GORGONZOLA SAUCE

Gorgonzola Sauce image

Steps:

  • Bring the heavy cream to a full boil in a medium saucepan over medium-high heat, then continue to boil rapidly for 45 to 50 minutes, until thickened like a white sauce, stirring occasionally.
  • Off the heat, add the Gorgonzola, Parmesan, salt, pepper, and parsley. Whisk rapidly until the cheeses melt and serve warm. If you must reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together.

4 cups heavy cream
3 to 4 ounces crumbly Gorgonzola (not creamy or "dolce")
3 tablespoons freshly grated Parmesan
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3 tablespoons minced fresh parsley

Gorgonzola Truffles image

Steps:

  • Beat first 5 ingredients at medium speed with an electric mixer until well combined. Cover tightly, and chill at least 1 hour or until firm (can chill up to 3 days).
  • Roll cheese mixture into 3/4-inch-round balls. Roll each ball in bacon, or pecans. Serve immediately, or cover and chill until ready to serve. If chilled, let stand 30 minutes before serving. Serve with apple and pear slices and grapes.
  • Makes 6 appetizer servings.
  • NOTE: Cook time equals chill time!

1/2 teaspoon Worcestershire sauce

1/2 cup bacon (cooked and crumbled, or substitute 1/2 cup finely chopped TOASTED pecans)

Steps:

  • Beat first 5 ingredients at medium until well combined. Cover tightly and chill at least an hour until firm, or up to 3 days. Roll cheese mixture into 3/4 inch round balls. Roll balls in bacon. Serve immediately or cover & chill until ready to serve. If chilled, let stand at room temp. approx. half hour before serving. Serve on their own or with apple and pear slices and/or grapes.
