CONTEST-WINNING CHOCOLATE POTATO CAKE
I won grand champion honors in a potato festival baking contest with this moist chocolate cake. The icing recipe can be doubled for real sweet tooths. A great-grandma, I've spent over 85 years on the farm.

- In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Add potatoes and vanilla. Combine the flour, cocoa and baking soda; gradually add to creamed mixture alternately with milk, beating well after each addition. Stir in nuts. , Pour into 2 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., For icing, in a saucepan over low heat, cook butter and brown sugar until butter is melted and mixture is smooth. Stir in evaporated milk; bring to a boil, stirring constantly. Remove from the heat; cool to room temperature. Stir in confectioners' sugar and vanilla until smooth. Spread between layers and over top of cake.

GRANNY'S IRISH POTATO CHOCOLATE CAKE
My granny made this cake and it has been passed down. it is so good. dense and very moist. does not call for an iceing. never any left.

Steps:
- 1. Boil your potatos and mash. Sift all of the dry ingredients. Melt butter. Now mix all ingredients together mixing with a wooden spoon. I lightly beat the eggs before adding. Also make sure their are no big lumps in the potatoes. Mix very well. Pour batter into a greased & floured bundt pan.
- 2. Bake in a pre-heated oven at 350 for 1 hour. Checking to see if inserted toothpick comes out clean. DO NOT OVER COOK.
- 3. This recipe does not call for and icing, however if you like you can add one. We have always eaten without one. I hope you will enjoy this cake.
GRANNY'S CHOCOLATE CAKE
This cake recipe was adapted from the chef Larry Forgione, who served his grandmother's cake recipe at his restaurant An American Place. The dessert proved so popular that every time he tried to take it off of the menu, he said his customers threatened to riot. It's a perfect proportion of crumb to buttercream, ideal for birthdays or other celebrations where layer cake is required.

- Preheat oven to 350 degrees. Butter 3 9-inch round cake pans, and line the bottoms with wax or parchment paper. Lightly butter the paper. Dust pans with flour, and shake out excess.
- Sift together the flour, baking soda, baking powder and salt. In a small bowl, combine buttermilk and vanilla.
- In a large bowl, using an electric mixer set at medium-high speed, cream the butter. Slowly add the sugar, and continue beating until well blended and light colored. Add eggs one at a time, beating well after each addition. Add dry ingredients alternately with the buttermilk mixture in 2 or 3 additions, beating well after each addition. Beat in the melted chocolate until well blended. Spoon batter into prepared pans, and smooth tops with a rubber spatula.
- Bake for 30 to 35 minutes, or until a toothpick inserted in center of a cake layer comes out clean. Let cake layers cool in the pans on wire racks for 10 minutes, then invert onto other racks and peel off the paper. Invert again, and let cool completely on the racks. Frost with chocolate frosting.

GRANNY'S CHOCOLATE CAKE
I just love this cake. It's ideal for any time of the day with a cup of coffee or tea or even just on it's own. The delicious chocolate flavor and the yummy roasted pecans are a wining combination. It's very easy to make as well.

- For the cake:.
- Mix cocoa, flour, sugar, soda, baking powder and salt in a bowl. (I always recommend to sieve the dry ingredients.).
- Melt the butter and add it to the dough with the water and the eggs.
- Mix the batter until light and creamy.
- Pour into a pre-greased and floured baking tray.
- Baking: Pre-heated oven at 175º C for about 40 minutes on the second lowest shelf.
- For the glaze:.
- Melt white chocolate in warm milk (on the stove).
- Add cocoa powder, sugar and butter.
- Pour over the cake ONLY when the cake is COLD.
- Sprinkle nuts.

Oh my goodness!!! If you are a dark chocolate lover (like me) then this is the cake for you....note the "secret" ingredient!

Steps:
- Preheat oven to 375°F
- Grease and line 8-inch cake tins.
- Sift flour and salt into a mixing bowl. Melt chocolate in a bowl placed over a saucepan of hot water.
- In a separate bowl, cream butter and sugar together until fluffy, then beat in the chocolate and mashed potato.
- Gradually beat in the egg, adding a little flour with each addition.
- Fold in the rest of the flour and stir in the milk.
- Divide mixture between cake tins and bake for 25 to 30 minutes or until top is firm but springy to the touch.
- Remove from oven and after a few minutes, turn out on a cooling rack.
- While the cake is cooling, make the icing. Melt the chocolate as before, stir in the other ingredients and mix well.
- Use the icing to sandwich the cake layers together and coat the top and sides of the cake.
- HINT: What makes this rich chocolate cake "Irish" is not only to the creamy liqueur used in the filling, but also a particularly "Irish" ingredient in the cake mixture itself, which makes it extremely moist.
