GOOD OLD FASHIONED PANCAKES

This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

Good Old Fashioned Pancakes image

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

GRANDMA'S PANCAKES

This has been in the family for a while, don't know were it came from, was just passed around and around for 50yrs or more..lol.. i have tried a lot of other recipes but this one is still the best . you get thick cake pancakes and they rise very well we measured once and they were up to 3/4 in thick. This is a very plain recipe sometime i omit the vanilla and/or add fruit and or nuts.. If the batter is a little thicker than you like it , just add more milk, just be careful not to add to much ad they will not rise as much and be more like a flapjack(thin and chewy).

Steps:

  • 1. In a bowl, mix well or even sift together flour,salt and sugar, baking
  • powder, .
  • 2. after dry ingredients are mixed make a deep hole in the center, set aside.
  • 3. take the milk, egg and melted butter and blend together.
  • 4. Take the milk mixture and pour in the middle of the dry ingredients
  • make sure your batter is completely mixed together.
  • 5. Heat a lite greased griddle ,medium heat. make sure your pan is hot.
  • BEFORE pouring the batter.
  • 6. Ladle out the batter to the pan, depending on the size of cakes you
  • want to use a 1/4- 1/2c for each pancake.
  • 7. top with your favorite topping and serve immediately.

Dumplings in Maple Syrup (grandpere) image

Steps:

  • Sift together flour, baking powder and soda, salt, and nutmeg into a bowl. Blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal. Add buttermilk and stir with a fork just until dough is evenly moistened (do not overmix).
  • Bring syrup and water to a boil in a 4-quart pot at least 10 inches wide. Drop 8 1/2-cup measures of dough into syrup, leaving spaces to allow dumplings to expand. Gently simmer over moderately low heat, covered, until tops of dumplings are dry to the touch, 15 to 20 minutes. Serve warm.

GRAND-PÈRES (MAPLE SYRUP DUMPLINGS) image

Steps:

  • DOUGH: In a large bowl, combine flour, sugar, baking powder and salt.
  • Add butter to dry ingredients and work until the mixture resembles coarse sand using fingers, pastry cutter or a couple of knives.
  • Add milk a little at a time until the dough comes together. Add vanilla extract, stir and set aside.
  • MAPLE SAUCE: In a Dutch oven over medium-high heat, add butter, water, brown sugar, maple syrup and vanilla extract. Bring the sauce to a simmer.
  • By the tablespoon, drop the dough balls one by one into the simmering sauce. Cover, reduce heat to medium and cook for 14 minutes. Halfway, spoon the sauce over the dumplings.
  • Scoop up a hot dumpling into a serving bowl, spoon sauce over and serve with a scoop of vanilla ice cream.

Easy Basic Pancakes image

Steps:

  • Preheat oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
  • In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).
  • Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.
  • For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).
  • Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You'll have 12 to 15 pancakes.) Serve warm, with desired toppings.
  • BUTTERMILK: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with low-fat buttermilk.
  • YOGURT: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.
  • WHOLE-GRAIN WITH YOGURT: In step 1, replace the all-purpose flour with 1/2 cup whole-wheat flour, 1/4 cup each cornmeal and wheat germ, and 1/2 teaspoon baking soda. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.

  • Bring syrup and water to a boil in a 6 qt Dutch oven over medium-high heat.
