Grandma's North Carolina Pork Barbecue image

Steps:

  • 1. Place roast in roasting pan. Combine remaining ingredients. Stir well and pour over roast.
  • 2. Cover and bake for 5-6 hours at 325 degrees.
  • 3. After cooking time remove meat and chop with knife and fork.
  • 4. Return to meat to sauce, discarding bone and fat. Serve on buns.
  • 5. Roast can also be cooked in a slow cooker on Med-High setting for 3-4 hours, check for tenderness and turn roast halfway through cooking time. When done remove meat and chop with kinife and fork. Return to meat sauce, discard bone and fat. Serve on buns.

4-5 lb pork roast
1 large chopped onion
1 1/2 c water
1/2 c catsup
1 c apple cider vinegar
1/2 c Worcestershire sauce
2 Tbsp mustard
4 Tbsp brown sugar
1 tsp salt
1/4 tsp red pepper

Grandma's Crispy Pork Wontons image

Steps:

  • Mix together the ground pork, celery, carrot, onion, and garlic in a bowl. Season with salt, pepper, and soy sauce; mix with your hands until well blended.
  • Separate the wonton wrappers and lay them out on a clean surface. Spoon 1 teaspoon of the pork mixture into the center of each wrapper. Moisten the edges of the wonton wrappers with beaten egg, fold over the filling to form a triangle, and press together to seal. Place the finished wontons on a baking sheet.
  • Heat the canola oil in a deep fryer or large saucepan to 365 degrees F (180 degrees C).
  • Fry the wontons, about 6 at a time, until they turn golden brown and float to the top, 3 to 4 minutes. Remove, and drain on a paper towel-lined plate.

Grandma's Chopped Barbecue image

Steps:

  • Heat the oven to 250 degrees F.
  • With the tip of a knife, make 8 (2-inch) pockets all around the pork and insert a smashed garlic clove in each.
  • In a small bowl, combine the seafood boil seasoning, onion powder, garlic powder, paprika, olive oil, salt, and pepper. Rub the seasoning all over the pork then let rest at room temperature up to 2 hours.
  • Place the pork in the bottom of a roasting pan and add enough vegetable stock to fill it to an inch deep. Cover very tightly with several layers of aluminum foil, getting the seal tight is really key here. The steam being locked in breaks down the pork to make it pull-worthy.
  • Roast the pork, covered, in the oven for 2 hours then pull back the aluminum foil a bit and prick with a fork. If it is tender, remove the aluminum foil and a place back in the oven for 1 more hour. If it isn't tender yet, cook for 30 minutes to 1 hour more, making sure to add more stock if needed. Once tender remove the aluminum foil all together. If the liquid evaporates here, it's ok; it has done its job. Remove from oven then let rest at room temperature, then chop down to small chunks and mix with enough of Sunny's Pork Sauce, recipe follows to make it wet or dry to your taste.
  • In a saucepot on medium-low heat, add the oil. Add the onions, garlic, and season with a pinch of salt and a few grinds of black pepper. Cook until both are tender, but not browned and then add the ketchup, vinegar, orange juice, and Sriracha. Taste and then add the sugar, to taste. This should be a loose sauce. Refrigerate or use right away.

8 cloves garlic, smashed
2 to 3 cups vegetable stock
1/2 cup seafood boil seasoning (recommended: Old Bay)
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon sweet paprika
3 tablespoons olive oil

Sunny's Pork Sauce, recipe follows
2 tablespoons olive oil
1 cup chopped Vidalia onion
2 cloves garlic, grated on a rasp
Kosher salt and freshly ground black pepper
2 cups ketchup
1 cup apple cider vinegar
1/2 cup orange juice
1/4 cup Sriracha
2 to 3 tablespoons brown sugar

It was one of his favorite foods growing up, and when Molly got the recipe from her grandmother Mary, she understood why. "I love how heavy it is on the sugar as well as the star anise, which I don't use a lot in my cooking," she says. "It's so comforting and has this warm, nostalgic quality."

