1/2 tsp ground ginger
1/4 tsp garlic powder
1/2 tsp salt
2 Tbsp dijon style mustard
1 tsp dried thyme leaves
1 tsp pepper

GINGER LAMB CHOPS

I love lamb chops and thought I would try something different from the usual Mint - For my taste this was simply delicious. If you haven't tried lamb "pink" do try it, once you have you will never go back to overcooked lamb!. Score the fat on the outside edges of the chops before frying.

Ginger Lamb Chops image

Steps:

  • Season the chops with salt& pepper.
  • Lightly spray a skillet and brown the chops on both sides over high heat (apprx 1 minute each side).
  • Add Marsala wine.
  • Spoon the marmalade over the chops.
  • Cover and finish cooking.
  • The time depends on the thickness of the chop and how well done you like them.
  • Medium/pink is apprx 3minutes per side.

6 lamb loin chops (at least 1/2" thick)
salt and pepper, to paste

Steps:

  • In a food processor fitted with a metal blade add the garlic, rosemary, thyme, cayenne, and salt. Pulse until combined. Pour in olive oil and pulse into a paste. Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator. Remove from refrigerator and allow the chops to come to room temperature; it will take about 20 minutes.
  • Heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another 3 minutes for medium-rare and 3 1/2 minutes for medium.

Steps:

  • Turn on broiler, if using. Line pan with aluminum foil.
  • Wash and dry chops; trim all excess fat.
  • Prepare stove-top grill, if using.
  • If grilling, cook chops on one side until brown. Turn over, and spread some of preserves on browned top. Continue cooking to brown chop on second side, about 7 minutes for medium rare. Turn chops once more, spread with remaining preserves and serve. If broiling, brown chops on each side, and spread each side with preserves when finished cooking.

Steps:

  • Put the lamb and all the first marinade ingredients in a bowl and mix well. Chill for at least 2 hrs, and up to 4 hrs.
  • Blend all the second marinade ingredients together. Remove the lamb from the first marinade and put it in a clean bowl. Add the second marinade and rub it into the lamb, then chill for a further 4 hrs, or overnight.
  • Light a barbecue with a lid, then barbecue the chops on a high heat until cooked to medium (around 8 mins), making sure the meat isn't directly on the flame to avoid burning the spices. The key is to keep the lid on so the temperature is consistent. Or cook in the oven on a baking tray for 12 mins, and finish off under the grill for 2 mins to crisp them up. Serve with lime wedges for squeezing over and green chutney on the side (see our recipe).

Lamb Chops With Brussels Sprouts, Red Peppers and Ginger image

Steps:

  • Bring a large pot of water to a boil. Add the brussels sprouts and blanch for 5 minutes. Drain and cut sprouts in half. Set aside. Heat a large nonstick skillet over medium heat. Add the chops to the skillet, in batches if necessary, and cook until medium-rare, about 1 minute each side. Remove the chops from the skillet and keep warm.
  • Pour the fat from the skillet and discard. Add the olive oil to the skillet. Add the shallots and cook until they begin to brown, about 30 seconds. Add the ginger and garlic and cook, stirring constantly, for 15 seconds. Add the brussels sprouts and bell peppers and cook until crisp-tender, about 2 minutes. Season with salt and pepper. Season the lamb chops with salt and pepper to taste and divide among 4 plates. Top with the brussels sprout mixture and serve immediately.
