Steps:

  • Mix all meat roll ingredients, except flour, together until blended.
  • Shape into finger-like rolls.
  • Coat lightly with flour and brown in large frying pan with oil.
  • Remove and drain on paper towls.
  • In pan used to brown meat, make sauce by wisking all ingredients until smooth.
  • Add meat rolls and simmer one hour on top of stove.
  • Serve over cooked orzo or rice.
  • Can bake in oven for 1 hour at 400 or in crockpot on low for 4-6 hours.

Greek-Style Fresh Tomato Sauce image

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Heat the EVOO in a large skillet or pot with a tight-fitting lid over medium to medium-high heat. Melt the butter into the oil. When the butter begins to foam, add the oregano, garlic and onions and cook until softened, about 5 minutes. Add the wine and cook for 1 minute. Add the tomatoes and season with salt and pepper. Cover and cook until the tomatoes have burst and the sauce is thickened, 12 to 15 minutes.
  • Meanwhile, add the pasta to the boiling water and cook until al dente. Reserve 1/2 cup of the cooking liquid, then drain the pasta.
  • Stir the sauce, then add the feta and cook until melted, about 1 minute. Add the pasta and the reserved cooking liquid and toss to combine, 1 to 2 minutes. Top with the mint and parsley, and serve.

Steps:

  • Preheat a medium skillet over medium high heat.
  • Combine meats, onion, parsley, salt, and pepper. Add butter and oil to pan and begin rolling small, bite-size balls, adding balls to pan as you roll them. Cook balls 10 to 12 minutes, shaking pan occasionally to brown equally on all sides. Deglaze pan with wine and allow wine to reduce by half, 1 or 2 minutes. Remove pan from heat and squeeze the juice of 1/2 lemon over the meatballs.
  • Serve in a bowl.

Steps:

  • To make the sauce, heat the olive oil in a large nonstick skillet over med-high heat.
  • Add in the onion and garlic; stir/saute for a few minutes or until well softened but not browned.
  • Add in the wine; bring to a boil; continue boiling 1-2 minutes, scraping up any browned bits stuck to the bottom of the pan.
  • Transfer mixture to the slow cooker.
  • Add in tomatoes, tomato paste, salt, pepper, basil, oregano, parsley, allspice, and bay leaf; stir to combine.
  • Cover and cook on HIGH while you prepare the meatballs.
  • To make the meatballs: add the ground beef to a large mixing bowl, breaking it up a bit with your fingers or a large fork.
  • Add in the breadcrumbs, eggs, Parmesan, salt, pepper, basil, oregano, parsley, and allspice.
  • Gently but thoroughly blend the ingredients, using your hands or a large fork.
  • Be careful not to compact the meat, which will make your meatballs tough.
  • Gently shape the mixture into 12 meatballs, each a little bigger than a golf ball.
  • Heat the olive oil in a large nonstick skillet over med-high heat; add in the meatballs and brown on all sides, 6-10 minutes, turning carefully.
  • Using a slotted spoon, transfer meatballs to the slowcooker.
  • Pour off any fat from the skillet, return to the stove and add the wine.
  • Cover over high heat for 2-3 minutes, scraping up any browned bits stuck to the pan.
  • Pour over the meatballs.
  • If the meatballs are not covered by tomato sauce, carefully spoon some sauce over them.
  • Cover and cook on LOW for 5-6 hours.
  • Remove the bay leaf and serve meatballs and sauce over pasta.

Soutzoukakia (Greek Meatballs in a Tomato Sauce) image

Steps:

  • Soak the bread in the wine for about 5 minutes, or until thoroughly softened.
  • Then, squeeze out and reserve the excess wine.
  • In a large bowl, combine the ground meat with the wine soaked bread, onion, garlic, egg, parsley, grated cheese, cumin, and salt and pepper to taste.
  • Mix the ingredients until thoroughly blended.
  • Cover and chill for 1 to 2 hours.
  • Dampen your hands, pinch off small portions of meat mixture, about the quantity of a teaspoon or just over, and shape into approximately 20 oval rolls (looks sort of like an elongated, slightly flattened, meatball).
  • Dredge them in flour.
  • Heat olive oil in a large frying pan.
  • Add the meatballs and fry until browned all over, turning occasionally and allowing time for the meat to cook thoroughly. (alternatively, if you want a 'lighter' recipe, you could just brown in a non-stick pan or bake them in the oven - not as flavourful, but still good).
  • Remove from the pan using a slotted spoon and set aside.
  • Strain the oil you fried the meatballs in through a fine sieve into a cooking pan.
  • Add all the sauce ingredients, and the reserved wine.
  • Bring to a boil and simmer until the sauce is thick.
  • Drop in the meatballs, stir to cover all over with the sauce, and simmer covered for 15 minutes.
  • Serve hot with rice, french fries, or mashed potatoes.

2 slices thick dense bread (crusts removed)
1/2 cup dry red wine
1 lb ground lean meat (beef or veal)
1/2 cup finely chopped onion

Steps:

  • Sauté onion and garlic in oil over low heat for 15 minutes-until very limp.
  • DO NOT BROWN!
  • Add sage and sauté 5 minutes.
  • Add tomato sauce and wine-simmer UNCOVERED 10 minutes.
  • Then cover and simmer for 60-90 minutes.
  • Stirring occasionally.
  • Uncover and simmer to desired thickness.
  • Season to taste with salt and pepper.
  • Serve over spaghetti, gnocchi, pierogies, sausages- whatever sounds good to you!

Beef Rolls in Red Wine Tomato Sauce image

Steps:

  • Pound each piece of the beef into thin slices. Spread a little bit of the minced garlic, chopped rosemary and grated cheese over each slice. Cover this with a slice of prosciutto, and roll up into a small bundle, securing each with toothpicks.
  • Heat the oil in a large skillet and brown all of the bundles well on all sides, about 3-4 minutes. Transfer to a separate dish, and add the onion, carrots, and celery to the skillet.
  • Cook until the vegetables are tender. Add the wine, and cook up until it is reduced by half, scraping up the browned bits from the bottom of the skillet.
  • Add the tomatoes, and season with salt and pepper. Cook over medium heat, until the sauce has begun to thicken, about 5 minutes.
  • Remove the toothpicks from the bundles, and return them to the skillet. Add the fresh parsley, and cook until heated through, about 3-4 minutes.
  • Serve hot with a side dish of your choice.
