GRANDMOM'S GINGIES (GINGERBREAD COOKIES)

Everyone loves these gingerbread cookies that my grandmother makes, and now I also bake for our christmas cookie trays. They have a nice taste to them and don't get too hard like other recipes (that is, if you roll them out thick enough!)

Grandmom's Gingies (gingerbread Cookies) image

Steps:

  • MIX shortening, brown sugar, and molasses thoroughly.
  • STIR in water.
  • MEASURE flour by dip-level method.
  • BLEND all dry ingredients.
  • STIR in and chill.
  • ROLL 1/2 inch thick
  • Cut with 2-1/2 inch round cutter.
  • Place far apart on a lightly greased baking sheet.
  • Bake at 350 degrees for about 15 minutes or until to imprint remains when touched lightly.
  • Frost with any buttercream frosting of your choice. We use the one on the back of the 10x sugar (some of you may know what I am talking about!).
  • I am not sure to how many gingies this yields because I used a different cookie cutter, however, this recipes makes A LOT.

This is an old recipe from the Scovil Bakery in Nauvoo,Il.These were baked in a 'bustle oven'and they still bake bread and cookies in that oven to serve to tours groups to show them what it was like during pioneer times.

Steps:

  • Combine first four ingredients in large bowl.
  • Add eggs.
  • Mix dry ingredients together and add to wet.
  • Mix well.
  • Cover and refrigerate overnight.
  • Roll dough out on Pam (or other non-stick cooking spray) covered surface (I roll mine out thick,I like a thicker cookie) Cut with desired shapes.
  • Bake at 350 degrees for 10 minutes.
  • These cookies freeze well and are softer and more flavorful after freezing.

Steps:

  • In a bowl, beat butter and sugar until crumbly, about 2 minutes. Beat in the molasses, egg and vinegar. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture. Cover and refrigerate for 4 hours or until easy to handle (dough will be sticky)., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with 4 in. cookie cutters dipped in flour. Using a floured spatula, place cookies 1 in. apart on baking sheets coated with cooking spray. Bake at 375° for 5-6 minutes or until set. Remove to wire racks to cool., For icing, combine confectioners' sugar and milk in bowl. Spread over cooled cookies; let dry completely. If desired, combine paste food coloring and a few drops of water; using a fine brush or the blunt end of a wooden skewer, decorate cookies.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift the flour, ginger, baking soda, cinnamon, and salt into a mixing bowl. Stir the mixture to blend evenly, and sift a second time into another bowl.
  • Place the shortening into a mixing bowl and beat until creamy. Gradually beat in the white sugar. Beat in the egg, and dark molasses. Sift 1/3 of the flour mixture into the shortening mixture; stir to thoroughly blend. Sift in the remaining flour mixture, and mix together until a soft dough forms. Pinch off small amounts of dough and roll into 1 inch diameter balls between your hands. Roll each ball in cinnamon sugar, and place 2 inches apart on an ungreased baking sheet.
  • Bake in preheated oven until the tops are rounded and slightly cracked, about 10 minutes. Cool cookies on a wire rack. Store in an air tight container.

Steps:

  • Whisk flour, baking powder, cinnamon, ginger, cloves, and salt together in a bowl.
  • Beat brown sugar and butter in a separate bowl with an electric mixer until creamy. Mix in molasses, egg, and candied ginger. Gradually mix in dry ingredients until combined. Chill dough in the refrigerator for 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
  • Roll chilled dough into 1/2-inch to 3/4-inch balls. Dip balls in white sugar to coat and place on the prepared cookie sheet.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat 2 cups sugar, shortening, and molasses together in a bowl using an electric stand mixer until uniform, making sure not to overbeat. Add eggs and mix for 30 seconds.
  • Whisk flour, baking soda, cinnamon, ginger, and salt together in a separate bowl. Add flour mixture to sugar mixture and mix until just combined and dough is stiff.
