SHINY COOKIE ICING
Shiny icing my mom loves to put on shaped sugar cookies. We decorate cookies around Halloween and Christmas; it's a great family tradition! Color the frosting with food coloring to your desired shade.

POURED COOKIE ICING
This recipe is from Wilton.com. This icing dries to a shiny, hard finish. Great to use for icing or to outline and fill cookies with cake tip number 2 or 3. I used this on sugar cookie cutouts, and it worked great. You can add food coloring to it if you want different colors. Easy to write on cookies with.

GLOSSY ROYAL ICING
I received this recipe from a professional baker. I prefer to use this instead of a regular royal icing recipe with egg whites. It hardens nicely and is glossy rather than matte like regular royal icing. Use almond, orange, or lemon extract, whatever you prefer.

GLACE ICING - SHINY, SEMI - HARD ICING FOR COOKIES
This recipe comes from the book Creative Cookies by Toba Garrett. It is a delicious icing that dries shiny and semi-hard. So you can easily stack your cookies but not break a tooth when you bite them.

Steps:
- In mixing bowl, thoroughly mix sugar and milk with a hand mixer. The icing should be very soft and have a heavy cream texture.
- Add corn syrup and mix until just combined.
- Divide icing into several bowls and color using concentrated pastes for the best results. Cover each bowl with plastic wrap until ready to use.
- Note: The icing will last for up to 2 weeks in the fridge. Put plastic wrap directly over the icing and seal the bowl with a tight fitting lid. When ready to use, stir the icing until it has a flow consistency. Can be made with water instead of milk. Without milk it will last for 3 weeks in the fridge. You do not need to refrigerate decorated cookies. I also guesstimated the yield.
BASIC GLAZE ICING
Steps:
- Put the sugar in an electric mixer fitted with the paddle attachment. With the mixer on the lowest speed, slowly add the water, the corn syrup and vanilla extract. When the sugar is sufficiently moistened (it won't fly out of the mixer), raise the speed to high, and beat for 2 minutes until completely smooth and glossy.
- Divide and color, as desired. Store at room temperature, covered with plastic wrap directly on the surface of the icing, to prevent forming a skin.
- For cupcakes: Dip the surface of the cupcakes into the icing, allowing excess to drip into bowl. Clean any excess from the sides. Alternately, use a knife or a spreader to apply. Whisk as needed to keep icing glossy and smooth while using.
- For Light Blue Icing: Combine 2 to 3 drops of blue food coloring to 1 cup of Basic Glaze Icing.
- For Deep Yellow Icing: Combine 4 to 5 drops of yellow food coloring to 1 cup of Basic Glaze Icing.
- For Purple Icing: Combine 4 drops of red and 5 drops of blue food coloring to 1 cup of Basic Glaze Icing.

CREAM CHEESE FROSTING / ICING FOR COOKIES
This frosting dries (although it takes a few hours) so that you can easily stack the frosted cookies for transport. It is perfect for carrot cake cookies! I frosted about 3 dozen cookies, and had some leftover.

Steps:
- Soften cream cheese for a few seconds in microwave if necessary. Heat cream, butter, and cream cheese in a small pot, just until the butter and cream cheese melt into the cream. (Stir frequently to avoid burning.).
- Remove the pot from the stove, and stir in the 3 cups of powdered sugar. You will have a goopy mess. Beat it with your electric mixer, until it changes color slightly (3-4 minutes.)
- Spoon, paint, or spread it on your cooled cookies. It will still be pretty thin and goopy, but it should spread in a nice, even coat. (I used the back of my spoon to spread it.)
- Let the icing 'set' for 1 1/2 - 2 hours, until it hardens. It won't harden completely, but it will form a nice soft frosting layer that squishes only slightly when pressed, similar to a slice of cheese.
- I modified a regular icing recipe to make this, and was very disappointed with the results at first, but after I left the cookies on the counter for two hours, I was glad I saved them. The icing is perfect for transporting, and has a very good flavor, just right for carrot cake cookies.

- In a medium bowl, sift confectioners sugar and then combine with light corn syrup, milk or water, and clear extract flavoring. Stir until smooth and the icing has reached your desired consistency.
- For flooding and dipping, use a consistency that sticks well to your spoon and icing 'drops' off slowly.
- For a light glaze that is somewhat transparent, use a consistency that runs off slowly from your spoon but also leaves a good clear coating on the spoon.

- In a medium-sized mixing bowl, whisk together the meringue powder, salt, and confectioners' sugar.
- The mixture will seem hard and lumpy, but the sugar will dissolve after 4 or 5 minutes and everything will smooth out., Add more water, 1 tablespoon at a time, mixing well after each addition to achieve a spreadable consistency.
- For a very smooth, shiny glaze, the icing should be the consistency of corn syrup or molasses., To use, dip the tops of cooled cookies in the glaze, then sweep a spatula over them to remove the excess.
