GOBBLE UP STUFFED PEPPERS
I love stuffed peppers but I wanted to make it with out red meat and no green peppers. I came up with this recipe with ground turkey with some other ingredients in yellow, orange, and red peppers. Steps:
- 1. Little olive oil in frying pan to brown the ground turkey. Pepper as desired to taste.
- 2. Bring two cups water to a rolling boil. Put the 1 cup of long grain rice into the water, stir. Lower the temp on the stove to simmer, cover the pot and let sit 20 min until the rice is tender.
- 3. Wash the peppers with cool water to clean and freshen up. Cut off the stem portion of the peppers. Disguard the top and clean out the seeds and pepper membrain. Line a 8x8 pan with aluminum foil. Place the peppers into the lined pan with the open end up.
- 4. Put the cooked rice and browned turkey into a large bowl. Add the salsa, V8 spicy tomato juice, black pepper, fire roasted spicy pepper pesto, panko crumbs,worchestershire sauce and the one can of tomatoes, okra and corn to the bowl. Also add 3/4 cup of the hot pepper jack cheese.
- 5. Use a micro planer to grate the two garlic cloves over the bowl of ingredients. You will have to turn over the planer and scrap the garlic off into the bowl.
- 6. This will be a healthy amount of ingredients. Stuff the peppers generously mounding the tops. I will sprinkle a little Worchestershire sauce over each of the peppers centers.
- 7. Bake 350 for 1 hour. Remove from the oven and sprinkle the remaining 1/4 cup of Hot pepper jack cheese over the top of the peppers. Serve.
- 8. I reserve the remainder of the ingredients in the bowl for tacos. Just add more salsa to the mix. Stuff the taco shell, warm up in the microwave and serve.
- 9. This recipe will do two meals, Gooble Up Stuffed Peppers and Tacos the next day. Can freeze the ingredients to do the Tacos later. Enjoy!
LIGHTENED-UP STUFFED PEPPERS

- Preheat the oven to 400 degrees F. Cut the tops off each pepper, reserve them and hollow out the insides of the peppers of any seeds and seed walls. Sprinkle the insides with a pinch salt and a pinch pepper and set aside.
- Heat 1 teaspoon of the oil in a large nonstick skillet over medium heat and add the garlic and onions. Cook until softened, 3 minutes, and then add the beef, oregano, cinnamon and cumin. Cook, breaking up the meat with a wooden spoon, until no longer pink. Stir in 1 tablespoon of the tomato paste until it coats the meat and is slightly darkened. Stir in the broth, rice and lentils. Remove from the heat and set aside until the liquid is absorbed and the mixture is cooled slightly. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Divide the filling among the peppers and place the tops back on. Set the peppers upright in a small baking dish, such as an 8-inch square baking dish. Whisk 1 1/2 cups water with the remaining tablespoon of tomato paste and olive oil. Pour into the dish around the peppers. Cover tightly with foil and bake until the peppers are tender and the rice and lentils are cooked through, about 1 hour 15 minutes.
- Carefully transfer the peppers to a serving dish and pour the cooking liquid into a medium nonstick skillet. Boil over high heat until the sauce is thickened and reduced to about 1/2 cup. Remove from the heat and add the dill. Season with salt and pepper. Serve the sauce with the stuffed peppers.

- Heat oven to 350°F.
- Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight. In 4-quart Dutch oven, add enough water to cover peppers. Heat to boiling; add peppers. Cook about 2 minutes; drain.
- In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in rice, salt, garlic and 1 cup of the tomato sauce; cook until hot.
- Stuff peppers with beef mixture. Stand peppers upright in ungreased 8-inch square glass baking dish. Pour remaining tomato sauce over peppers.
- Cover tightly with foil. Bake 10 minutes. Uncover and bake about 15 minutes longer or until peppers are tender. Sprinkle with cheese.

- Preheat oven to 350 degrees F (175 degrees C).
- Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, cook the beef until evenly browned.
- Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.)
- In a bowl, mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Break ground beef into pieces and add to skillet; cook and stir until about half of the beef is browned, 3 to 5 minutes. Stir red bell pepper, orange bell pepper, and green bell pepper into the beef; continue to cook and stir until the beef is entirely browned, about 5 minutes more. Drain and discard grease.
- Mix tomato sauce and brown sugar together in a bowl; pour over the beef mixture. Stir rice into the beef mixture and stir; transfer to a 9x13-inch baking dish. Sprinkle Cheddar cheese over the mixture.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
- In a medium saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and simmer for 20 minutes. Remove from heat, and set aside.
- Place the peppers cut-side down on the prepared baking sheet. Roast 25 to 30 minutes in the preheated oven, or until tender and skin starts to brown.
- While the peppers are roasting, heat oil in a medium skillet over medium-high heat. Cook the onions, basil, Italian seasoning, salt, and pepper in oil for 2 to 3 minutes. - Cut tops off peppers and discard; remove seeds. In a large saucepan, cook peppers in boiling water for 5 minutes.
