Steps:
- Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
- Preheat the oven to 325 degrees F.
- Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
- Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another). Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
- Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
- Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
- Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!

BAKED HAM WITH GLAZE
This is a favorite on Easter. Everyone kept going back until the ham was gone. They loved this glaze which, by the way, I got from a church member.

GLAZED SPIRAL-SLICED HAM(ATK)
You can bypass the 90-minute soaking time, but the heating time will increase to 18 to 20 minutes per pound for a cold ham. If there is a tear or hole in the ham's inner covering, wrap it in several layers of plastic wrap before soaking it in hot water. Instead of using the plastic oven bag, the ham may be placed cut-side down in the roasting pan and covered tightly with foil, but you will need to add 3 to 4 minutes per pound to the heating time. If using an oven bag, be sure to cut slits in the bag so it does not burst. We've included two optional glazes.

Steps:
- Leaving ham's inner plastic or foil covering intact, place ham in large container and cover with hot tap water; set aside for 45 minutes. Drain and cover again with hot tap water; set aside for another 45 minutes.
- Adjust oven rack to lowest position and heat oven to 250 degrees. Unwrap ham; remove and discard plastic disk covering bone. Place ham in oven bag. Gather top of bag tightly so bag fits snugly around ham, tie bag, and trim excess plastic. Set ham cut-side down in large roasting pan and cut 4 slits in top of bag with paring knife.
- Bake ham until center registers 100 degrees on instant-read thermometer, 1 to 1 1/2 hours (about 10 minutes per pound).
- Remove ham from oven and increase oven temperature to 350 degrees. Cut open oven bag and roll back sides to expose ham. Brush ham with one-third of glaze and return to oven until glaze becomes sticky, about 10 minutes (if glaze is too thick to brush, return to heat to loosen).
- Remove ham from oven, transfer to cutting board, and brush entire ham with another third of glaze. Let ham rest, loosely tented with foil, for 15 minutes. While ham rests, heat remaining third of glaze with 4 to 6 tablespoons of ham juices until it forms thick but fluid sauce. Carve and serve ham, passing sauce at table.
- To Make Maple-Orange Glaze: Combine all ingredients in small saucepan. Cook over medium heat, stirring occasionally, until mixture is thick, syrupy, and reduced to 1 cup, 5 to 10 minutes; set aside.
- To Make Cherry-Port Glaze: Simmer port in small saucepan over medium heat until reduced to 2 tablespoons, about 5 minutes. Add remaining ingredients and cook, stirring occasionally, until sugar dissolves and mixture is thick, syrupy, and reduced to 1 cup, 5 to 10 minutes; set aside.
- Step-by-Step: How to Keep a Ham Moist.
- A big ham can take hours to heat through in the oven, by which time the meat becomes very dry. We found two tricks for reducing oven time and increasing moisture retention. Wrapping: Cooking the ham in an oven bag reduces the oven time by another half hour or so. Soaking: Placing the wrapped ham in warm water for 90 minutes raises its internal temperature and decreases the cooking time by over an hour.

Steps:
- Here's a recipe that uses a cooking bag in the crockpot: Remove the ham from the can and rinse off the extra gelatin that clings to the meat. Place the ham inside a plastic cooking bag. Spread the top of the ham with a mixture of marmalade and mustard. Seal the bag with a twist-tie. Poke 4 holes in the top of the bag and place it in the crockpot. Cover and cook on LOW for 6 to 8 hours. Serve the ham with the sauce.

- Best ham for Glazed Ham. My economical pick for 2019: $9/kg ($4.50/lb) Smoked Half Leg of Ham from Woolworths (Australia) is excellent value. I’ve used it twice already this year, and I’ve used it many times in previous years – always a winner!
- How much ham to buy. How much ham to buy: With at least one other main dish plus sides – 6 to 8 people per 1 kg / 2 lb ham (bone in weight). So a 5 kg / 10 lb ham = 30 – 40 people, about 100 – 130g / 3.4 – 4 oz per person.
- How to peel the rind (skin) off ham. Top Tip: Just remove the rind and leave as much of the fat on as you can. Fat = sticky glaze! This part is easy – the skin WANTS to come off!
- Score fat. TIP: Just score lightly about 75% of the way through the fat. If you cut all the way through to the ham meat, some of the diamonds might loosen and fall off.
- Make ham glaze. Make your ham glaze – it’s dead easy, just mix! Here are my two favourites: Maple Ham Glaze – my favourite, simple but extra special from the maple!
- How to glaze ham. TIP: Glaze ALOT after it comes out of the oven! This is when you can really get that deep golden colour and thick glaze. The glazing part is no different to brushing and basting anything that’s marinated!
- How to bake Glazed Ham. This is the easiest part – if you follow a few very simple Nagi Ham Rules that make all the difference! Level the surface – this will ensure your ham caramelises more evenly.
- How long to cook glazed ham. A glazed ham will take 1.5 – 2 hours at 160C/320F for the surface to become gorgeously sticky and caramelised, and for the middle of the ham to come to a high enough temperature to be safe to eat.
- How to avoid burnt bits. One problem that many people run into is uneven caramelisation of the ham. Some parts brown faster than others, so you end up with burnt bits or under caramelised bits.
- What sauce to serve with ham. The glaze is everybody’s favourite part…. and there’s just not enough to go around! So some years ago, I started using the pan drippings as the sauce to serve with the ham – and it’s been a huge hit!
