This makes a lot of burgers. One of my family's favorite takes on a burger. Served with provolone and marinara, it is delish!

SPINACH AND FETA TURKEY BURGERS
These are a big hit in the summertime when everyone is tired of the same old hamburgers and hot dogs. Serve with or without buns and your favorite condiments. I like to serve these with lettuce, tomato, and Tzatziki sauce (you can find recipes for that on this site as well).

EASY GLUTEN-FREE TURKEY BURGERS
The great thing about homemade burgers is that they can easily be modified accordingly, and these turkey burgers are great for those who are gluten-intolerant, follow a gluten-free diet, or simply wish to avoid bread crumbs in their mixture without sacrificing taste or texture (like me).

Steps:
- In a large mixing bowl, use your hands to combine well the turkey meat with the spinach, olives, lemon zest, onion, mint or parsley, garlic, oregano, salt, and pepper. But don't overmix or the meat with become tough. Divide the mixture into 6 equal portions and shape them into burgers.
- Warm about a tablespoon of olive oil or ghee in a large skillet set over medium-high heat. Working in batches, add the burger patties and fry them on one side for about 5 minutes, then flip them, frying on the second side for another 4 to 5 minutes, or until they're golden brown.
- If you like, serve each burger on a large piece of butter lettuce and top them with any of the optional ingredients.
TURKEY SPINACH BURGERS
A completely different take for the grill. Try seasoned feta for even more Greek Isle flavor. Be sure to squeeze as much water as possible from the spinach so the burgers will stick together well. You might also consider shaping these into half-circles and serving in split pitas. Yum!

TOFU SPINACH BURGERS
One more from "The Whole Soy Cookbook". As there are no binding ingredients, these may fall apart easily. For this reason, using the food processor for quick, thorough mixing is recommended.

- Heat up a cast iron grill pan or heavy bottomed pan to medium heat and brush it with a little bit of olive oil. Once the pan is hot, add the burgers in an even layer. I was able to fit all four of the burgers nicely in my 10-inch pan but if you cannot fit all of them then just cook them in batches. Cook the burgers for 3-4 minutes on each side until the internal temperature reaches 165 degrees F. You can use a meat thermometer to check the temperature of the meat if you have one.
- . Place some lettuce onto a bun, add the burger and top it with some mushed avocado, salsa and slices of red onion.
