GOURMET OATMEAL COOKIES
I've searched high and low for the ultimate oatmeal cookie recipe and finally, I've found the one that does it for me. These are chock full of goodies, have great flavour, are substantial without being a paperweight, moist and chewy on the inside, a bit firm on the edges. Cookie heaven.

Steps:
- Preheat oven to 350 degrees, and line cookie sheet with parchment paper.
- Mix all the chunky stuff up in a medium bowl. (That's the oats, chocolate, cherries, and pecans.).
- Whisk together the flour, baking soda, baking powder, and salt in another medium bowl.
- In a large bowl, cream butter and sugar, till there aren't too many lumps. Then add the eggs and the vanilla and blend. Add the flour mixture bit by bit, blending as you go.
- Then, fold in the chunky stuff. Don't worry, it'll look like there's more chunky stuff that cookie dough, but it will work.
- Drop dough onto parchment lined cookie sheets, I like to portion out a bit less than 1/4 cup per cookie.
- Bake for 10 minutes, but if you like them chewy, take them out when the edges look done, but the middles don't. They'll firm up as they cool.

- Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in the eggs, honey and vanilla. In another bowl, mix the oats, flour, baking soda, salt and cinnamon; gradually beat into creamed mixture. Stir in the remaining ingredients., Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pan 2 minutes; remove to wire racks to cool.

ULTIMATE OATMEAL COOKIES
Tasty oatmeal cookie that has been made in our family since I was little. A little bit different oatmeal cookie in that it has cinnamon, cloves, nutmeg and ginger.

- Preheat oven to 350°F.
- In a small bowl, sift flour, salt, baking soda, cinnamon, cloves, nutmeg, and ginger; set aside.
- In a large mixing bowl, cream butter, granulated sugar, brown sugar, egg, water and vanilla extract.
- Add dry ingredients to the creamed mixture; mix well.
- Stir in quick oats and raisins.
- Drop by well rounded teaspoonfuls onto a lightly greased baking sheet.
- Bake for 10 - 12 minutes.
- Cool on tray for 1 minute and move to wire rack to complete cooling.

THE BEST OATMEAL COOKIES
Chewy oatmeal raisin cookies with lots of flavor. You can also substitute 1/2 cup of wheat germ in place of some of the oatmeal, for a different flavor.

- In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.

- Preheat oven to 375°F.
- Into a small bowl sift together flour, cinnamon, baking soda, salt, and nutmeg. In a large bowl with an electric mixer beat together butter and sugars until light and fluffy. Beat in egg and vanilla and stir in flour mixture, oats, and coconut until combined well.
- Arrange rounded tablespoons of dough about 3 inches apart on ungreased baking sheets and with moistened fingers flatten mounds into 3-inch rounds. Bake cookies in batches in middle of oven until golden, 10 to 12 minutes. Cool cookies on sheets 1 minute and transfer with a metal spatula to racks to cool completely. - Heat oven to 350 degrees. Butter two large cookie sheets, or line them with parchment paper or reusable silicone liners.
