LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

AMISH DRY LIME GELATIN SALAD / DESSERT (JELLO)
Found on www.AmishDining.com. A recipe seldom gets any easier than this one. Kids could make this with just a bit of supervision. My mother used to make something like this that had these same ingredients. This is much like her's, and since she was not a dessert maker, I am sure she would have opted for a simple recipe. Other flavors of gelatin work too, like Cherry and Strawberry which are perfect for Valentine's Day. NOTE: Times do not include the 2-3 hours for chilling time. Servings are approximate.

GINGER PINEAPPLE JELLO MOLD
This is lovely with a nice ham dinner. Don't use fresh pineapple or fresh ginger - the enzymes will prevent the gelatin from setting. And for a summer variation: I added one heaping cup of blueberries to the mix when I added the pineapple (left out the ground ginger), yummy! **and ingredients/directions slightly changed to address the consistency issue mentioned by reviewer - it should set better in a mold now!

- Drain pineapple, reserving juice in a measuring cup.
- Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
- Add ginger ale to the reserved pineapple juice making about 1 to 1 1/4 cup of liquid. Stir the ground ginger into this liquid.
- Stir the reserved pineapple juice, ginger ale & ginger into the jello.
- Refrigerate about 1 1/4 hours or until slightly thickened (consistency of unbeaten egg whites).
- Stir in pineapple (& blueberries if doing summer variation!). Pour into a 5-cup mold.
- Refrigerate 4 hours or until firm. Unmold.
