ONE-POT VEGETABLE BIRYANI

Vegetable biryani may be the underdog of biryanis since it's often overshadowed by meatier varieties. But like other formidable yet unsung dishes, this one's adaptability helps it hold its own. Recipes vary across South Asia: Hyderabadi versions are known for their fieriness, while milder, nuttier variations dominate northern regions. This one falls somewhere in the middle. Use any vegetables you have, such as nutty cauliflower, sweet peas and crunchy carrots. Nuts and fresh or dried fruits add a confetti of flavors and textures. This recipe skips the layering typically called for in favor of conveniently stirring everything together. Luckily, using fewer dishes doesn't compromise flavor.

Steps:

  • Rinse the rice, cover with cold water in a bowl and soak for 20 minutes. Meanwhile, heat ghee in a large pot over medium until it melts, 30 to 45 seconds. Add bay leaf, star anise, cloves, cardamom and green chiles and fry until fragrant, about 30 seconds. Add onion and fry, stirring often, until they start turning golden brown, about 5 minutes.
  • Add ginger and garlic and continue frying and stirring until the raw smell dissipates, about 1 minute. Add turmeric and red chile powder and stir for 30 seconds to toast (don't let them burn). Add tomato and 2 tablespoons water. Add half of cilantro and mint. Continue stirring until the tomato starts to break down, about 5 minutes.
  • Add the carrot, potato, cauliflower, green peas, green beans, yogurt and salt. Cook, stirring occasionally, for 5 minutes until the ingredients are incorporated.
  • Drain the rice and add to the pot, along with the lemon juice and garam masala. Stir until everything is evenly mixed. Add the vegetable stock and stir. Cover and cook on medium for 5 minutes.
  • Uncover and stir. Add the rest of the cilantro and mint and the lemon slices. Cover and cook on low for 20 minutes. Turn off the stove and let the pot stand for 15 minutes. Fluff the rice and garnish with fresh pomegranate seeds and cashews if you like.

2 cups basmati rice

GREAT ONE POT VEGETABLES

I leave the roots on the leeks until after cooking, so they don't fall apart. Just wash and trim beforehand.

Steps:

  • 1. Wash leek roots well and trim, leaving 1/4 inch of roots on the bottom of the bulbs. Cut a 3-inch-long X through the green of each leek. Place the leeks in a bowl and cover with water. Add the vinegar and let soak for 30 minutes to remove any sand. Drain and rinse under cold running water. Set aside.
  • 2. While the leeks are soaking, prepare the seasoned broth: Combine the broth, oil, cilantro sprigs, garlic, cinnamon sticks, cumin, curry powder, saffron, and salt in a very large heavy pot. Bring to a boil, reduce the heat and simmer, uncovered, for 30 minutes.
  • 3. Using a potato peeler, peel each zucchini lengthwise at intervals to make 3 or 4 stripes in the skin. Cut the zucchini into 1 1/2-inch lengths. Set aside.
  • 4. Place the reserved leeks, the carrots, potatoes, turnips, and onions in the broth. Bring to a boil, reduce the heat and simmer, uncovered, for 30 minutes.
  • 5. Add the reserved zucchini, tomatoes, chickpeas, prunes, and raisins. Stir gently so that the vegetables don't break up. Simmer 30 minutes longer.
  • 6. Just before serving, remove the leeks carefully and trim off the roots close to the bottom of each white bulb. Gently heat the vegetables and broth through. Stir in 3 tablespoons chopped cilantro.
  • 7. Spoon cooked couscous into each bowl, if desired. Top with the vegetables and broth. Garnish with the remaining tablespoon chopped cilantro.

6 medium-sized leeks (4 inches of green left on)
1 tablespoon white vinegar
3 quarts defatted chicken broth or vegetable broth
2 tablespoons olive oil
6 large fresh cilantro sprigs, rinsed, with roots and stems crushed
8 cloves of garlic, lightly bruised and peeled
3 cinnamon sticks (each 3 inches long)
2 teaspoons ground cumin
2 teaspoons curry powder
1/4 teaspoon crumbled saffron threads
1 teaspoon coarse salt
2 medium-sized zucchini, ends trimmed
6 medium-sized carrots, peeled, halved lengthwise and cut into 2-inch lengths
3 Idaho potatoes, peeled and cut into quarters
8 ounces small white turnips, peeled and quartered
3 small yellow onions, peeled and halved
3 ripe large tomatoes, cored and quartered
1 cup chickpeas, rinsed
1 cup pitted prunes, halved
1/2 cup golden raisins
4 tablespoons chopped cilantro or parsley
8 cups cooked couscous (2 2/3 cups dried), hot (optional)

19 ROOT VEGETABLE RECIPES ALL COOKED IN ONE PAN - GREATIST

From greatist.com
Estimated Reading Time 7 mins
  • Beet Hash With Runny Eggs. Take a break from potatoes and make a hash out of diced beets and turnips instead. With the rich egg yolks spilling into the slightly charred veggies, this lower-carb magenta mix is what healthy breakfast dreams are made of.
  • One-Pan Garlic Herb Chicken and Winter Vegetables. Give “chicken and potatoes” night a different spin by swapping out the regular white tuber for a much more interesting mix of sweet potatoes, parsnips, turnips, and golden beets.
  • Spiralized Parsnips With Broccolini and Sausage. Anyone watching their gluten or carb intake needs this spaghetti swap in their lives.
  • Red Beet Risotto With Goat Cheese and Beet Greens. Tangy from the goat cheese, mildly sweet from the beets, and boasting that show-stopping red color, this vegetarian risotto is the perfect example of how to riff on a traditional dish to make it even better.
  • Thai Yam and Sweet Potato Yellow Curry. Contrary to popular opinion, yams and sweet potatoes aren’t the same at all—the former is starchier and milder in flavor, while the latter is higher in beta-carotene.
  • Rutabaga Pad Thai With Shrimp. Spiralized carrot and rutabaga take the place of rice noodles to give this Thai-inspired recipe more fiber and color, while adding shrimp to the pan provides extra substance.
  • One-Pot Root Vegetable Quinoa Stew. From the lentils to the quinoa to the nine whole cups of root vegetables, all the ingredients in this nourishing stew cook up in a single pot, which explains why it takes more than an hour to make (most of it involves you leaving it to cook in the pot).
  • Salmon and Roasted Root Vegetable Sheet-Pan Dinner. Made in a single sheet pan with barely five minutes of prep time and ridiculously easy cleanup, this weeknight dinner is about as low maintenance as it gets without compromising nutrition.
  • Parsnips Rutabaga Sausage Sheet-Pan Dinner. If eating produce feels like a chore more often than not, here’s a way to make it feel like a treat.
  • Beef and Turnip Pot Pie. With a cast-iron skillet and some premade crust, you can totally make a pot pie in a single pan. Instead of peas and carrots, this one opts to use turnips with the ground beef; it’s a great way to enjoy cold-weather comfort food while also taking advantage of seasonal produce.
