Steps:

  • Heat the chicken broth in a heavy medium saucepan. Add the chanterelles, butter, and salt and allow to come to a boil. Stir in the flour, mixing constantly until the mixture is smooth and almost leaves the sides of the pan. Remove from the heat. Beat one egg at a time into the mixture. Drop tablespoons of the dough onto a buttered cookie sheet, spacing the spoonfuls about 2 inches apart. Bake in a preheated 450º oven for 15 minutes or until firm and golden. Cool the puffs on a rack.

Steps:

  • Heat oil (2 to 3-inches) to 375°F in deep fryer or 3-qt. saucepan.
  • Mix flour, 1/4 cup sugar, baking powder, salt and nutmeg.
  • Add 1/4 cup oil, milk and egg; beat until smooth.
  • Drop batter by teaspoonfuls into hot oil.
  • Fry four or five at a time until golden brown on both sides, about 3 minutes; drain.
  • Mix 1/2 cup sugar and the1 teaspoon cinnamon.
  • Roll warm puffs in sugar-cinnamon mixture.

Steps:

  • Cut the base of the stems of the chanterelles. If the mushrooms are very gritty, rinse them quickly under cold running water and pat them dry. Otherwise, clean them carefully with a soft paint or pastry brush. Cut the large mushrooms into bite-size pieces; leave the smaller ones whole.
  • Heat the butter in a frying pan. Add the chanterelles and saute for two to three minutes or until they start to become soft. Add the wine and when it has evaporated, add the chicken stock. Cook over high heat until it has almost evaporated. Season to taste with salt and pepper and sprinkle with parsley, thyme or chives.
