ADDICTIVE PEANUT BUTTER CAKE

My son-in-law remembered his grandmothers peanut butter cake from long ago. One of her daughters shared this very special recipe with me.

Steps:

  • Cake: cream butter& sugar, add peanut butter, cream well and add eggs one at a time.
  • Add combined dry ingredients alternately with buttermilk, beginning and ending with dry ingredients.
  • Grease and flour 3 9" cake pans and bake at 350 degrees for 20 to 25 minutes.
  • Icing: Bring sugar and milk to a boil, boil about 7 minutes.
  • Add peanut butter, butter and vanilla& beat until spreading consistency.

1 cup butter
1 1/2 cups sugar
1 cup creamy peanut butter or 1 cup crunchy peanut butter (your preference)
3 eggs
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
2 teaspoons baking soda
2 cups buttermilk
2 cups sugar
1 cup milk
1 1/2 cups creamy peanut butter or 1 1/2 cups crunchy peanut butter (your preference)
2 tablespoons butter
1 teaspoon vanilla

GOLD RUSH SAUCE (FRENCH'S MUSTARD RECIPE)

This recipe came from an old French's mustard booklet. My mom used to make it and put on everything from grilled steaks and burgers to chicken, even on corn, vegetables, and burger buns. Nothing says summer grilling is here to me than some of this on the first steak of the season! We jazz it up sometimes changing type of mustard, as well as changing the the dry ingredients, but the original is GREAT!

Steps:

  • Allow butter to come to room temperature.This time is not included in prep time.
  • Combine all other ingredients; add gradually to butter mixing throughly.
  • Grill steaks or hamburgers on one side, turn, spread cooked side with butter mixture.
  • When other side is cooked, spread with mixture.
  • Store in refrigerator.

Crunchy-Topped Peanut Butter Cake image

Steps:

  • Heat oven to 325°F. Grease bottom and side of 12-cup fluted tube cake pan with shortening; lightly flour. Sprinkle nuts evenly in bottom of pan. In medium bowl, mix flour, sugar, baking powder and salt; set aside. In large bowl, beat 1/2 cup butter and 3/4 cup peanut butter with electric mixer on medium speed until smooth, scraping bowl occasionally. Beat in eggs. On low speed, beat in milk and vanilla. Beat in flour mixture just until blended, scraping bowl occasionally. Spread in pan.
  • Bake 55 to 65 minutes or toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 2 hours.
  • In 1-quart saucepan, heat chocolate chips, 2 tablespoons butter and corn syrup over low heat, stirring frequently, until chocolate chips are melted. Cool about 10 minutes. Stir in hot water, 1 teaspoon at a time, until glaze is smooth and has the consistency of thick syrup. Spoon over top of cake, allowing glaze to run down side.
  • In small microwavable bowl, microwave 3 tablespoons peanut butter on High 20 seconds or until it can be stirred smooth and is drizzling consistency. Drizzle over top of chocolate glaze.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Whisk flour, white sugar, and baking soda together in a bowl. Beat 1/2 cup milk, eggs, and 1 teaspoon vanilla extract into flour mixture using an electric mixer on low until smooth.
  • Cook and stir water, 1/2 cup butter, vegetable oil, and 1/2 cup peanut butter together in a saucepan over medium heat until smooth, about 5 minutes. Stir peanut butter mixture into flour mixture until batter is well mixed; pour onto the prepared baking sheet.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 20 minutes.
  • Melt 1/2 cup butter and 1/2 cup peanut butter together in a saucepan over medium heat until smooth; add 1/3 cup milk and 1 teaspoon vanilla extract. Whisk confectioners' sugar into mixture until icing is smooth, 3 to 5 minutes. Pour icing over warm cake.

  • In a medium bowl, sift the flour, baking powder, baking soda and salt. Set aside.In a large mixing bowl, add the peanut butter, oil, and brown sugar. Beat until combined and creamy. Add the eggs and vanilla extract and beat just until combined.Alternately add the flour and buttermilk to the wet mixture, beating just until combined. Be careful not to over-beat or the cake will be dense and dry. A few small lumps of flour is fine.
  • Grease a 9X3 inch round baking pan (I use Magic Line pans). Pour the batter into the pan.Bake for about 30 minutes or until a toothpick inserted into the middle of the cake comes out moist (not wet with batter but moist. If the toothpick is dry, the cake is over-baked and will be dry). Let the cake sit in the pan for 5 minutes, then invert the cake onto a wire rack to cool completely.
  • To Make the Frosting: In the meantime place the peanut butter and butter in a large mixing bowl. Beat until smooth and creamy. Add the powdered sugar one cup at a time, continuing to beat. Add the heavy cream until you reach a spreadable consistency. (Note: This is a fairly stiff frosting.)Cut the cooled cake in half horizontally. Frost the bottom half of the cake and down the sides. Place the top layer of the cake, upside down, on top of the bottom layer. Frost the top layer and down the sides.
