GREAT-TASTING SOUTHERN ICED TEA (WITH SPLENDA)
I grew up on Iced Tea using this recipe. But we made it with sugar then. Being a Southern girl (okay, I guess I am too old to be called a girl.), I love Iced Tea -year round. True Southern Tea is served with a glass full of ice (Don't serve it with just a couple ice cubes -like some restaurants do. "FILL" the glass with ice then pour the tea over the ice. As the ice settles down, you can add more ice to fill the glass. Southern tea is also really sweet. You can adjust the sugar (Splenda) to suit your taste. Just follow my other directions to a "T" & you'll always have great tea.

Steps:
- Pour the sugar in a 2 quart glass or plastic pitcher. Set aside.
- Place 1 quart water in large pot on stove top burner set on medium-high heat.
- Add the tea bags to water.
- Bring water just to the point where small bubbles begin to form around edge of pot. Do not bring to a full boil.**
- Remove from heat and discard tea bags.
- Pour hot tea in pitcher containing sugar. Mix well until all sugar is dissolved.
- Add one tray of ice (or 14 large cubes). Stir.
- Add water from tap to bring water level to within 4 inches of top of pitcher.
- Refrigerate for about 30 minutes
- ENJOY THIS REFRESHING BEVERAGE!
SOUTHERN SWEETENED ICED TEA
The best way to get great iced tea - something the South is known for. Not heating the water prevents bitterness.

Steps:
- Fill a 2 qt pitcher (that's pitcha in the South) about halfway up with ice.
- Clip the clothespin onto the side of the pitcher and"hang" the tea bags through it (keeps the paper from getting in the tea and makes the bags easier to retrieve- you don't want to be seen with your hand in the pitcher here in the South).
- Pour the sugar or Splenda on top of the ice cubes and now fill the pitcher up with water.
- Let sit about an hour, pull out tea bags and serve.

SOUTHERN SWEET ICED TEA
This is how my Granny made sweet tea and it is some kind of sweet. Know that and beware. Pa-Paw used to down 2-3 glasses after working in the garden all day. Back off the sugar if you can't handle it. This one is for true southerners only ;)

Steps:
- In a large glass measuring cup, place the tea bags and add the baking soda.
- Pour the boiling water over the tea bags.
- Cover and steep for 15 minutes.
- Take out the tea bags and do not squeeze them.
- Pour the tea mixture into a 2-quart pitcher; add the sugar.
- Stir until the sugar is dissolved.
- Add in the cold water.
- Let cool; chill in the refrigerator and serve over ice.

- Sprinkle a pinch of baking soda into a 64-ounce, heat-proof, glass pitcher. Pour in boiling water, and add tea bags. Cover, and allow to steep for 15 minutes.
- Remove tea bags, and discard; stir in sugar until dissolved. Pour in cool water, then refrigerate until cold.

Steps:
- Boil 2 cups water.
- In the mean time place 3 family sized tea bags into a heat proof pot or container. Add 1/4 teaspoon baking soda.
- Pour the boiling water over the tea bags and baking soda. Cover and let sit for 15 minutes.
- Carefully remove the tea bags and add 1 cup pourable Splenda (the type that measures equal to sugar). Stir.
- Pour into pitcher.
- Add enough cold water to make 1 gallon of tea.
- Cool in refrigerator.
- Serve with ice.
- Enjoy!
