This is a chili recipe my grandmother always made, and has been handed down through the generations. It's more of a chili soup, than chili beans. Very warming, wholesome, and good on a snow day! Steps:
- 1. saute chopped onion and celery in small amount of water until tender.
- 2. Add hamburger meat, salt and pepper generously. Cook til browned.
- 3. Add remaining ingredients EXCEPT spaghetti.
- 4. Bring 'soup' to a boil. Add spaghetti noodles by breaking them up into 1/3's. Should be about 4 inches in length. Let come to a second boil and cook until spaghetti noodles are tender. About 10 mins.
- 5. Serve with oyster crackers or saltines.
OLD MAMA'S FASHIONED CHILI

- Cook and stir ground beef in a skillet over medium-high heat until crumbly and browned, 5 to 10 minutes. Drain.
- Stir drained ground beef, black beans, kidney beans, tomatoes, green bell peppers, yellow onion, garlic, and chili seasoning together in a large pot over medium-high heat. Bring to a boil, reduce heat to low, and simmer, stirring occasionally, until vegetables are slightly tender and chili is heated through, 15 to 20 minutes. Season with hot sauce, salt, and ground black pepper to taste.

GRANDMA'S CHILI SAUCE
This sadly is not my grandma's recipe; I wish I had gotten it from her when she was alive. However, I ran across this one and it has so many of the same ingredients in it I decided to give it a try, quite a few years ago. My family and I really love it.

Steps:
- 1. COMBINE tomatoes, onions, green and red peppers, vinegar, brown sugar, garlic, horseradish, if using, celery salt, mustard seeds and salt in a large stainless steel saucepan. Bring to a boil over high heat, stirring frequently. Reduce heat and boil gently, stirring occasionally, for 1-1/2 hours, until sauce begins to thicken. Add allspice, mace, cinnamon and cloves. Continue to boil gently, stirring occasionally, until thickened and sauce begins to mound on a spoon, about 30 minutes
- 2. PREPARE boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
- 3. LADLE the hot chili sauce into hot jars, leaving 1/2 inch headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot sauce. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
- 4. PROCESS jars in a boiling water canner for 20 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.
GRANDMA'S CHILI
The "new" Recipezaar has cut off about half of my directions after step 3 during the switch. sad. sorry to any new readers. Maybe I'll have time to come back and make corrections someday, though I rarely frequent this site now because of how much more difficult it is to navigate. this is a passed down, tried and true chili recipe. i always get a ton of compliments on it. serving ideas: cheese, fritos, cornbread, saltine crackers (we love them all -- depending on our mood!)... note -- this is one of those recipes that comes from my brain and test tastes. :) so a couple of notes: -- i have found that Lawry's chili seasoning gives the best overall taste. and plus, that's just the way grandma made it! -- i use any where from one to two pounds of meat and adjust the ingredients accordingly. -- i often use nearly 1 and 1/2 packets of chili seasoning, especially if the meat portion is on the heavy side. -- i often use some of the stewed tomato juice and chili bean juice to help add flavor.

GRANDMA'S CHICKEN AND BLACK BEAN CHILI
This is my grandmother's recipe for chili and the only one I make for my family now since we all love it so much. This recipe is great after it has sat overnight in the fridge as well. The flavors blend nicely over time. Garnish with shredded cheese or other ingredients to you're liking.

- Wash jars well, and dry in 200 oven for 10 minute.
- Put Pickling spices into cheesecloth, and make a bag, tie top well, and leave several inches of sting. Tie to handle of pot.
- In 15 liter heavy duty pot , add all ingredients, and bring to boil, then reduce to simmer.
- Simmer for 1 - 1 1/2 hours until celery is soft, stirring often. Remove spice bags.
- Ladle into Jars, put lids on and allow to seal.

- Mix tomatoes, onions, apple cider vinegar, green bell peppers, seeded chopped chile peppers, sugar, unseeded chopped chile pepper, salt, allspice, cinnamon, and cloves together in a large mixing bowl.
- Ladle enough of the tomato mixture into the pitcher of a blender to fill to about 3/4-full; blend until smooth. Pour blended mixture into a large pot. Repeat blending until entire mixture has been pureed.
- Bring the mixture to a boil, reduce heat to medium-low, and simmer until thickened, 7 to 8 hours.

GRAMMA'S OLD FASHIONED CHILI MAC
This is an old family recipe that my mom has cooked for 50 years. It's a wonderful, 'stick-to-the-ribs' meal that goes wonderful with warm cornbread or rolls. I find that kids love this when they don't like regular 'spicy' chili. Enjoy!

- Bring a pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a small saucepan, simmer celery and green pepper with water to cover until tender; Drain.
- Place ground beef in a large heavy skillet over medium heat. Cook until evenly brown. Add onion, and cook until tender and translucent. Drain excess fat. Add celery and green pepper.
