PINEAPPLE UPSIDE-DOWN CHEESECAKE

My mom often made pineapple upside down cake, but I prefer something creamier. This recipe looks just like her cake, but gets even tastier as pineapple upside down cheesecake. -Marilyn McGinnis, Citrus Heights, California

Pineapple Upside-Down Cheesecake image

Steps:

  • Preheat oven to 325°. Sprinkle brown sugar into an 8-in. ovenproof skillet. Arrange pineapple in a single layer over brown sugar; place a cherry in the center of each pineapple slice., For filling, in a large bowl, beat cream cheese and confectioners' sugar until smooth. Beat in flour and vanilla. Add egg; beat on low speed just until blended. Fold in crushed pineapple. Spoon over fruit., Bake 35-40 minutes or until center is almost set. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., For crust, in a small skillet, melt butter over medium-low heat. Add cracker crumbs and cinnamon; cook and stir 4-6 minutes or until toasted. Cool. Just before serving, top cheesecake with toasted crumbs, pressing to adhere. Invert cheesecake onto a serving plate.

3/4 cup packed brown sugar
4 slices canned pineapple (one 8-oz. can)
4 maraschino cherries
FILLING:
1 package (8 ounces) cream cheese, softened
1/2 cup confectioners' sugar
2 teaspoons all-purpose flour
1 teaspoon vanilla extract
1 large egg, room temperature, lightly beaten
1/4 cup crushed pineapple, well drained
CRUST:
1 tablespoon butter
1/3 cup graham cracker crumbs
1/4 teaspoon ground cinnamon

PINEAPPLE GRAHAM CAKE

A new to me twist - no flour; just graham cracker crumbs; then baked in a loaf pan & topped with a pineapple glaze. Be sure to grease and flour the pan WELL as the cake tends to stick. I also found it easier to de-pan while the cake was hot and then pour on the glaze. I have made a lighter version, using apple butter for 1/2 the butter, Splenda granular for 1/2 the sugar & 1/4 cup of Egg Beaters in place of egg yolks. The result was just as good as the orignal.

Steps:

  • Preheat oven to 350ºF.
  • Coat a 9-inch loaf pan with cooking spray & lightly dust with flour.
  • Cream butter and sugar till light & fluffy; add egg yolks and mix till incorporated.
  • Mix graham cracker crumbs with baking powder and salt then add to butter/sugar mixture, alternating wth the milk.
  • Stir in vanilla and nuts.
  • Beat egg whites till they form stiff peaks; fold into cake batter.
  • Pour into prepared pan & bake for 45-55 minutes or until cake pulls away from sides of pan.
  • While cake is baking, combine 1 cup sugar and the can of pineapple. Simmer for 10 minutes. Pour on top of hot cake. Let stand 2 hours before serving.

Steps:

  • in a large mixing bowl cream granulated sugar with 1/2 c butter, mix in eggs 1 at a time mixing well after each beat for about 5 mins by hand (2 mins on high with electric mixer).
  • mix together crumbs, baking powder and salt then add to the creamed mixture alternating with milk; set aside.
  • combine brown sugar, flour and cinnamoncut in 2 tbl butter till crumbly, stir in nuts.
  • sprinkle 1/2 crumbly mixture in to an 8 by 1 1/2" microwave safe dish then 1/2 of batter and repeat.
  • microwave 10 mins ( if your microwave dosn,t have a turn table you will need to turn the dish 1/4 of the way every 2 mins).
  • the surface will appear moist let it cool in the dish.
  • to serve invert it on a plate cut in to peices and top with ice cream.

  • Generously coat a 3 1/2- or 4-quart slow cooker with cooking spray. Add peaches to cooker. In a small saucepan combine the next three ingredients (through ginger). Cook and stir over medium-high heat until butter is melted and sugar is dissolved. Pour mixture over peaches; stir gently to coat.
  • In a bowl combine milk and crushed graham cracker. In a large bowl beat together the 1 cup brown sugar and 1/2 cup butter on medium until combined. Beat in egg. In a bowl stir together the next four ingredients (through nutmeg). Add half of the flour mixture to butter mixture, beating on low until combined. Stir in graham cracker mixture. Beat in the remaining flour mixture just until combined.
  • Spread batter over peach mixture in cooker. Cover top of slow cooker with foil; place lid on top. Cook on high for 2 1/4 to 2 1/2 hours or until a wooden toothpick inserted in the center of cake layer comes out clean, giving crockery liner a half turn halfway through cooking, if possible.
  • Turn off cooker. If possible remove crockery liner from cooker; cool, covered, up to 1 hour on a wire rack before serving.
