Green Chili Turkey Tacos Recipes
GREEN CHILE ENCHILADAS WITH LEFTOVER TURKEY
This is such an easy enchilada dish to make and a great use for leftover turkey. It's also very easy to adapt to different tastes just by changing an ingredient or two.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix shredded turkey with 1/2 cup sour cream, 1/2 cup salsa, 1/2 package Cheddar cheese, and 1/2 package of Monterey Jack cheese in a bowl until well combined. Fill tortillas evenly with turkey mixture, roll up into enchiladas, and place in a 9x13-inch pan.
- Mix remaining sour cream and salsa together and pour over enchiladas. Top with remaining Cheddar and Monterey Jack.
- Bake in the preheated oven until cheese is bubbly and enchiladas are heated through, 30 to 40 minutes.

- In a large skillet, cook the turkey, onion and red pepper over medium heat until meat is no longer pink; drain. , Stir in the beer, chili sauce, chilies, chili powder, Worcestershire sauce, garlic, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until heated through., Spoon turkey mixture into taco shells; top with lettuce and cheese.

- Add the onion and ground turkey and sauté for 2 minutes. Mix in the spices and green chiles, then sauté on medium for about 10 more minutes, until the ground turkey is cooked through and onions have softened. Add a splash of lime juice and salt/pepper to taste before serving.
- While the ground turkey taco meat is sautéing, you can make the avocado crema. Simply blend or mash all the ingredients together in one bowl. Salt and pepper to taste.
- To serve, warm tortillas in a pan or oven for a few minutes to make them pliable and easier to fill. Place a few spoonfuls of cooked filling into each tortilla. Top with 1-2 tbsp avocado crema. Add any other toppings you want, and cilantro to garnish.
