GREEN APPLE ICE CREAM FINALE
This is not my recipe, but it is definitely worth sharing. I think it was either Southern Living or Cuisine Magazine, but what a great dessert. A thick shake that tastes like a caramel apple. Made with granny smith apples, vanilla ice cream and apple cider and topped with of course, caramel sauce and whipped cream.

Steps:
- Apples -- Mix the apples with the lemon juice and toss well until all the lemons are coated with the lemon juice. This will prevent them from browning. Then place on a small plate or baking sheet and freeze at least 20 minutes. You want them slightly frozen.
- Shake -- After the the apples have been frozen, add them to the blender with the ice cream apple cider, caramel sauce and vanilla extract and blend well.
- Serving and Topping -- Pour into your favorite glasses and top with whipped cream, drizzled with caramel sauce and the salted peanuts. I think the original recipe called for a salted nut candy bar (like a Payday) which was very good, but the second time I made it I just used salted peanuts which was just as good.

GREEN APPLE SORBET
With my love for frozen things and apples, this was a perfect thing for me. The recipe yields 4 servings, but when I'm eating it...well, it's just for one. Great served when having a small bbq with friends or for just a weeknight dessert.

Steps:
- Cut, core and coarsely slice the apples.
- Place the apples in a saucepan along with lemon juice, sugar, and apple juice.
- Boil for approximately 3 to 5 minutes or until soft.
- Remove the green apple mixture from heat and cool.
- Place in a blender or food processor and puree the green apple mixture until smooth.
- Strain and transfer to a small container. Stir in green food coloring, mix well and place the green apple sorbet mixture in the freezer.
- This can be made two days before.
- When the green apple sorbet is completely frozen, remove from the freezer and place in a food processor or blender and puree again.
- Return to the freezer until ready to use.

- Mix 1/2 cup sugar, the milk, salt and egg yolks in 1-quart saucepan. Cook over medium heat, stirring constantly, just to boiling (do not boil). Refrigerate uncovered in chilled bowl 1 hour to 1 hour 30 minutes or until room temperature.
- Stir whipping cream, vanilla and 3 or 4 drops food color into milk mixture.
- Place half of the apples, 1/2 cup sugar and the lemon juice in food processor or blender. Cover and process, using quick on-and-off motions, until coarsely chopped. Add remaining apples. Cover and process until finely chopped but not mashed.
- Stir apple mixture into milk mixture. Pour into 2-quart ice-cream freezer. Freeze according to manufacturer's directions.

- Cook apple in melted butter in large skillet over medium heat until tender, about 10 minutes, stirring occasionally. Stir in apple cider and apple pie spice; cover and simmer 5 minutes.
- Whisk sweetened condensed milk and cream in medium bowl until well blended. Stir in apple mixture. Fill a large bowl about halfway with ice cubes and very cold water. Set the medium bowl containing the ice cream mixture inside the large bowl. Stir until very cold, about 5 to 10 minutes.
- Freeze in ice cream maker according to manufacturer's instructions. Spread in 8- or 9-inch square pan. Cover and freeze until firm, about 3 hours. Scoop ice cream and mound in pan. Drizzle caramel topping over entire surface, allowing caramel to seep into ice cream. Pack ice cream back into pan. Cover and freeze until ready to serve.

- 1. In a medium saucepan, bring the sugar and 1/3 cup water to a boil. Reduce the heat to maintain a steady simmer and cook until the syrup has thickened slightly, about 5 minutes.
- 2. Meanwhile, core and peel the apples. In a large bowl, toss the apple pieces with the lemon juice. Add to the sugar syrup and re-move from the heat—you want the hot syrup to slightly soften some of the apple pieces, but you don’t want to cook the apples.
- Transfer the mixture to a blender or food processor, and whirl until smooth. Transfer to a medium metal bowl. Set the bowl in a larger bowl full of ice wa-ter and stir the mixture to cool it off (if you want to cover and chill it instead, you can, just be sure to lay plastic wrap directly on the surface and prepare yourself for the mixture to brown any-way).
- 4. Transfer to an ice cream maker and freeze according to the manufacturer’s instruc-tions. If you don’t have an ice cream maker, you can get a quite decent fac-simile by transferring the metal bowl to the freezer, and whisking the mix-ture—be sure to get the frozen bits on the edges—every 15 minutes or so. As it thickens, you’ll need to move to a fork to mix it up. Or, go full granita style: pour the mixture into a metal pan, cov-er, and freeze, scraping it with a fork every hour or so.