Grandma's Tepong Pork image

Steps:

  • Preheat the oven to 325˚ F. Heat the oil in a large ovenproof pot over medium heat until shimmering. Add the pork fat-side down and cook until it starts to turn golden brown, 5 to 6 minutes. Remove from the pot and set aside. Add the onions, garlic, ginger, cloves and star anise and cook, stirring occasionally, until the onions start to soften, 4 to 5 minutes.
  • Stir in the brown sugar and cook, stirring frequently, until melted, 1 to 2 minutes. Pour in the soy sauce and vinegar and stir to combine. Add the pork back to the pot, fat-side down and add enough water to cover about three-quarters of the way. Bring to a boil over medium-high heat, then cover the pot and transfer to the oven. Cook until the pork is tender and easily shredded with a fork, 3 1/2 to 4 hours.
  • Meanwhile, place the eggs in a medium pot and cover with cold water by 2 inches. Bring to a boil over medium-high heat. Once boiling, immediately turn off the heat and cover the pot. Let the eggs sit in the hot water for 3 minutes. Drain the water and submerge the eggs in a bowl of ice water to stop the cooking. Peel the eggs and cut 4 or 5 small slits into the whites of each egg. Refrigerate the eggs until needed.
  • Remove the pork from the pot and set the pot over high heat. Bring the liquid left in the pot to a boil and cook until reduced by half, about 30 minutes. Add the eggs to the pot and cook for an additional 5 to 6 minutes so the sweet and salty sauce gets into the yolks of the eggs. Remove the eggs, then strain the sauce into a bowl or gravy strainer and skim off the fat. Slice the pork and spoon the sauce over the top. Serve with the eggs.

Grandma Barbe's Roast Pork image

Steps:

  • Heat olive oil in a Dutch-oven over medium heat. Add pork and cook, turning occasionally, until golden brown all over, 8 to 10 minutes. Reduce heat, cover, and cook, turning occasionally, 1 1/2 hours.
  • Add wine, onions, carrots, potatoes, butter, bay leaf, thyme, 2 sprigs parsley, and peppercorns; dot with butter. Cover, and let simmer until potatoes are tender, about 30 minutes.
  • Season pork with salt and sprinkle potatoes with garlic and chopped parsley before serving.

6 tablespoons olive oil
2 1/2 pounds boneless pork loin, cut from the tip
2 1/4 cups dry white wine
12 pearl onions, peeled
1 pound 2 ounces carrots, cut crosswise on the diagonal, into 1-inch pieces
2 1/4 pounds waxy potatoes, such as Yukon gold, halved

Grandma's Rib and Sauce (Pork) image

Steps:

  • Preheat oven to 450F degrees.
  • Place ribs on a wire rack in oven for 20 minutes.
  • While ribs are cooking in the oven, combine all other ingredients in large sauce pan and bring to a boil. Cover and let simmer.
  • Flip ribs and cook for additional 20 minutes.
  • Turn oven temp down to 350F degrees. Pour 1/3-1/2 of sauce over ribs. Cover pork with foil and cook for an additional 2 hours.
  • Check to see if you can cut with a fork. If you can then they are done!
  • Serve ribs with leftover sauce. Best if served with fresh, warm, homemade dinner rolls.

GRANDMA'S HONG SHAU ROU (RED BRAISED PORK)

I have been reading about this traditional Chinese dish on the Internet and found there are many different versions of it. Some are spicy, incorporating chile and ginger. Others have the spices of star anise, cinnamon, and lots of garlic added too. The recipe my grandma passed on to us here is the garlicky one. Garnish with some chopped spring onions or cilantro and serve with steamed white rice or buns. I like to serve a side dish of pickled cucumber slices with the pork and this tanginess brings another dimension to the dish. Chi Fan (time to eat)!

Grandma's Hong Shau Rou (Red Braised Pork) image

Steps:

  • Bring a pot of water to a boil; add pork belly. Cook until pork belly softens, about 5 minutes. Drain and cool pork until easily handled, 5 to 10 minutes. Cut into 2-inch chunks.
  • Heat vegetable oil in a large pot over medium-low heat. Add cinnamon stick and star anise; fry until fragrant, about 30 seconds. Stir in pork belly, light soy sauce, Shaoxing wine, dark soy sauce, sugar, and garlic.
