STUFFED GREEN PEPPERS I

Here's a delicious stuffed pepper recipe that's easy to make. Each green bell pepper contains ground beef, onion, tomatoes, rice and cheese, and is cooked in tomato soup.

Stuffed Green Peppers I image

Steps:

  • Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.
  • In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.
  • Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.
  • Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.

This family favorite has been handed down thru the ages and we've all done our spin on it. Mine is adding carmelized onion. Simply made and cooked on the stovetop.

Gramma's Stuffed Green Peppers image

Steps:

  • 1. Melt 2 tablespoons butter in saute pan. Add onion and saute for 10 minutes or so over medium heat, stirring often. After onions turn translucent, stir only when bottom begins to brown, scraping up browned bits, and allow to brown again. (You may have to cover the pan for a bit if the onions start to dry out) Repeat until onions take on a deep golden color and are quite soft. They will have reduced considerably.
  • 2. Meanwhile, add to a medium bowl the beef, rice, slightly beaten egg, seasoned salt and ketchup.
  • 3. When onions have cooked and cooled slightly, add them to the beef mixture. Combine well with wooden spoon or by hand.
  • 4. Wash green pepper, dry, slice the very top off and clean insides of seeds and membrane.
  • 5. In medium stock pot sized to hold the peppers you've filled, add can of diced tomatoes and can of tomato soup (no water yet). Stir to combine. Bring to a slow boil over medium heat.
  • 6. Fill peppers with beef mixture to within a 1/4" of top. Add to pot all standing upright. Add enough water to cover the peppers at least by 1/3, but no more than a soup can full. Cook covered on high simmer for about 30 minutes, then move the peppers around to balance the cooking speed, or onto their sides if there's room. Cook for at least one hour total and up to an hour and a half.
  • 7. Serve on a plate, split in half covered with diced tomato and some sauce. Crusty french loaf or rye bread is a great side as well as mashed potatoes. You can also spread this meal farther by adding kielbasa chunks to the cooking pot. Another favorite addition is a can of sweet kraut along with the tomato and soup.

Grandma's Simple Stuffed Bell Peppers image

Steps:

  • Preheat oven to 350°F.
  • Cut the tops off the peppers and discard seeds and membranes.
  • Boil peppers for 5 minutes. Remove and stand upright in a 13x9 casserole dish.
  • Generously sprinkle inside of each pepper with salt (1/2 tsp or more if you like).
  • Cook ground beef and onions until meat is browned.
  • Season beef and onion mixture with remaining salt, pepper, garlic, and seasoned salt.
  • Add tomatoes, water, rice, sugar, and Worcestershire sauce and stir.
  • Cover and simmer until rice is tender (approximately 15-30 minutes).
  • Stir in 1 cup shredded cheese.
  • Stuff peppers with the meat and rice mixture.
  • Bake uncovered for 20 minutes at 350°F.
  • Top peppers with remaining cheese and bake and additional 5-10 minutes.

6 large green peppers

  • Preheat oven to 350.
  • Mix first 8 ingredients well.
  • Cut green peppers in to quarters (or thirds - depending on size of peppers).
  • Fill cut peppers with the meat mixture.
  • In a dutch oven, mix the tomato soup, tomato sauce and stewed tomatoes.
  • Add the additional 1/2 cup of water
  • Arrainge filled pepper in the bottom of the pan.
  • Spoon sauce over pepper.
  • Cover and back foe 2 hours.

Stuffed Green Peppers with Tomato Sauce image

Steps:

  • Prepare the Chicken Filling. When cool, stir in cooked rice. Reserve. Prepare the Tomato Sauce. Set aside and keep warm.
  • Preheat oven to 350 degrees F.
  • Wash the peppers under cold water. Wipe dry. Cut the top 1-inch of the peppers off, keeping the stem intact. Reserve. Remove the core and seeds. Brush inside and outside with olive oil. Season inside with salt and pepper.
  • Divide the filling into 6 portions and fill each pepper to the top. Place the lids back on top. In a roasting pan, place the stuffed peppers and the hot Tomato Sauce. Bake in the oven for about 1 hour or until done. Serve in heated plates garnished with minced parsley.
  • Coarsely grind the chicken and transfer to a large bowl. Reserve.
  • In a medium skillet, heat the olive oil over moderate heat. Saute the onion until translucent. Add mushrooms and continue to cook until all the liquid evaporates, stirring occasionally. Cool.
  • Stir the onion and mushroom mixture into the ground chicken. Add the remaining ingredients and combine well. To test for taste, saute a small amount in a little oil and adjust seasoning.
  • Reserve as stuffing for Green Peppers with Tomato Sauce.
  • Yield: about 4 cups

  • In a medium saucepan, heat the olive oil. Over medium heat, saute the onions until soft, about 5 minutes. Add the garlic and cook 1 minute longer. Add the tomato paste, tomatoes and cook for 3 minutes. Add the chicken stock and simmer for 20 minutes or until sauce thickens.
  • Strain into a clean saucepan. Whisk in butter, piece by piece. Add basil. Taste and adjust seasoning with salt and pepper. Use as needed.
  • Yield: Makes 2 1/2 cups
  • Place the chicken bones in a 6 or 7-quart pot, pour cold water over to cover, and bring to a rolling boil. Skim off the foam and fat that collects on the top.
  • Add the remaining ingredients, lower the heat to a simmer, and simmer uncovered for 2 to 3 hours, skimming as necessary. Strain through a fine-mesh strainer into a clean bowl and cool. Refrigerate, covered, for up to 3 days, discarding the hardened layer of fat before using or freezing.
  • Yield: Makes about 2 quarts

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a large pot of boiling water, parboil the peppers until tender, 2-3 mins. Cook longer if you like your peppers soft. Remove with a slotted spoon and dry on paper towels.
  • 3. In a large skillet or saute pan, heat the oil over med-high heat. Add the onions and chopped bell peppers and cook until soft, about 3 mins.
  • 4. Add the beef, pork, or Italian sausage, fresh parsley, garlic, salt, pepper flakes, and black pepper.
  • 5. Cook until the meat is browned, stirring with a heavy wooden spoon to break up the lumps, about 6-10 mins.
  • 6. Add the rice and tomato sauce. Stir well. At this point, if want to substitute peas instead of diced peppers throw the peas in at this step and heat through 2 mins. Remove from heat and adjust the seasoning to taste.
  • 7. Pour enough water into a baking dish to just cover the bottom, about 1/8"-1/4" deep. Place peppers in a baking dish. Stuff the bell peppers with the rice mixture halfway up. Then sprinkle with mozzarella & Gruyere.
  • 8. Add another layer of rice mixture. Spread 1-2 Tbsp of tomato sauce on top of each pepper. If any leftover rice mixture fill in around the peppers. I don't usually measure I eyeball the ingredients and usually end up adding more.
  • 9. Cover with foil. Cook peppers in the oven for about 30 mins or until tender.
  • 10. Remove and sprinkle with more Gruyere and mozzarella. Return to oven another 15-20 minutes until cheese is melted and bubbly.
  • 11. Remove from oven, let rest for approximately 10 minutes before serving.
