Mussels With Potatoes and Olives image

Steps:

  • Put the potatoes in a large microwave-safe bowl and cover with water by about 1/4 inch. Cover with plastic wrap and microwave until just tender, about 6 minutes; drain.
  • Meanwhile, heat the olive oil in a large Dutch oven or wide pot over medium-high heat. Add the onion and garlic and cook until soft and golden brown, 5 to 6 minutes. Add the potatoes, paprika, allspice, cayenne and 1 1/2 teaspoons salt; stir until the potatoes are coated with the spices and begin to soften, 2 to 3 minutes. Stir in 1 cup water and the tomatoes, scraping up any browned bits from the bottom of the pot. Bring to a simmer, cover and cook until the potatoes are tender, about 10 minutes.
  • Stir in the mussels, olives and parsley. Cover and cook until the mussels open, 4 to 5 minutes. (Discard any that do not open.)

Steps:

  • Heat the oil in a Dutch oven or stockpot, add the onions, potatoes, fennel, salt, and pepper, and saute over medium-low heat for 15 minutes, until the onions begin to brown. Add the wine and scrape up the brown bits with a wooden spoon. Add the tomatoes with their juices, stock, garlic, and saffron to the pot, bring to a boil, then lower the heat and simmer uncovered for 15 minutes, until the potatoes are tender. Add the shrimp, fish, and mussels, bring to a boil, then lower the heat, cover, and cook for 5 minutes. Turn off the heat and allow the pot to sit covered for another 5 minutes. The fish and shrimp should be cooked and the mussels opened. Discard any mussels that don't open. Stir in the Pernod, orange zest, and salt, to taste. Serve ladled over 1 or 2 slices of toasted baguette.;
  • Warm the oil in the pan over medium heat. Add the shrimp shells, onions, carrots, and celery over medium heat for 15 minutes, until lightly browned. Add the garlic and cook 2 more minutes. Add 1 1¿2 quarts of water, the white wine, tomato paste, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 1 hour. Strain through a sieve, pressing the solids. You should have approximately 1 quart of stock. If not, you can make up the difference with water or white wine.

Steps:

  • Heat oil in heavy large saucepan over medium heat. Add onions and garlic; sauté until soft, about 7 minutes. Add potatoes, tomatoes and carrot. Reduce heat; simmer until thick, stirring often, about 12 minutes. Add water and parsley. Bring to simmer. Cover; cook until potatoes are tender, about 15 minutes. Season with salt and pepper.
  • Add mussels. Cover; simmer until mussels open, about 5 minutes. Discard any that do not open.

Artichoke Stew with Mussels, Potatoes and Saffron image

Steps:

  • Squeeze juice from 2 lemon halves into large bowl; add lemon halves. Fill bowl with water. Cut stem off 1 artichoke. Starting at base, bend leaves back and snap off where they break naturally; continue until all tough outer leaves have been removed, leaving cone of tender pale green leaves. Using small sharp knife, trim outside edge of base until smooth and no dark green areas remain. Rub trimmed edge with 1 of remaining lemon halves. Cut artichoke lengthwise into quarters. Rub cut sides of quarters with lemon. Using small knife, cut out choke and small purple-tipped leaves from 1 quarter. Rub cut areas with lemon. Trim top leaves, leaving artichoke quarter about 2 inches long. Cut quarter into 2 wedges. Place wedges into lemon water. Repeat with remaining artichokes.
  • Bring remaining ingredients to boil in heavy large pot (do not use aluminum or cast iron). Drain artichokes; add to pot. Return to boil. Reduce heat to medium-low; simmer until artichokes are tender, about 20 minutes. Using slotted spoon, transfer artichokes to medium bowl. Reserve 1 cup cooking liquid in small bowl.
  • Place potatoes, salt, bay leaf, 1/2 teaspoon mustard seeds and celery seeds in large saucepan. Pour in enough cold water to cover potatoes generously. Boil until potatoes are tender, about 20 minutes. Drain. Cool 15 minutes; peel.
  • Stir saffron in heavy large in heavy large pot over medium-low heat until fragrant, about 2 minutes. Add reserved 1 cup cooking liquid; bring to simmer. Add artichokes, potatoes, mussels, shallots, butter and 3/4 teaspoon mustard seeds. Bring to boil. Cover pot; cook until mussels open and potatoes are golden, about 8 minutes. (Discard any unopened mussels.) Mix in green onions. Season with salt and pepper.
  • Divide stew among 6 shallow soup bowls. Sprinkle with chives and serve.

  • Clean the mussels: Inspect each mussel, discarding any that have opened (if some are partially opened, tap them with your finger and if they close back up they are OK) or have cracked shells. Wash the mussels, swishing them in a bowlful of water and scrubbing if necessary before thoroughly rinsing. Remove the beards no more than an hour before cooking. Set aside.
  • In a heavy, straight-sided, lidded frying pan or casserole, heat 1 tablespoon olive oil over medium heat and add the sausage. Cook, stirring until it begins to brown and release fat, then stir in the potatoes. Reduce the heat slightly, cover and cook until the potatoes are lightly browned and tender, stirring often, 10 to 15 minutes. Season with ½ teaspoon salt and several grinds of pepper, or to taste. Remove from heat and transfer the mixture to a bowl. Set aside.
  • Heat the remaining olive oil in the pan over medium heat. Add the onion and cook, stirring and scraping the bottom of the pan, until the onion begins to soften, about 3 minutes. Add a generous pinch of salt, cover, and reduce the heat to low. Continue to cook, stirring often, until the onion is tender and lightly colored, about 15 minutes. Add the garlic and thyme and cook, stirring, for another minute.
  • Stir the sausage and potatoes back into the pan with the onions. (At this point you can set the pan aside off the heat, until ready to serve. Reheat before continuing.) Add the wine and increase the heat to high, bringing the wine to a boil. Reduce the heat slightly and boil the liquid for two minutes. Add the mussels and cover the pan tightly. Cook 2 minutes, shake the pot vigorously and cook another 2 minutes. Transfer the opened mussels to soup bowls (if any haven’t opened, give them another minute or so to cook, then discard any unopened ones).
