SPANISH RICE WITH GROUND BEEF
Growing up, my mom made a version of Spanish rice with ground beef that was hearty enough that it stood on its own as a main dish. During a visit a few years ago, after missing her cooking desperately, I watched her prepare it and jotted down the recipe. (Don't worry, I checked with my mom and she's totally on board with sharing with you!) Serve on a bed of fresh spinach with a side of refried beans. Garnish with fresh diced tomatoes, green onions, cheese, avocado slices, and crushed chile flakes.

GRANDMA'S SWEDISH MEATBALLS
When I was growing up my mother's side of the family would get together every Christmas Eve at my Swedish Grandmother house in NJ. My Grandma is long gone now, but whenever I make these it brings me right back to my childhood.

- 15-minute Gazpacho With Cucumber, Red Pepper And Basil. Sounds too good to be true, right? It’s actually not: This traditional Spanish chilled soup requires zero cooking time and takes 15 minutes to whip up in a blender.
- Cheater’s Skillet Paella. Don’t tell Abuela, but we took some liberties with this hearty rice dish. Our version is a one-pan wonder and takes way less time to make, because we want to have our paella and eat it too.
- Catalan Tomato Bread. Where the Italians have bruschetta, the Spanish have pan con tomate (or pa amb tomàquet in Catalan). This impossibly simple tapa is light, flavorful and calls for just five ingredients—genius.
- Mini Spanish Tortilla With Zucchini. Your grandma might’ve served these potato omelets (aka tortilla de patatas) full-size, but you can make this mini version whenever you want to reminisce—no sharing required.
- Churro Bites With Chocolate Sauce. Served with piping hot chocolate sauce for dipping? Yep, this is what happiness tastes like.
- Spanish Garlic Shrimp (gambas Al Ajillo) Hello, ten-minute dinner. Serve these guys with crusty bread to soak up the garlicky, buttery sauce.
- Spanish Chicken And Rice. Spanish chorizo, crispy chicken thighs and tender rice to absorb all the seasoning? Abuela would wholeheartedly approve. (Thanks, Coterie member Heidi Larsen.)
- Spanish Chickpea Stew (espinacas Con Garbanzos) This hearty dish may look simple; it tastes anything but. With garlic, vinegar and paprika, it has plenty of flavor to go around.
- Easy Traditional Red Sangria. It was the adult beverage when you were a kid, and now you can make it at home. Use a dry Spanish wine and whatever fruit your heart desires.
- Crudités With Romesco Sauce. Every good Spanish spread should include romesco sauce—use store-bought roasted red peppers to put it together in record timing.
