GRANDMA FERRANTE'S BISCOTTI
Oh my! While amazing, the aroma of these cookies baking is nothing compared to their fantabulous taste! They are delicious both plain and dipped in chocolate. In fact, they had us scrambling for the crumbs!

Steps:
- Cream margarine and sugar until fluffy. Add eggs and beat adding flavorings. Mix in dry ingredients that have been sifted together.
- Roll on a well floured board into one inch logs. Place on greased baking sheet and bake at 375 for 20 min. Remove from oven and slice diagonally into cookies and return to oven til lightly browned. If desired you can add nuts to the cookie and also dip an end in melted chocolate.

Steps:
- 1. Mix oil and sugar together.
- 2. Add eggs and mix well. Add few drops of anise extract and/or vanilla to taste.
- 3. Add flour, bkg. powder, salt until dough forms. Add 1 cup walnuts to dough.
- 4. Chill in refrigerator for a few hours or overnight.
- 5. After dough has been chilled, form into logs 1 1/2 " wide by 6" long. Place on parchment lined or greased cookie sheets. I like to use parchment paper; keeps your cookie sheets cleaner and biscotti bake evenly browned.
- 6. Bake at 350 degrees for 20 minutes.
- 7. Let cool, then slice diagonally about 1 inch wide. Turn biscotti on their sides and bake for another 10 to 15 minutes on one side, then turn over and bake an additional 10 to 15 minutes on the other side; bake until golden brown to your liking.
- 8. Enjoy! These are the best biscotti because they are crisp but not so hard that you can't eat them without dunking in coffee or milk. I have added chocolate chips to the dough, Nutella or chopped Snicker bars which made a big hit! I have sprinkled cinnamon sugar on the top, which makes a whole different taste. When I bake my biscotti, I have to make a double batch - one is not enough to share with loved ones!

- Preheat oven to 450°. In a large bowl, whisk flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Add milk; stir just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat dough into a 10x4-in. rectangle. Cut rectangle lengthwise in half; cut crosswise to make 10 squares., Place 1 in. apart on an ungreased baking sheet; brush tops with egg. Bake until golden brown, 8-10 minutes. Serve warm.

- Preheat oven to 350 degrees. In the bowl of an electric mixer, whisk together flour, granulated sugar, baking powder, anise seeds, salt, and nuts. Transfer to mixer fitted with the paddle attachment. Add eggs; beat until a stiff dough comes together, about 3 minutes.
- Divide dough in half. Form each half into a 12-inch log. (Dough may be sticky; dampen your hands for easier handling.) Transfer to a parchment-lined baking sheet and flatten so each log is 13 inches long, 2 1/4 inches wide, and 3/4 inch thick.
- Brush logs with beaten egg and sprinkle with sanding sugar. Bake until firm and very pale golden, about 35 minutes. Let cool on pans on a wire rack, 40 minutes. Meanwhile, reduce oven temperature to 300 degrees.
- Using a serrated knife with a sawing motion, cut logs into slices slightly thicker than 1/4 inch. Arrange, cut-side up, on parchment-lined baking sheets. Bake until dry to touch, about 30 minutes. Let cool completely on pans on racks, 30 minutes. Store in an airtight container up to 1 month.

- Bake at 350 Degrees farenheit.
