LANCASTER COUNTY HAM LOAF WOW WOW WOW

Now THIS is Lancaster County cooking! This is an Amish/Mennonite specialty dish! You will NOT be disappointed! Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own! This is SO delicious! ENJOY!

Lancaster County Ham Loaf Wow Wow Wow image

Steps:

  • Grind meat (if necessary).
  • Mix ground meats, breadcrumbs, egg, salt, pepper and milk together.
  • Shape into a loaf.
  • Bake at 350 degrees Fahrenheit for one hour.
  • For the sauce, mix the brown sugar, dry mustard, water and vinegar together.
  • Pour sauce over loaf.
  • Continue to bake for another hour.

1 lb fresh ground turkey
1 lb ham, ground (or turkey ham)
1 cup breadcrumbs
1 egg
1 teaspoon salt
1/8 teaspoon pepper
3/4 cup milk
2/3 cup brown sugar
1 teaspoon dry mustard
1/2 cup water
1/4 cup vinegar

Pineapple-Glazed Ham Loaf image

Steps:

  • In a bowl, combine the first five ingredients. Crumble ham and pork over mixture; mix well. Press into a 9x5-in. loaf pan coated with cooking spray. Combine brown sugar, vinegar and pineapple; spoon over loaf. Bake, uncovered, at 350° for 2 hours or until a thermometer reads 160°. Cool for 10 minutes before removing from pan.

1 cup milk
1 teaspoon ground mustard
1 cup crushed saltines (about 30 crackers)
2 tablespoons orange juice
1 pound ground fully cooked ham
1 pound ground pork
1 cup packed brown sugar
1 tablespoon white vinegar
1 can (8 ounces) crushed pineapple, undrained

Steps:

  • Grandma Shady's Ham Loaf: Grind together baked and smoked ham in a food grinder. Add crumbs, eggs and milk; mix well and shape into a loaf. Place in a lightly greased 9"x5" loaf pan. Bake, uncovered, at 450 degrees for 20 minutes. Remove from oven and top with sauce; cover and bake at 325 degrees for an additional 2 hours. Uncover shortly before baking time is done; allow to brown slightly. Sauce: Combine ingredients and mix well. Tip: Cut leftover meatloaf into thick slices, wrap individually and freeze. Later, they can be thawed and rewarmed quickly for scrumptious meatloaf sandwiches at a few moments' notice.

GRANDMOTHER'S HAM LOAF

This is a meat loaf made with ham that features a mustard glaze instead of the usual ketchup type on beef meat loaves. It makes a lot and leftovers make great sandwiches. If you want a ham loaf that really goes bang, substitute the recipe for Pirate's Pantry Hot Mustard Sauce (posted separately) for the glaze in this recipe.

Steps:

  • Combine all ingredients except glaze. I use a stand mixer.
  • Make a loaf and place in a glass 9"x13" baking dish.
  • Add 2 TBSP water to bottom of baking dish.
  • Cover loaf with glaze.
  • Bake at 325 for 11/2 hours or until 165 degrees.
  • Allow to sit 15 minute before slicing.
  • Au Gratin potatoes are an excellent accompaniment.

  • Add clove and allspice to the milk. In a large bowl, add all ingredients together and mix. Divide into two loaf pans.
  • Bake at 350 degrees for about one to one and a half hours. Do not overbake or it can become dry. Look for a temperature of 160 degrees in the center of the loaf. The top should be nicely browned.
