Gourmet Potato Patties image

Steps:

  • Beat cream cheese, flour, parsley and paprika in medium bowl with mixer until blended. Add cheddar; mix well. Blend in milk and egg. Stir in onions.
  • Break potatoes into shreds. Stir into cream cheese mixture.
  • Brush butter onto bottom of medium skillet; heat on medium heat. Add potato mixture in batches, using 1/4 cup potato mixture for each patty and flattening if necessary to make thin 3-inch patty. Cook until crisp and golden brown on both sides, turning once. Drain patties on paper towels before serving.

These crisp-tender patties from Edie DeSpain of Logan, Utah are accented with onion, curry and celery. "I make many German recipes from my mother, including this one," shares Edie. "The patties make a great side dish for chicken, and also complement breakfast dishes like ham and eggs."

German Potato Patties image

Steps:

  • In a large bowl, combine the first 11 ingredients. In a large nonstick skillet coated with cooking spray, heat 3/4 teaspoon oil over medium heat. Drop potato mixture by 1/4 cupfuls into skillet; press lightly to flatten. Fry for 3-4 minutes on each side or until golden brown. Repeat with remaining oil and potato mixture.

1 small onion, finely chopped
2 tablespoons chopped celery
1 egg, lightly beaten
1 tablespoon minced fresh parsley
1/2 teaspoon salt

1/8 teaspoon curry powder
1/8 teaspoon caraway seeds
1/8 teaspoon paprika
Dash pepper

This wonderful dish has been a family favorite since I was a child. I think I remember my mom getting the recipe out of the local newspaper back in the early 70's. It tastes like a loaded baked potato to me, only better! It is great for the holidays, especially the 'dairy' ones.

Steps:

  • Cook potatoes in skins and cool.
  • When cooled, peel and grate or shred, like hash browns.
  • Preheat oven to 350. Butter sides and bottom of a large casserole dish or spray with cooking spray.
  • Melt 1/2 cup butter in saucepan and add grated cheese. Remove from heat when melted and add the sour cream, chopped onion, salt and pepper. Stir completely.
  • Add mixture to the grated potatoes and mix well.
  • Place in buttered casserole and dot with the 3 tablespoons of butter and sprinkle with paprika.
  • Bake at 350 degrees for 30-40 minutes until bubbly and golden-brown on top.

  • Thoroughly wring out the liquid in the grated potatoes by placing them in a colander and squeezing them with your hands or by placing them in a clean dish towel and wringing out the liquid.
  • Place the drained grated potatoes in a medium-sized bowl with the grated onion, eggs, flour and salt and use your hands to work it into a tacky mixture. Add a little more flour if needed. Do no let the mixture sit for long before using it, use it immediately.
  • Heat a few tablespoons of oil in a non-stick pan over medium-high heat and place 1/3 to 1/2 cup of the mixture (depending on size preference) in the hot pan and flatten into pancakes with the back of a spoon. Fry on both sides for 3-5 minutes until the Kartoffelpuffer are golden. Place them briefly on paper towels.
  • Serve immediately while hot with applesauce, fruit compote or powdered sugar. For a savory version serve with herbed yogurt, quark or creme fraiche or with meat and gravy as part of a meal.
